Recipe video above. Plump, extra juicy, extra tasty rissoles - an Aussie favourite! I usually make Beef Rissoles but these can be made with lamb, pork, chicken or turkey. Makes 10 - 12 rissoles. (PS For those who are unfamiliar with rissoles, they are basically squashed meatballs! A classic Aussie family favourite :) )

1 small brown onion
1/2 cup panko breadcrumbs ((or normal))
500 g / 1 lb beef mince ((ground beef) (Note 1))
1 small zucchini
1 small carrot
1 egg
1 large garlic clove (, minced)
1/2 tsp dried thyme
1/2 tsp oregano ((or sub with other favourite herbs))
1/2 tsp each salt and pepper
2 tsp Worcestershire Sauce
1 - 2 tbsp oil
Tomato Ketchup!

Steps:

  • Grate the onion into a large bowl using a box grater (see video). Add panko, mix briefly to coat in the onion juices.
  • Grate zucchini and carrot into the bowl. Add remaining Rissoles ingredients. Mix well. Scoop up about 1/4 cup of mixture, form a 1.7cm / 2/3" thick pattie. Indent the middle slightly (Note 2, see photos in post). Repeat with remaining mixture - you should make 10 - 12.
  • Heat oil in a skillet over medium heat. Add half the patties and cook for 4 minutes or until dark golden. Press LIGHTLY with spatula, if you press hard, you'll press the juices out!
  • Flip and cook the other side for 3 - 4 minutes until golden.
  • Transfer to plate, repeat with remaining rissoles.
  • Serve with tomato ketchup!

I was given the ingredients for this recipe by a British friend as a way to use up leftover roast beef. These are also good when eaten like cheeseburgers.

oil
1 lb leftover roast beef
1 onion, minced
1 tablespoon fresh parsley
1/2 cup breadcrumbs
1 large egg
1 pinch cinnamon
flour

Steps:

  • Use a sharp knife or food processor to mince the beef.
  • Heat up a skillet on medium with a bit of oil.
  • In a bowl, mix the beef, onion, parsley, bread crumbs, egg, and cinnamon.
  • Form into patties and coat both sides lightly with flour.
  • Cook rissoles on one side until browned, then turn to the other side and cook until browned and heated through.
  • Serve topped with ketchup or leftover gravy.

1 can corned beef
4 lbs potatoes
2 eggs
1 cup breadcrumbs (dry)
1 package onion soup
2 eggs, beaten

Steps:

  • Boil and mash potatoes. Set aside to cool (not cold).
  • Cut up corned beef and add to potatoes.
  • Add rest of ingredients (except 2 additional beaten eggs). Mix thoroughly.
  • Roll into rissoles or shape of croquettes.
  • Dip into beaten egg and roll in more bread crumbs.
  • Fry in deep fat until golden brown.
  • These may be heated in oven on tray if not used at once. Size of the tin of corned beef can also be changed to suit.

An old Aussie fav, the rissole, has been given a bit of a bashing. This updated version is one my entire family loved. It was inspired by a recipe seen in an Australian food mag but adapted to my families tastes.

750 g beef mince
3/4 cup fresh breadcrumb (made from day-old bread)
150 g roasted capsicums, thinly sliced (chargrilled peppers)
1/4 cup olive, pitted and thinly sliced (optional)
1/4 cup fresh basil, finely shredded
1 tablespoon mixed Italian herbs
1 garlic clove, crushed
1 egg, lightly whisked
1/2 red onion, finely chopped
salt & freshly ground black pepper

Steps:

  • Combine the beef mince, breadcrumbs, capsicum, olives, basil, herbs, garlic, egg and onion in a large bowl.
  • Season with salt and pepper.
  • Divide the mince mixture into 8 equal portions and shape into patties.
  • Preheat a barbecue plate or large non-stick frying pan over medium heat.
  • Add the patties and cook for 5 minutes each side or until brown and cooked through.

This is an old classic Aussie meal. When I was growing up, we always had Rissoles and onion gravy at last once a week. Give it a try and let me if you like this old favourite. Cook time does not allow for cooking the gravy or the vegetables.

Yield 4-6 Rissoles

Number Of Ingredients 12

2 lbs mincemeat (ground beef)
2 eggs
1 medium onion (chopped finely)
1 cup breadcrumbs (you may need more)
1/3 cup tomato sauce (ketchup)
1 tablespoon Worcestershire sauce
1 tablespoon finely chopped garlic
1 tablespoon dried herbs (or fresh mixed herbs such as sage, parsley, thyme or what ever you have in the garden)
salt & freshly ground black pepper
1 teaspoon mustard powder
2 tablespoons plain flour, for dusting the rissoles
2 tablespoons oil, the rissoles (for frying, you may need more oil. I use as little as possible)

Steps:

  • Mix all the ingredients together (except oil), this is best done with your hands.
  • Shape into 4 or 6 round balls and dust with the flour.
  • Heat the oil on high in a heavy based frying pan until the oil is very hot.
  • Place the Rissoles in the hot oil.
  • Don't over crowd your pan.
  • Make sure the Rissoles do not burn.
  • Turn the rissoles over when one side is browned and slightly crispy (make sure they don't burn).
  • Cook the other side the same way, turn the heat down to medium and cook through.
  • Depending on the thickness of the pan and the size of the rissoles, it may take about 3-4 minutes to cook the Rissoles on each side.
  • Do not over cook the Rissoles.
  • The cooking time would be similar to cooking American hamburgers.
  • Serve with brown meat gravy and mashed potatoes with minted peas.

GOURMET RISSOLES



Gourmet Rissoles image

These rissoles are tender, juicy and very hearty. Great by themselves, in a burger or served with vegetables. You can even have them cold with a sweet chili dipping sauce!

Number Of Ingredients 13

500 g lean ground beef
1 brown onion, finely chopped
8 sun-dried tomatoes, roughly chopped
2 garlic cloves, crushed
1 tablespoon mixed herbs
1 egg
2 slices bacon, chopped, rind removed
1 teaspoon Tabasco sauce
20 ml tomato sauce
10 ml Worcestershire sauce
1/4 cup parsley, chopped
1/2 cup breadcrumbs
20 ml vegetable oil (for frying)

Steps:

  • Into a large bowl, add the all the ingredients less the bread crumbs.
  • Fry bacon in pan until cooked.
  • Mix with hands, ensure all ingredients are well mixed. Do not over mix.
  • If ingredients is excessively moist, add some bread crumbs and mix through.
  • Break into balls and flatten. Coat in breadcrumbs.
  • In a heavy based frying pan, fry the rissoles until cooked.
  • They should be cooked when the outside is brown.
  • Do not cook on a high heat as they will burn and the inside will be raw.

500 g mincemeat
1 onion, finely chopped
3 tablespoons sweet chili sauce
1 egg, lightly beaten
pepper, to taste
breadcrumbs (optional)

Steps:

  • Place all ingredients in a bowl and mix well together with your hands.
  • If the mix is too wet add breadcrumbs.
  • Roll into small balls (about the size of golfballs) and flatten slightly.
  • Place small amount of oil in a frypan on medium heat.
  • Fry until brown and firm.
