White Mountain Pie image

This was my step father Bobby's absolute favorite pie, and we lost him to cancer in 2009. He loved it so much I had to make two; one being just for him! I still make it as it brings a 'little bit of Bobby' back to the table. I dedicate this recipe to him. RIP Bobby John Love

Number Of Ingredients 7

8 ounce(s) softened cream cheese
1 cup(s) powdered sugar (can sub w/ splenda)
15 ounce(s) can crushed pineapple-drained well.
1 teaspoon(s) vanilla extract
1 - crt cool whip
1/4 cup(s) chopped nuts
1 - 9" graham cracker crust

Steps:

  • In mixing bowl, beat cream cheese, sugar, and vanilla.
  • Fold in cool whip until mixed well. Then fold in drained pineapple and nuts(opt).
  • Spread into pie crust. Cover and refridgerate at least 1-2 hours before serving. Best if refridgerated overnight!
