1/4 cup red wine vinegar
2 tablespoons olive oil
1 garlic clove, minced
1/2 teaspoon dried oregano
1/4 teaspoon dried basil
1/8 teaspoon sugar
1/8 teaspoon salt
1/8 teaspoon pepper
1 cup thinly sliced red onion, separated into rings
1/2 cup coarsely chopped green pepper
4 medium tomatoes, each cut into 8 wedges
6 medium pitted whole ripe olives, halved
3 tablespoons crumbled feta cheese

Steps:

  • In a bowl, whisk together the vinegar, oil, oregano, basil, sugar, salt and pepper. Add red onion and green pepper; toss to coat. Stir in tomatoes, olives and cheese. Cover and refrigerate for at least 1 hour. Serve with a slotted spoon.

1 pound fresh or frozen pizza or bread dough, thawed according to package directions
1 1/2 cups grated mozzarella cheese
2 teaspoons garlic flakes
2 cooked chicken breast halves, diced (about 2 cups)
1 cup sliced mushrooms
1/2 cup sliced pitted kalamata olives
1/2 cup crumbled feta cheese
1 teaspoon dried oregano
1 recipe Cherry Tomato Salad, recipe follows
2 cups halved red cherry or grape tomatoes
2 cups halved yellow cherry tomatoes
1/4 cup freshly chopped basil leaves
2 tablespoons red wine vinegar
2 teaspoons olive oil
1 teaspoon Dijon mustard
Salt and coarsely ground black pepper

Steps:

  • Preheat oven to 450 degrees F.
  • Roll dough out into a large rectangle and transfer to a large baking sheet. Top dough with mozzarella cheese, to within 1/2-inch of the edges and then sprinkle garlic flakes all over cheese. Top with chicken, mushrooms and olives. Sprinkle feta cheese over top and then sprinkle oregano over everything. Bake 10 to 12 minutes, until crust is golden brown and cheese melts.
  • Serve with Cherry Tomato Salad.
  • In a medium bowl, combine tomatoes and basil. In a small bowl, whisk together vinegar, oil and mustard. Add mixture to tomatoes and toss to combine. Season, to taste, with salt and black pepper.

1 (10.5 oz) container yellow cherry tomatoes
1 (14.5 oz) can chick peas, drained and rinsed
1 1/2 cucumbers, peeled and sliced into quarters
2 Hass avocados, peeled, cored and diced (ripe but semi-firm)
1/4 cup chopped fresh parsley
3 oz feta cheese, crumbled
Dressing
1/2 cup olive oil
1/4 cup fresh lemon juice
1 tsp dijon mustard
2 cloves garlic, minced
1/4 tsp salt
1 Tbsp chopped fresh basil
3/4 tsp dried oregano

Steps:

  • In a salad bowl toss together tomatoes, chick peas and cucumbers. Add avocado and parsley and gently toss. Add desire amount of dressing and the feta and gently toss to evenly coat. Serve within an hour for best results. For the dressing: In a blender (or mixing bowl with a whisk), blend olive oil, lemon juice, mustard, garlic and salt until mixture is well emulsified. Stir in basil and oregano.

1/2 pound boneless, skinless chicken breast
Salt and freshly ground pepper to taste
1/4 cup extra virgin olive oil
1 small red onion, halved and sliced across the grain
1 pound fresh, sweet ripe but firm tomatoes, cut in wedges
12 kalamata olives, pitted and halved
1 tablespoon fresh lemon juice
1 tablespoon red wine vinegar or sherry vinegar (more to taste)
2 ounces feta cheese, crumbled
3 to 4 tablespoons chopped or torn fresh mint leaves (to taste)
1 heart of romaine lettuce, washed, dried and torn or cut in 1-inch pieces, or 1 bag arugula or spring mix, washed and spun dry

Steps:

  • Preheat the oven to 400 degrees. Season the chicken breasts well with salt and pepper. Toss them in a bowl with 2 tablespoons of the olive oil. Heat a grill pan or a cast iron pan over high heat. Sear the chicken breasts for about 2 minutes on each side, until grill marks appear if using a grill pan, or until nicely browned if using a regular pan. Transfer to a baking sheet and place in the oven. Roast for 10 to 15 minutes, or until a meat thermometer reads 165 degrees when inserted in the thickest part. Remove from the heat and allow to cool.
  • Meanwhile place the sliced onion in a bowl and cover with water. Soak for 5 minutes, drain and rinse well. Drain on paper towels.
  • When the chicken is cool enough to handle tear it into bite-size pieces or a little bigger than bite-size and place in bowl. Add the onion, tomatoes and olives. Season with salt and pepper and toss with the lemon juice, vinegar and remaining olive oil. Add the mint and feta and toss again.
  • Line a platter or wide salad bowl with the lettuce. Top with the chicken and tomato salad, and serve.

2 firm cucumbers
4 ripe tomatoes, cored and cut into bite-sized slices
1 large green pepper, seeded and cut into bite-sized pieces (you can use 1/2 green, 1/2 red pepper)
1 small red onion, peeled and thinly sliced
4 -6 ounces feta cheese, cut into cubes
1/2 cup pitted kalamata olive, sliced
1 tablespoon chopped fresh oregano leaves (or 1/2 tsp. dried)
1/4 cup red wine vinegar
splash balsamic vinegar
2/3 cup extra virgin olive oil
sea salt, to taste
ground pepper, to taste

Steps:

  • Peel cucumber and cut in half lengthwise. With a small spoon, scrape out seeds and discard, then cut cucumber into bite-size chunks.
  • Place in a large bowl and combine with tomatoes, green pepper, onion, feta and olives.
  • In a small bowl, combine oregano and vinegars and whisk in olive oil. Drizzle half the dressing over the salad and season with salt and pepper.

1 can garbanzo beans rinsed and drained well
1 1/2 cups diced cucumbers that have been stripe peeled
1 1/2 cups diced tomatoes, peeled and seeded
2 tablespoons balsamic vinegar
3 tablespoons fruity extra virgin olive oil
1/2 cup chopped fresh basil
salt and fresh ground black pepper to taste
1/2 cup crumbled Feta
1/2 cup of shelled pistachio nuts

Steps:

  • Place garbanzo beans in a large gallon size zip-loc bag. Then in a small mixing bowl, whisk the olive oil and vinegar. Pour dressing over the garbanzo beans, and marinate beans in refrigerator 4-6 hours or overnight. When you're ready to prepare and serve the salad, remove beans from refrigerator and drain them in a colander, reserving all the dressing. Taste dressing for seasoning, and if you don't have at least 3 T dressing, add a bit more balsamic vinegar and olive oil. Then, dice the tomatoes. Cut cucumbers into fourths lengthwise, and then into pieces about 1/2 inch wide. Wash basil, spin dry, and then coarsely chop. Combine tomatoes, cucumbers, garbanzo beans and basil and toss with reserved salad dressing. Next, season the salad with salt and fresh ground black pepper. To serve, divide equal portions among individual serving plates, and top with crumbled Feta cheese and pistachio nuts.

8 cups romaine lettuce leaves, torn
1 tomatoes, cored and cut into wedges
1 cup cucumber, diced
1/2 cup kalamata olive

Steps:

  • Preheat oven to 400.
  • Using a knife, slice off 1/4 to 1/2 inch from the top of unpeeled garlic head to expose cloves. Place garlic in a small dish and drizzle with 1/2 tsp oil. Cover with foil, then bake in oven until garlic feels soft when pressed, 25 - 35 minutes. Remove from oven and cool. The recipe only calls for 5 - 6 cloves. Use the rest for other dishes.
  • Mash 6 cloves with a fork. Stir in oregano, salt and pepper. Whisk in remaining oil, vinegar and enough water for a dressing consistency. Stir in sun-dried tomatoes. Taste and add additional salt if needed.

8 medium tomatoes, peeled and sliced
1 medium onion, thinly sliced
1 green pepper, chopped (optional)
1 cucumber, chopped (optional)
2 tablespoons of fresh mint or 2 tablespoons fresh parsley, chopped
1 tablespoon olive oil
1 tablespoon wine vinegar or 1 tablespoon balsamic vinegar
1 garlic clove, minced (optional)
salt and pepper, to taste
1/2 cup feta cheese, crumbles or 1/2 cup kalamata olive
some sprigs fresh herb (optional)

Steps:

  • Combine tomatoes, onion, pepper & cucumber in a bowl.
  • Combine fresh herbs, olive oil, vinegar and garlic.
  • Pour dressing over vegetable and toss lightly.
  • Salt and pepper, to taste.
  • Garnish with cheese and/or Kalamata olives.
  • Garnish with sprigs of fresh herbs if desired.

1/4 cup mayonnaise
2 tablespoons chopped pickled pepperoncini (2 to 3 peppers), plus 3 tablespoons brine
1 pint assorted grape or cherry tomatoes, halved
3 tablespoons extra-virgin olive oil
4 scallions, chopped
1/4 cup fresh mint, chopped
Kosher salt and freshly ground pepper
1 1/4 pounds ground turkey
1 medium zucchini (half grated, half cut into matchsticks)
1/2 cup finely crumbled feta cheese
1 teaspoon dried oregano
4 pitas, warmed

Steps:

  • Combine the mayonnaise and 2 tablespoons pepperoncini brine in a small bowl. Toss the tomatoes with the chopped pepperoncini, the remaining 1 tablespoon brine, 2 tablespoons olive oil, half of the scallions and half of the mint in a medium bowl. Season with 1/4 teaspoon salt and a few grinds of pepper. Refrigerate the mayonnaise and the tomato salad while you make the burgers.
  • Combine the turkey, grated zucchini, feta, oregano, the remaining scallions and mint, 1/2 teaspoon salt and a few grinds of pepper in a large bowl and mix well with your hands. Form into 4 oblong patties, about 4 inches wide and 1/2 inch thick.
  • Heat the remaining 1 tablespoon olive oil in a large nonstick skillet over medium heat. Add the patties and cook until browned and cooked through, 4 to 5 minutes per side. Cut off a piece of each pita to open. Serve the burgers and zucchini sticks in the pitas and drizzle with the mayonnaise sauce. Serve with the tomato salad.

6 grape tomatoes, halved - or more to taste

Steps:

  • Place kale in a salad bowl and add yogurt. Use your hands to rub kale and yogurt together to reduce bitterness, 2 to 3 minutes. Stir grape tomatoes and cucumber into kale mixture and top salad with crumbled feta cheese and sunflower seeds.
