GREEN BEANS WITH CHEESE AND BACON
I found this among some recipes my husband's aunt sent me. I tried it once, and it became a family favorite immediately. I save it and use it in the summer when beans are freshest. Then we always have something to look forward to each summer. I often double this recipe just to have enough for my children to have leftovers! You can prepare this ahead of time, but make sure that the casserole is at room temperature before baking. I often use a mixture of both green beans and wax beans in the casserole.

- Preheat oven to 325 degrees F (165 degrees C). Lightly grease a 2 1/2-quart baking dish with a lid.
- Place the green beans in a large pan with water to cover; bring to a boil and cook only until the beans are hot and bright green, about 1 minute. Drain. Transfer to a large bowl.
- Cook the bacon in a large, deep skillet over medium-high heat, stirring occasionally, until evenly browned and crisp, about 10 minutes. Pour off all but 1 tablespoon of the drippings. Return to the heat and add the green onions; cook until the onions have softened, about 2 minutes.
- Add the bacon mixture, Cheddar cheese, sour cream, mayonnaise, salt, and pepper to the green beans; stir. Spread the mixture into the prepared baking dish; cover with the lid.
- Bake in the preheated oven until the casserole is bubbling and the beans are tender, about 20 minutes.

CHEESY BACON AND GREEN BEAN CASSEROLE

- Preheat oven to 350 degrees (F). Lightly grease a 9x13-inch casserole dish and set aside.
- Trim the rough ends of the green beans and cut them in half, if desired. Set aside.
- Bring a large pot of lightly salted water to a rolling boil. Blanch the green beans by dropping them into the boiling water and allowing them to par-cook for 4 minutes.
- Using a slotted spoon, remove them from the boiling water and immediately plunge them into an ice bath to stop the cooking process. Drain the green beans once they're cool, then pat them dry. Place them in the prepared baking dish and set aside.
- In a large skillet over medium-heat, cook the bacon until crispy on both sides, about 4 to 5 minutes per side. Remove from heat and place on a paper towel lined plate. Blot any excess oil with a paper towel, then chop into small bits. Set aside.
- Drain skillet of any excess bacon grease, then place back over medium-heat. Add the butter and swirl to melt. Add in the chopped onion and cook, stirring frequently, for 4 to 5 minutes, or until softened and nearly translucent. Add in the garlic and cook, stirring constantly, for 1 minute.
- Sprinkle in the flour, and stirring constantly, cook for 1 minute. Slowly pour in the milk and then the broth, stirring constantly as you add.
- Cook, stirring constantly, until the mixture begins to thicken, about 2 minutes. Stir in the brown sugar, salt, pepper, and cayenne pepper.
- Remove the pan from heat. Immediately stir in the heavy cream, then add the cheddar, Monterey Jack, and parmesan. Fold in half of the chopped bacon and half of the French fried onions.
- Pour sauce over green beans and stir gently to combine. Bake for 25 minutes. Then top with remaining bacon and onions and bake for an additional 5 minutes. Serve warm!
CHEESY GREEN BEANS WITH BACON
Cheese and bacon liven up plain green beans. This dish can be served immediately after preparing, but I often refrigerate it overnight to let the flavors blend together, then reheat it in a 350 degrees F (175 degrees C) oven until heated through.

- Place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside. Reserve 1/4 cup of bacon drippings in the skillet.
- Place green beans and water in a medium saucepan, and bring to a boil. Reduce heat, cover, and simmer 6 minutes, or until tender but crisp; drain.
- Place mushrooms and onion into the skillet with the reserved bacon drippings. Cook and stir over medium-high heat for 10 minutes; drain. Reserving 2 tablespoons for topping, mix the crumbled bacon into the skillet. Stir in the green beans. Season with pepper, and transfer to a 2 quart baking dish.
- Melt the cheese sauce in the microwave, and pour over the green bean mixture. Sprinkle with reserved bacon, and serve.

GREEN BEANS WITH CHEESE SAUCE
Steps:
- Bring 1/4 cup water just to a boil in a large saute pan over medium heat. Add the green beans and salt, cover and cook for 2 minutes. Uncover, raise the heat to high and cook until the water has evaporated, about 1 minute. Stir in 1 tablespoon of the butter and continue cooking until the beans are crisp-tender, 1 to 2 minutes. Remove from the heat.
- Melt the remaining 3 tablespoons butter in a medium saucepan over medium heat. Add the flour and cook, stirring, until golden, about 2 minutes. Whisk in the milk, garlic powder, dry mustard, black pepper and cayenne and cook, whisking continuously, until thickened, about 2 minutes. Stir in the cheddar cheese and cream cheese and heat until melted. Pour the cheese sauce over the green beans, or serve on the side.
GREEN BEANS WITH WARM BACON DRESSING

- Cook the beans in a large pot of boiling water until tender-crisp, about 5 minutes. Drain. Pat dry. Place the beans in a large bowl.
- Cook the bacon in a skillet, and transfer to drain, reserving the drippings in the skillet. Add the shallots and garlic to the drippings. Saute over medium, 1 minute or just until soft. Add the vinegar, Dijon and dry mustard. Whisk, stirring to loosen the browned bits in the bottom of the skillet. Remove from the heat and slowly whisk in the olive oil.
- Toss the beans with the warm dressing. Season with salt. Arrange on a serving platter. Sprinkle with the reserved bacon, goat cheese and dried cranberries. Serve immediately.
GREEN BEANS IN CHEESY BACON SAUCE (CROCK POT)
This is one of the best green bean recipes I have tried and its so easy because you prepare it in the crock pot. This comes from my Crockery Dinners cookbook. Enjoy.

- Sprinkle top with crumbled bacon.

- Stir before serving.
