12 portobello mushroom caps, about 3-inch diameter
1 cup oil and vinegar salad dressing
1 teaspoon crushed garlic
3 teaspoons fines herbes (recommended: Spice Island)
Olive oil cooking spray
1/4 cup grated Parmesan
2 tablespoons Italian bread crumbs
1 tablespoon melted butter
1 1/2 cups leftover green bean casserole

Steps:

  • Place cleaned mushroom caps in large zip-top bag with salad dressing, garlic, and 2 teaspoons fines herbs. Seal bag and massage gently to combine ingredients. Marinate 30 minutes to 1 hour.
  • Preheat oven to 375 degree F. Lightly spray a baking sheet with olive oil cooking spray; set aside.
  • In a small bowl, combine remaining 1 teaspoon fines herbes, Parmesan, bread crumbs, and melted butter; set aside.
  • Remove mushroom caps from marinade and place on prepared baking sheet. Fill each cap with 1 to 2 tablespoons green bean casserole. Top with a heaping spoonful of bread crumb mixture. Roast in preheated oven for 15 to 18 minutes or until golden. Serve hot.

1 1/4 pounds green beans, trimmed and cut in half
Coarse salt
2 tablespoons extra-virgin olive oil, 2 turns of the pan
1 tablespoon butter
1 onion, chopped
2 portobello mushroom caps, halved and thinly sliced
1/2 cup dry sherry

Steps:

  • Simmer green beans in salted boiling water 5 minutes. Drain green beans and return skillet to moderate heat. Add oil and butter to the pan. Add onions and saute 2 to 3 minutes. Add mushrooms and season with salt and pepper. Saute mushrooms 3 to 5 minutes with onions, add green beans back to the pan. Heat green beans through and add sherry. Cook for 1 to 2 minutes. Transfer green beans and mushrooms to a serving plate.

French-Style Stuffed Portobellos with Green Beans image

This is a great 1-skillet meal that oozes with French flavors.

2 tablespoons butter, divided
1 tablespoon vegetable oil
1 small shallot, minced
2 cloves garlic, minced
3 portobello mushroom caps
½ pound haricots verts (French green beans), trimmed
¼ cup Sauvignon blanc
3 slices Paris ham, or more to taste
½ cup shredded Gruyère cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Heat 1 tablespoon butter and oil in an oven-proof skillet over medium heat until butter is melted. Add shallot and garlic; cook and stir until shallot is wilted, about 5 minutes.
  • Place mushrooms, gill side up, into the skillet. Cook, flipping once, until liquid is absorbed, 2 to 3 minutes per side. Return mushrooms to gill side up.
  • Arrange green beans around the mushrooms. Pour in wine; simmer until absorbed, 5 to 10 minutes. Reduce heat to low; cover. Cook until mushrooms release their juices and green beans are tender, about 10 minutes.
  • Top mushrooms with ham slices; sprinkle evenly with Gruyère cheese. Add remaining 1 tablespoon butter to the green beans.
  • Bake in the preheated oven until cheese is melted and bubbly, about 5 minutes.

12 portabella mushroom caps, about 3-inch diameter
1 teaspoon Old Bay Seasoning
butter-flavored cooking spray (IE I cant believe Its Not Butter NOT Butter Flavored Oil)
1/4 cup grated parmesan cheese
2 tablespoons Italian seasoned breadcrumbs
1 tablespoon melted butter
1 1/2 cups leftover cooked green beans, from a casserole

Steps:

  • Preheat oven to 375 degrees.
  • Place cleaned mushroom caps on baking sheet.
  • Spray caps well with butter spray.
  • In a small bowl, combine 1 teaspoon old bay seasoning, Parmesan , bread crumbs, and melted butter; set aside.
  • Fill each cap with 1 to 2 tablespoons green bean casserole.
  • Top with spoonfuls of bread crumb mixture.
  • Roast in preheated oven for 15 to 18 minutes or until golden. Serve hot.
