A traditional Spanish side dish that I've served on holidays for many years. But it's a simple, tasty dish anytime!

2 tablespoons olive oil
2 cloves garlic, crushed
2 pounds fresh green beans, cut into 1-inch lengths
3 cups canned diced tomatoes with their juice
1 tablespoon chopped fresh chives
3 tablespoons pine nuts
2 tablespoons lemon juice
1 bay leaf
salt and pepper, to taste

Steps:

  • Heat oil in a large saucepan over medium heat. Add garlic; cook and stir until fragrant, about 2 minutes. Reduce heat if garlic begins to brown. Add green beans, then continue to cook and stir until bright green but not quite tender, about 4 minutes.
  • Mix in tomatoes, lemon juice and pine nuts, and season with chives, bay leaf, salt and pepper. Bring to a boil, stirring often. Reduce heat and simmer gently uncovered for 25 to 30 minutes. Remove and discard bay leaf before serving.

1 lb green beans, cut into 1 inch pieces (about 3 cups)
4 tablespoons butter
3/4 cup finely chopped onion
1 tablespoon sweet Hungarian paprika
2 tablespoons flour
1 cup sour cream
1/2 teaspoon salt

Steps:

  • Add the beans to a pot of boiling salted water, reduce the heat to medium and cook uncovered 10-15 minutes or until just tender, drain.
  • Melt butter in a large skillet, add the onions and cook 4-5 minutes or until they are translucent.
  • Remove pan from heat, add paprika and stir until onions are well coated.
  • In a small bowl, wire whisk the flour into the sour cream, add to the onions, add salt and mix.
  • Return the skillet to the stove and simmer on low heat 4-5 minutes or until the sauce is smooth and creamy.
  • Gently stir in the beans and simmer 5 minutes.

3 tablespoons butter
3 cloves garlic, minced
2 pinches lemon pepper

Steps:

  • Place green beans into a large skillet and cover with water; bring to a boil. Reduce heat to medium-low and simmer until beans start to soften, about 5 minutes. Drain water. Add butter to green beans; cook and stir until butter is melted, 2 to 3 minutes.
  • Cook and stir garlic with green beans until garlic is tender and fragrant, 3 to 4 minutes. Season with lemon pepper and salt.

1 pound fresh green beans, trimmed
1/4 cup butter, cubed
1/2 pound sliced fresh mushrooms
1-1/2 teaspoons paprika
2 garlic cloves, minced
3/4 teaspoon salt

Steps:

  • In a large saucepan, place a steamer basket over 1 in. of water. Place green beans in basket. Bring water to a boil. Reduce heat to maintain a low boil; steam, covered, 8-10 minutes or until crisp-tender., Meanwhile, in a large skillet, heat butter over medium-high heat. Add mushrooms and paprika; cook and stir 4-6 minutes or until mushrooms are tender. Add garlic; cook 1 minute longer. Add green beans and salt; toss to coat.
