1 bunch scallions
1/3 cup plus 2 tablespoons extra-virgin olive oil
8 ounces fusilli pasta
4 tablespoons Chardonnay vinegar
1 tablespoon Dijon mustard
Sea salt and freshly cracked black pepper
2/3 cup kalamata olives, pitted and chopped
1/2 cup cherry tomatoes, halved
1/4 red onion, finely diced
One 6-ounce piece provolone cheese, diced
1/4 cup fresh dill, chopped
1/4 cup fresh parsley, chopped
2 cups baby arugula

Steps:

  • Preheat a grill to high.
  • Toss the scallions in 2 tablespoons of the olive oil and season with salt and pepper. Grill the scallions until the bulbs are tender and the greens are well charred, 6 to 8 minutes, turning every couple of minutes. Set aside to cool. When the scallions are cooled, chop them finely.
  • Bring a large pot of salted water to a boil for the pasta. Add the pasta and cook until al dente, about 2 minutes less than the package instructions.
  • In a medium bowl, whisk together the vinegar and mustard. Season with salt and pepper. Whisk in the remaining 1/3 cup olive oil. Add the scallions and toss to coat.
  • When the pasta is finished cooking, drain and add to the vinaigrette. Add the olives, tomatoes, red onion, provolone, dill, parsley and arugula. Toss to combine.

1/4 cup white wine vinegar
3 tablespoons fresh rosemary
3/4 cup extra virgin olive oil
1 pound small new potatoes, sliced in half
3 tablespoons olive oil
Salt and freshly ground pepper
1/2 pound haricots verts
1 large red onion, finely sliced

Steps:

  • Place the vinegar and rosemary in a blender and blend until smooth. Slowly add the olive oil until emulsified and season with salt and pepper to taste. Strain into a bowl. Preheat grill. Toss potatoes in a large bowl with olive oil and season with salt and pepper to taste. Grill skin side down until golden, turn over and continue grilling until just cooked through. Place in a large bowl and immediately toss with 1/4 cup of the vinaigrette. Meanwhile, bring a large pot of salted water to a boil and add the haricots verts. Cook for 2 minutes, and immediately plunge into a bowl of ice water. Drain. Add the haricots verts and red onion to the potatoes and drizzle with the remaining vinaigrette. Season with salt and pepper to taste.

3 pounds red boiling potatoes
2/3 cup olive oil
1 garlic clove
1/4 cup red-wine vinegar
1 tablespoon fresh rosemary leaves or 1 teaspoon crumbled dried, plus rosemary sprigs for garnish
1 red onion, halved lengthwise and sliced thin lengthwise
2 pounds green beans, trimmed and cut into 1-inch pieces
24 Kalamata or Niçoise olives, pitted and halved

Steps:

  • Halve the potatoes, unpeeled, and cut them into 1-inch wedges. In a large roasting pan heat 1/3 cup of the oil in the middle of a preheated 425°F. oven for 5 minutes, add the potatoes, tossing them to coat them with the oil, and roast them, stirring them every 10 minutes, for 30 minutes, or until they are tender. Let the potatoes cool in the pan. In a blender purée the garlic, the vinegar, the rosemary leaves, and salt to taste, with the motor running add the remaining 1/3 cup oil in a stream, and blend the dressing until it is emulsified. In a small bowl of ice and cold water let the onion soak for 5 minutes, drain it well, and pat it dry. In a kettle of boiling salted water boil the green beans for 5 minutes, or until they are crisp-tender, and drain them in a colander. Refresh the beans under cold water and pat them dry. In a very large bowl combine the potatoes, the onion, the green beans, and the olives, add the dressing, and toss the salad gently. Serve the salad, garnished with the rosemary sprigs, at room temperature.

1/2 small red onion, finely diced
2 plum tomatoes, finely diced
1 cup finely chopped fresh flat-leaf parsley
1/2 cup finely chopped fresh mint leaves
4 green onions, sliced, plus
1/4 cup fresh lime juice
1 tablespoon buckwheat honey
1 serrano chile, chopped
1/2 cup canola oil or olive oil
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Place bulgur in a large bowl, pour 3 cups boiling water over, cover the bowl with plastic wrap and let sit until tender, about 15 to 20 minutes. Drain well, squeezing out as much water as possible, if needed. Return the cooked bulgur to the bowl and mix in the onion, tomatoes, parsley, mint, and 4 sliced green onions. Place the lime juice, honey, serrano, and 1/2 cup chopped green onion in a blender and blend until smooth. With the motor running, slowly add the oil until emulsified. 3 tablespoons olive oil
1 large onion, finely chopped
3 cloves garlic, finely chopped
2 cups arborio rice
1 cup dry white wine
6 cups shrimp stock, clam stock or vegetable stock
2 tablespoons squid ink
1/2 pound squid, cut into 1/4-inch rings
1/4 cup finely chopped flat leaf parsley
Salt and freshly ground pepper
8 prawns, shelled, deveined, head on
Olive oil
Salt and pepper
8 scallions
1/2 large white onion, cut into chunks
3 garlic cloves
1/3 cup rice wine vinegar
1 cup pure olive oil
1 teaspoon honey
Salt and freshly ground pepper
1 pound lobster, steamed, meat removed and coarsely chopped

Steps:

  • Heat olive oil in medium saucepan over medium-high heat. Add onions and garlic and saute until soft. Add the rice and mix to coat with the oil and cook for 2 minutes. Raise the heat to high, add the wine and cook until all the liquid has evaporated. Place the stock and the squid ink in a large saucepan over high heat and stir to combine. Begin adding the hot squid stock 1 1/2 cups at a time and cook until the liquid is absorbed. Continue until the stock is gone and the rice is al dente. Add the squid and cook for 2 to 3 minutes. Stir in the parsley and season with salt and pepper to taste.
  • Preheat grill or grill pan. Toss prawns in olive oil and season with salt and pepper. Grill for 2 to 3 minutes on each side until just cooked through.
  • Blanch the scallions for 30 seconds in a large pot of boiling salted water over high heat. Drain and shock in cold water. Combine the scallions, onion, garlic, and vinegar in a blender and process until pureed. With the motor running, slowly add the oil until emulsified. Add the honey, season to taste with salt and pepper and pour into a squeeze bottle.
  • Assemble: Spoon the risotto into 4 bowls. Top each bowl with 2 prawns and drizzle with the green onion vinaigrette and some of the chopped lobster.

1/2 medium Spanish onion, finely chopped

1 tablespoon honey
2 tablespoons coarsely chopped fresh tarragon
Salt and freshly ground pepper

1/2 large white onion, cut into chunks
3 garlic cloves
1/3 cup rice wine vinegar

12 large shrimp, shelled and deveined

Steps:

  • Bring stock to a simmer in a saucepan. Heat the olive oil in a large saucepan over medium heat and sweat the onion and garlic until softened but not colored. Raise the heat to high add the wine, and reduce until dry. Reduce the heat, add the rice and saffron and stir until the rice is coated with the oil. Cook 2 minutes.
  • Add 1 cup of the stock and cook, stirring, until absorbed. Repeat with a second cup. As the rice becomes dry, add stock in 1/2 cup increments, cooking and stirring until it is absorbed. Add the honey and tarragon and season to taste with salt and pepper.
  • Green Onion Vinaigrette: Blanch the scallions for 30 seconds in a large pot of boiling salted water over high heat. Drain and shock in cold water.
  • Combine the scallions, onion, garlic, and vinegar in a blender and process until pureed. With the motor running, slowly add the oil until emulsified. Add the honey, season to taste with salt and pepper and pour into a squeeze bottle.
  • Grilled Shrimp: Heat the oil in a large saute pan over high heat. Season the shrimp with salt and pepper to taste. Saute 2 to 3 minutes on each side. Spoon risotto into large serving bowl, arrange shrimp on top.

1 cup sliced green onions, green part only
3 tablespoons white wine vinegar
1 tablespoon Dijon mustard
1/2 cup olive oil
2 teaspoons honey
Salt and freshly ground black pepper
1/4 cup canola oil
2 tablespoons unsalted butter
1 medium Spanish onion, halved and thinly sliced
Pinch sugar
Kosher salt and freshly ground black pepper
6 large sweet potatoes, cut into 1-inch dice
1 tablespoon finely chopped fresh thyme leaves

Steps:

  • For the vinaigrette: Combine the onions, vinegar, mustard and a few tablespoons of cold water in a blender and blend until smooth. With the motor running, slowly add the olive oil and continue to blend until emulsified. Add the honey and some salt and pepper and pulse a few more times to combine.
  • For the hash browns: Heat 1 tablespoon of the oil and 1 tablespoon of the butter in a medium saute pan over medium heat. Add the onions and a pinch of sugar and cook, stirring occasionally, until the onions are golden brown and caramelized, about 30 minutes. Season with salt and pepper.
  • While the onions are caramelizing, put potatoes in a medium pot of cold, salted water. Bring the water to a boil and cook until nearly tender but a knife inserted into the centers still meets a little resistance, 10 to 12 minutes. Drain through a colander and then drain on paper towels.
  • Heat the remaining butter and oil on a cast-iron griddle or in a skillet over medium-high heat. Add the potatoes and cook, pressing firmly with a spatula, until the underside is golden brown, about 5 minutes. Add the caramelized onions and a drizzle of the green onion vinaigrette and toss to coat. Transfer the hash to a platter and drizzle with the remaining green onion vinaigrette.

16 whole squid, cleaned

2 large sweet onions, (Walla Walla, Vidalia), peeled and sliced 1/4-inch thick
1 poblano pepper, roasted, peeled, seeded and chopped
6 cloves roasted garlic
1/2 cup red wine vinegar
3/4 cup pure olive oil
1 tablespoon honey
Salt and pepper

Steps:

  • Preheat oven to 350 degrees F. Rub the tomatoes with the olive oil and place on a baking sheet. Roast for 25 to 30 minutes, or until soft. Remove seeds and dice.
  • Preheat grill or grill pan. Brush squid with olive oil and season with salt and pepper to taste. Grill the squid for 3 minutes on each side. Cut into 2-inch pieces. 2 tablespoons white wine vinegar
1/2 shallot, finely diced
1/2 cup olive oil
Salt and freshly ground pepper

Steps:

  • Heat olive oil and butter in a medium saucepan over medium heat. Add the onions and sugar, and cook until the onions are golden brown and caramelized. Add the garlic and cook for 2 minutes.
  • While the onions are cooking, place the potatoes in a medium saucepan filled with cold salted water. Bring to a boil and cook until the potatoes are just cooked through. Drain the potatoes and set aside.
  • Add the clam broth to the onions and bring to a simmer. Add the oysters and the potatoes and simmer just until the oysters have cooked through, about 2 to 3 minutes. Whisk in the creme fraiche and season with salt and pepper. Remove from the heat and stir in the tarragon. Serve with Winter Green Salad and Green Apple Vinaigrette.
  • Combine greens, celery, apples, and cheese in a large bowl. Whisk together both vinegars and the shallot. Slowly whisk in the oil, and season with salt and pepper. Toss the salad ingredients with some of the vinaigrette.

3/4 cup bulgur, medium-grind
1/2 small red onion, finely diced
2 plum tomatoes, finely diced
1 cup fresh flat-leaf parsley, finely chopped
1/2 cup fresh mint leaves, finely chopped
4 green onions, sliced
1/2 cup green onion, chopped
1/4 cup fresh lime juice
1 tablespoon buckwheat honey
1 serrano chili, chopped
1/2 cup canola oil or 1/2 cup olive oil
1 teaspoon kosher salt
1/2 teaspoon fresh ground black pepper

Steps:

  • Place bulgur in a large bowl, pour 3 cups boiling water over, cover the bowl with plastic wrap and let sit until tender, about 15 to 20 minutes.
  • Drain well, squeezing out as much water as possible, if needed.
  • Return the cooked bulgur to the bowl and mix in the onion, tomatoes, parsley, mint, and 4 sliced green onions.
  • Place the lime juice, honey, serrano, and 1/2 cup chopped green onion in a blender and blend until smooth.
  • With the motor running, slowly add the oil until emulsified. If the mixture appears too thick, blend in a few tablespoons of cold water, and season with salt and pepper, to taste.
  • Transfer the salad to a platter and drizzle with the green onion vinaigrette.

DAIKON SOUP WITH SHIITAKE CIGARS AND STEAMED SWEET POTATOES WITH GREEN ONION VINAIGRETTE



Daikon Soup with Shiitake Cigars and Steamed Sweet Potatoes with Green Onion Vinaigrette image

3/4 pound daikon, peeled and coarsely chopped
1/2 pound shiitake mushrooms, stems and caps separated (caps reserved for shiitake cigars)
1 tablespoon whole black peppercorns
3 bay leaves
2 stalks celery, coarsely chopped
1 large carrot, coarsely chopped
1 bunch fresh cilantro stems (leaves reserved for sweet potatoes)
1 package enoki mushrooms (about 6 ounces), bottoms removed (tops reserved for garnishing daikon soup)
1 large white onion, coarsely chopped
1 red pepper, seeds removed and coarsely chopped
1/2 bunch green onions, cut in half
Salt
2 sweet potatoes, quartered and scored
1/4 cup vegetable oil
3 cloves garlic, chopped
3 tablespoons seasoned rice wine vinegar
1 tablespoon fish sauce
1/4 teaspoon chili paste in oil
1/2 bunch green onions, chopped
Reserved fresh cilantro leaves
1 tablespoon butter
1 tablespoon vegetable oil
3 cloves garlic, diced
2 shallots, diced
Reserved shiitake mushroom caps
Salt and freshly ground black pepper
1 tablespoon thyme leaves
20 wonton wrappers
1egg, beaten
1/4 cup soy sauce
3 tablespoons seasoned rice wine vinegar
1 tablespoon fish sauce
1 tablespoon honey
1/2 daikon, peeled and diced
Reserved enoki mushrooms
1/2 bunch green onions, sliced thin
Chili oil, as desired

Steps:

  • For the daikon broth: Place the daikon, shiitake stems, peppercorns, bay leaves, celery, carrots, cilantro stems, enoki bottoms, onions, red peppers, green onions and 12 cups cold water in a large pot and bring to a boil. Reduce the heat and simmer, about 1 hour. Strain the liquid into a clean pot, season with salt and keep hot.
  • For the steamed sweet potatoes with green onion vinaigrette: Fill a large pot halfway with water and place a bamboo steamer over top. Bring the water to a boil then reduce to a simmer and steam the sweet potatoes until tender, about 20 minutes.
  • Heat the oil in a small saute pan. Add the garlic and lightly fry until golden brown, about 5 minutes. Add the rice wine vinegar, fish sauce, chili paste and green onions. Add the cilantro and toss. Spoon the green onion vinaigrette over the steamed sweet potatoes when ready to serve.
  • For the shiitake cigars: Place the butter and vegetable oil in a saute pan over medium-high heat. Add the garlic and shallots and saute until tender and translucent, about 5 minutes. Add the shiitake caps, season with salt and pepper and saute until golden brown, about 5 minutes. Add the thyme and 1/4 cup daikon broth and stir. Allow the liquid to evaporate, then remove from the heat and place on a dish to cool.
  • Place 4 cups water and the soy sauce in a wide-mouth saute pan, bring to a boil and then reduce to a simmer. Place a wonton wrapper on a clean, dry work surface and brush with egg wash. Spoon about 1 teaspoon mushroom mixture along the bottom of a wonton. Roll the wonton over tightly, ensuring the mushroom mixture remains in the center and the wonton is sealed. Press down on the edges and then cut to trim excess wonton dough. Repeat with the remaining ingredients. Place the shiitake cigars in the water-soy mixture until the wontons are cooked, about 5 minutes. Remove the shiitake cigars and reserve for the daikon soup.
  • For the daikon soup: Season the remaining daikon broth with the soy sauce, seasoned rice wine vinegar, fish sauce and honey.
  • Place 5 shiitake cigars in the bottom of each of 4 soup bowls. Divide the daikon broth among the bowls, garnish with diced daikon, the remaining enoki mushrooms and chopped green onion. Drizzle chili oil over the top. Serve with the steamed sweet potatoes and green onion vinaigrette.

1 head iceberg lettuce, torn
1 package baby spinach leaves
1/2 small red onion, thinly sliced
10 white mushrooms, sliced
1/2 lb grated swiss cheese
1/2-1 lb cooked crumbled bacon (to taste)
1/3 cup white wine vinegar
1/3 cup sugar
3/4 teaspoon salt
3/4 cup canola oil
3 green onions, chopped
1/2 teaspoon dried mustard
1 teaspoon celery seed

Steps:

  • SALAD: Toss iceberg lettuce, spinach, onion, mushroom slices, grated Swiss chees and bacon in large bowl.
  • DRESSING: Combine all ingredients in a blender and blend well.
  • Just before serving pour dressing over the salad and toss.
  • You can also serve the dressing to the-side of the salad.

1 cup shelled frozen edamame, thawed
1 tablespoon rice vinegar
1 teaspoon agave nectar
8 cups romaine lettuce, chopped (or torn)
1 small cucumber, cut into matchsticks
1 medium size carrot, cut into matchsticks
1 cup thinly sliced green onion
4 teaspoons sesame seeds (could use mixed white and black)
2 sheets nori, chiffonaded
1 avocado, chopped
1 recipe green onion-miso vinaigrette (recipe below)
1/4 cup red miso
1/2-1 cup roughly chopped green onion (start with 1/2 cup)
3 tablespoons rice vinegar
2 teaspoons minced ginger
1 garlic clove
2 teaspoons agave nectar
2 teaspoons toasted sesame oil
1/2 cup water

Steps:

  • Cook the brown rice in a rice cooker or on the stove top. Allow it to cool.
  • Mix together the edamame, rice vinegar, and agave.
  • Set out 4 bowls as the ingredients will be evenly divided among them. Place the lettuce in a bowl, topped with the rice, cucumber, carrot, green onion, sesame seeds, nori and avocado. Drizzle with vinaigrette and toss.
  • To Make the Green Onion-Miso Vinaigrette: Put everything in a blender and blend until smooth. Chill until ready for use.

3 tablespoons rice vinegar
2 tablespoons water
3/4 cup freshly chopped green onion, green parts only, plus more for garnish
3 tablespoons freshly chopped cilantro leaves
2 teaspoons honey
Salt and freshly ground black pepper
1/2 cup canola oil
6 tablespoons ancho chili powder
2 teaspoons ground cinnamon
2 teaspoons ground cumin
2 teaspoons light brown sugar
2 teaspoons kosher salt
1 teaspoon fresh ground black pepper
4 sweet potatoes, scrubbed, par-cooked and slice into 1-inch thick slices, skin left on
Canola oil
Freshly chopped cilantro leaves, for garnish

Steps:

  • For the vinaigrette:
  • Blend the vinegar, water, onion, cilantro, honey, salt and pepper, to taste, in a blender until smooth. With the motor running, slowly add the oil and blend until emulsified.
  • For the potatoes:
  • Whisk together the chili powder, cinnamon, cumin, sugar, salt and pepper, to taste, in a small bowl.
  • Heat the grill over medium-high heat.
  • Brush the potato slices with oil on both sides and season with the spice rub on one side. Skewer 2 slices of the potatoes onto 2 skewers (so the potatoes lay flat) and place on the grill, rub side down and cook until golden brown and a crust has formed, 2 to 3 minutes. Turn the skewers over and continue grilling until the second side is golden brown and the potatoes are just cooked through, 2 to 3 minutes longer. Remove to a platter and immediately drizzle with green onion vinaigrette, green onions and chopped cilantro.
