GRILLED GREEN ONION BURGERS

- In a large skillet, cook bacon over medium-low heat until crisp. Remove to paper towels to drain; reserve drippings., Meanwhile in a large bowl, combine teriyaki, hoisin, onions, garlic, cumin and pepper. Add beef, mixing lightly but thoroughly. Shape into eight 1/2-in.-thick patties. Grill burgers, covered, over medium heat until a thermometer reads 160°, 5-7 minutes on each side. Keep warm., In the same skillet, cook mushrooms in 2 tablespoon bacon drippings over medium-high heat until golden, 5-7 minutes. Add bok choy to skillet; cook until tender. Remove and keep warm., In the same skillet, fry eggs in remaining bacon drippings over medium heat until desired doneness. Serve burgers on buns with bacon, bok choy, mushrooms and fried egg.

- In a large bowl, combine the first eight ingredients. Crumble beef over the mixture and mix well. Shape into 12 patties. Grill, covered, over medium heat or broil 4 in. from the heat for 6-9 minutes on each side or until no longer pink. Serve on buns.

GREEN ONION BURGERS WITH BACON AND AVOCADO BUTTER
Wrapping a burger in lettuce is a great alternative for a bun if cooking gluten-free, but it also lightens up the overall burger. There is no lack of flavor here. Incorporating green onions into the meat adds a bit of texture and a hint of onion flavor. The mashed avocado and bacon bits "butter" really makes the burger. It's creamy, crunchy and the perfect topping to add a punch of flavor.

- Cook bacon over medium heat until crisp, set aside. Remove all but 1 teaspoon of the fat.
- Mix the ground beef, salt, pepper, and the green parts of the onions until well mixed.
- Divide in half and shape into two patties.
- Cook burgers until well done.
- In the meantime, mash the avocado. Crumble the bacon, and add to the avocado along with the white part of the onions. Season with salt and pepper to taste.
- Once burgers are well done, remove from pan, and spread with the bacon avocado butter, and wrap in the lettuce leaves.
