Tangy Apricot Chicken Thighs image

This is a tasty and sweet apricot chicken recipe that my kids love! Best served with rice.

6 boneless, skinless chicken thighs
salt and ground black pepper to taste
1 cup apricot jam
½ cup ketchup
½ cup chopped onion
¼ cup barbeque sauce
2 tablespoons soy sauce

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Season both sides of the chicken thighs with salt and pepper; transfer to a baking dish.
  • Bake in the preheated oven, uncovered, for 15 minutes.
  • Mix apricot jam, ketchup, onion, barbeque sauce, and soy sauce together. Pour over chicken thighs. Continue baking until chicken is no longer pink in the center, about 20 minutes more.
