Easy Canned Green Beans, Mushrooms, and Bacon image

The added bacon to this recipe kicks it up a notch. Quick, easy, and delicious.

Number Of Ingredients 5

1 (14.5 ounce) can green beans, drained
2 tablespoons bacon drippings
1 (4 ounce) can sliced mushrooms, drained
salt and freshly cracked pepper, to taste
3 slices bacon, cooked and crumbled

Steps:

  • Drain most of the water from the green beans. Combine beans and bacon drippings in a saucepan over medium heat and bring to a boil. Reduce heat and simmer for 10 minutes.
  • Add mushrooms and cook an additional 3 to 5 minutes. Season with salt and pepper. Top with crumbled bacon just before serving.

This is a tried-and-true favorite! After I first tried this recipe, my family liked it so much they requested it at least once a week! Luckily, it's easy to prepare.

2 cloves garlic, minced
1/4 pound small, fresh mushrooms, trimmed and sliced
1 tablespoon butter
1 medium red onion, cut in thin strips
1 pound fresh green beans, trimmed
Fresh ground pepper
1 teaspoon dill weed
2 tablespoons toasted almonds or pine nuts

Steps:

  • Saute garlic and mushrooms in butter until tender. Stir in onions; set aside. Steam or cook beans in small amount of water until tender-crisp; drain. Combine beans and mushroom mixture; add pepper and dill weed. Garnish with nuts. Serve immediately.

2 lb fresh green beans, trimmed
8 slices bacon
3 cups sliced fresh shiitake mushrooms (about 7 oz)
1/4 cup chopped shallots
1/8 to 1/4 teaspoon crushed red pepper flakes
1/2 teaspoon freshly ground pepper
1/4 teaspoon salt

Steps:

  • In large saucepan, heat 8 cups (2 quarts) water to boiling. Add green beans; cover and cook 2 minutes. Remove beans from cooking liquid and immediately plunge into ice water until cold. Drain; set aside.
  • In 12-inch nonstick skillet, cook bacon over medium-high heat, turning occasionally, until crisp; drain on paper towels. Crumble bacon; set aside. Reserve 1 to 2 tablespoons bacon drippings in skillet.
  • Add mushrooms and shallots to drippings; cook over medium-high heat 5 minutes, stirring frequently, until shallots are tender. Add green beans and pepper flakes; cook 1 to 2 minutes or until thoroughly heated. Stir in crumbled bacon, pepper and salt.

1 lb. fresh green beans
` 4 strips thick sliced bacon, diced
8 oz button mushrooms, quartered
1/4 cup minced shallots
1/4 cup white wine vinegar
salt and pepper to taste

Steps:

  • 1. Blanch green beans in pot of boiling salted water til tender, about 4 minutes; drain. Cook bacon in skillet over medium heat til crisp. transfer bacon paper towel lined plate and drain all but 2 Tbsp. drippings from skillet.
  • 2. Add mushrooms and shallots to skillet and cook over medium heat til mushrooms are browned and shallots are softened, 8 to 10 minutes. Deglaze skillet with vinegar, scraping up any browned bits. Reduce vinegar e=til evaporated, then add reserved beans to skillet and toss to mix. top beans with bacon and season with salt and pepper.
