Steps:
- Heat oil in a non stick heavy base skillet.
- Add salt, red pepper powder and turmeric powder.
- Immediately add bananas and saute for about 2-3 minutes.
- Let bananas go brown on the edges.
- Add puree and fresh lemon juice.
- Add 1/2 cup water and cover tightly.
- Bring to a boil and let it simmer on medium heat for 10 minutes.
- Finally add the coconut milk, cover again for 5 minutes on low heat and serve warm with steamed rice or steamed noodles.

Steps:
- In a deep frying pan heat the oil and fry the banana until lightly browned on each side. Set aside on a plate lined with kitchen paper.
- Lower the heat and stir in the onion for 10 minutes, or until soft. Add the peanuts, banana and curry paste with half the coconut milk and stir well. Cook on a low heat for 10 minutes. Season to taste.
- Pour in the rest of the coconut milk and simmer until the banana starts to break down.
- Sprinkle with the coriander and a squeeze of the lime. Serve with brown rice or indian bread and ENJOY
COCO-BANANA'S THAI GREEN VEGETABLE CURRY
A healthy, tasty way to eat mixed vegetables! I have it over brown rice. You could use any vegetable you want, but I have listed the combination that I use.

- In a blender, combine the basil, coriander, chillis, ginger, garlic and coconut milk.
- You may need to add 1/2 cup of water, or more coconut milk if you want it very creamy.
- Blend until very smooth.
- In a pan, combine onion and sweet potato with the herb/coconut mixture.
- Bring to a boil and simmer until the sweet potato has softened a little.
- Add the zucchini baby corn, and cook for 10 minutes.
- Add the broccoli, green beans and snow peas and season to taste.
- Cook until the greens are bright green (about 4 minutes).
- Serve over rice.
SHRIMP AND GREEN BANANA CURRY (FROM THE ISLAND OF MAURITIUS)
The food of Mauritius is a fascinating fusion of Chinese, Creole (island), French and Indian cuisine, also with input from South East Asia. France has had a strong influence here, and the main languages are Mauritian Creole and French. The food is either delicate, or spicy and hot. Fruits are used in abundance. This is a simple taste from that far-flung Indian Ocean island, a beloved holiday spot for South Africans. The coral-reef lagoons around most of the island is reminiscent of the Bahamas. I lifted the basic recipe from the local Sunday Times, but I tweaked it. As far as portions go, I always feel it depends on who's eating, and how hungry they are! You decide.

Steps:
- Add cumin to the curry powder, add the wet spices and coriander, and add just a bit of water, to mix to a paste.
- Fry the onion until transparent. Add the spice mixture, and stir so it fries and the flavour is released. If it's too thick, add a little more water.
- Add the bananas and stir. Add about 1/2 cup water, cover, and simmer for about 6 minutes.
- Add the shrimps, curry or lemon leaves, chopped tomato, hot peppers and sugar. Stir over medium heat, turn heat down, and cook about 8 minutes, until bananas are soft and the shrimps pink and curled. Make sure the banana has softened -- this will depend on degree of greenness or ripeness!
- Taste for seasoning and add salt.
- Serve over rice and sprinkle over chopped cilantro. Dessicated coconut can be served on the side, or over the dish as well.
