1 pound green beans, trimmed
1 tablespoon olive oil
1 tablespoon grated orange peel
2 teaspoons grated lemon peel
2 garlic cloves, minced
1/4 cup canned low-salt chicken broth
2 tablespoons (1/4 stick) butter

Steps:

  • Cook beans in large pot of boiling salted water until crisp-tender, about 4 minutes. Drain well. Heat oil in heavy large skillet over medium-high heat. Add orange peel, lemon peel, and garlic and stir 1 minute. Add broth and simmer 1 minute. Add butter and beans. Toss until beans are heated through and sauce coats beans, about 2 minutes. Season with salt and pepper and serve.

Green Beans with Ginger Butter image

2 pounds haricots verts or other green beans, trimmed
1 (3-inch-long) piece fresh ginger
3 tablespoons unsalted butter
Finely grated zest from 1/2 lemon
1/2 teaspoon salt

Steps:

  • Cook beans in an 8-quart pot of boiling salted water, uncovered, until just tender, 5 to 9 minutes (depending on thickness). Drain beans in a colander and transfer to a large bowl of ice and cold water to stop cooking. Drain beans again and pat dry.
  • Peel ginger and halve crosswise, then thinly slice lengthwise and cut into very thin matchsticks.
  • Heat butter in a 12-inch nonstick skillet over moderate heat until foam subsides, then cook ginger, stirring, until golden, about 3 minutes.
  • Add beans and cook, stirring, until just heated through, about 2 minutes. Remove from heat and add zest and salt, tossing to combine.

a 1-pound celery root (sometimes called celeriac)
2 large carrots
4 large shallots
1 1/2 tablespoons unsalted butter
3/4 teaspoon salt
1/4 pound green beans

Steps:

  • With a sharp knife peel celery root and cut into 1-inch pieces. Diagonally cut carrots into 1-inch-thick pieces. Quarter shallots lengthwise. In a 2-quart heavy saucepan melt butter over moderately low heat. Add celery root, carrots, shallots, salt, and pepper to taste, stirring to coat vegetables with butter, and cook, covered, stirring occasionally, 20 minutes. While root vegetables are cooking, trim beans. Stir beans into root vegetables and cook, covered, stirring once or twice, until all vegetables are tender, about 10 minutes.

2 Tbsp. Diamond Crystal or 1 Tbsp. plus ½ tsp. Morton kosher salt, divided
1 lb. green beans, trimmed
2 Tbsp. extra-virgin olive oil
5 garlic cloves, finely chopped
¼ tsp. coarsely ground black pepper

Steps:

  • In a medium pot over high heat, bring about 4 cups water and 1 Tbsp. plus 2 tsp. Diamond Crystal or 1 Tbsp. Morton kosher salt to a rolling boil. Add 1 lb. green beans, trimmed, and cook, uncovered, until bright green, about 3 minutes. Drain the green beans in a colander and rinse with cold water for 10 seconds.
  • In a large sauté pan over medium-high, add 2 Tbsp. extra-virgin olive oil and heat for about 10 seconds. Add the drained green beans, 5 garlic cloves, finely chopped, ¼ tsp. coarsely ground black pepper, and remaining 1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt. Sauté until each green bean is evenly coated in oil, about 2 minutes. Serve warm.

1 pound haricots verts (thin green beans)*, trimmed and cut into 2-inch pieces

Steps:

  • In a large bowl whisk together lemon juice, mustard, and salt and add oil in a stream, whisking.
  • With a sharp knife cut off ends of celery root and cut off peel. Rinse and dry celery root and halve lengthwise. Cut celery root crosswise into 1/8-inch slices and cut slices into 1/8-inch strips. Add celery root to dressing and toss to coat.
  • In a saucepan of boiling salted water boil haricots verts until crisp-tender, about 4 minutes, and drain. Refresh haricots verts under cold water and drain well. Add haricots verts to celery root mixture with salt and pepper to taste and toss well.

2 tablespoons plus 2 teaspoons room-temperature unsalted butter
2 teaspoons miso
2 tablespoons vegetable oil
kosher salt
freshly ground black pepper
2 teaspoons minced shallot
1 minced garlic clove
1/4 cup sake
1/4 cup vegetable broth or water
sesame seeds

Steps:

  • Cook 1/2 pound trimmed green beans in a large pot of boiling salted water until crisp-tender, 2-3 minutes; drain. Transfer to a bowl of ice water to cool; drain. Whisk 2 tablespoons plus 2 teaspoons room-temperature unsalted butter with 2 teaspoons miso in a small bowl. Heat 2 tablespoons vegetable oil in a large skillet over medium-high heat. Add beans; season with kosher salt and freshly ground black pepper. Toss to coat. Stir in 2 teaspoons minced shallot and 1 minced garlic clove; cook for 1 minute. Add 1/4 cup sake; cook until almost evaporated, 1-2 minutes. Add 1/4 cup vegetable broth or water; cook until sauce thickens and reduces by half, about 1 minute. Lower heat to medium; add miso butter and stir until a creamy sauce forms. Garnish with sesame seeds, if desired.
