HEALTHY GREEK STYLE CHICKEN TACOS

Idea I came up with for something quick and healthy that can be mostly prepared in advance. I used a large cooked chicken breast cut-up but would also be a good use for leftover roast chicken. Makes 4 large tacos so I think would be a complete meal for two or a light snack / lunch for four, if using the smaller shells you'll probably be able to fill six of them. I listed a gherkin because that's what I used but you could also use a small handful of diced cucumber. Because it's served slightly chilled I think this would make a nice and quick summer meal at the end of a hot day. You could also use a low-fat Greek yoghurt and/or omit the feta. There is not a lot of sweetness in the recipe so I couldn't really say it was a kid pleaser, more of a slightly sharp taste from the salty and sour ingredients.

1/2 cup Greek yogurt
1 gherkin, finely diced
2 tablespoons black olives, pitted and sliced
2 garlic cloves
1/2 teaspoon lemon juice
1 teaspoon olive oil
1/4 teaspoon dill, dried
black pepper, to taste
4 large taco shells
250 g cooked chicken, diced
1 large tomatoes, sliced into 8 pieces
1 cup mixed salad green (loosely packed)
50 g feta, crumbled

Steps:

  • Mix together all sauce ingredients well in a medium bowl. This may be prepared and refrigerated in advance but remove 10 minutes or so before serving. The flavours will blend better if you do it in advance.
  • When ready to serve warm up taco shells for 10 minutes or so as per directions on pack.
  • Place two tomato slices and a few slices of lettuce in each shell.
  • Stir the diced chicken through the sauce and stuff each shell with equal amounts.
  • Top each with the crumbled feta and serve.

2 tablespoons olive oil
4 teaspoons grated lemon zest
3 garlic cloves, minced, divided
1 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon pepper
2 pounds mahi mahi
1-1/2 cups shredded red cabbage
1/2 medium red onion, thinly sliced
1/2 medium sweet red pepper, julienned
1/2 cup crumbled feta cheese
6 tablespoons chopped pitted Greek olives, divided
1/4 cup minced fresh parsley
1-1/2 cups plain Greek yogurt
1/2 medium English cucumber, cut into 1-inch pieces
1 teaspoon dill weed
1/2 teaspoon ground coriander
12 whole wheat tortillas (8 inches), warmed

Steps:

  • In a large resealable plastic bag, combine the lemon juice, oil, lemon zest, 2 garlic cloves, oregano, salt and pepper. Add the mahi mahi; seal bag and turn to coat. Refrigerate for up to 30 minutes., In a large bowl, combine the cabbage, onion, red pepper, cheese, 3 tablespoons olives and parsley; set aside., Place the yogurt, cucumber, dill, coriander and remaining garlic and olives in a food processor; cover and process until blended., Drain fish and discard marinade. Lightly oil the grill rack. Grill mahi mahi, covered, over medium heat or broil 4 in. from the heat for 3-4 minutes on each side or until fish flakes easily with a fork., Place a portion of fish on each tortilla; top with cabbage mixture and sauce.

1/2 cup KRAFT Greek Vinaigrette Dressing
1 lb. boneless skinless chicken breasts, cut into 1-inch pieces
8 flour tortillas (6 inch)
1 cup chopped cucumbers
1 cup quartered cherry tomatoes
1 container (6 oz.) plain low-fat Greek-style yogurt
1/4 cup ATHENOS Traditional Crumbled Feta Cheese
2 Tbsp. chopped fresh mint

Steps:

  • Pour dressing over chicken in medium bowl; stir to evenly coat chicken with dressing. Refrigerate 30 min. to marinate.
  • Heat grill to medium heat. Remove chicken from marinade; discard marinade. Thread chicken onto 4 skewers.
  • Grill 6 to 7 min. on each side or until chicken is done, adding tortillas to the grill for the last minute to heat just until warmed.
  • Transfer tortillas to plate; top with chicken and remaining ingredients.

1 cup shredded romaine lettuce
1/2 cup thinly sliced English (seedless) cucumber
1/2 cup cherry or grape tomatoes, cut into quarters
1/2 cup thinly sliced red or yellow bell pepper strips
1/3 cup pitted kalamata olives, cut in half
4 fresh basil leaves, thinly sliced
2 tablespoons extra-virgin olive oil
1 tablespoon fresh lemon juice
Dash coarse (kosher or sea) salt
Dash freshly ground black pepper
8 oz halloumi cheese (not sliced)
8 Old El Paso™ flour tortillas for soft tacos

Steps:

  • Trim ends from zucchini. Use a vegetable peeler to make long, thin ribbons of zucchini. For veggie filling, place zucchini ribbons, lettuce, cucumber, tomatoes, bell pepper, olives and basil in large bowl. For dressing, in small bowl, beat oil, lemon juice, salt and black pepper with whisk; pour over vegetable mixture, and toss to coat.
  • Heat gas or charcoal grill. Cut block of cheese in half horizontally to form 2 blocks. Place both blocks of cheese directly on grill over high heat. Cook uncovered 4 to 6 minutes, turning once, until browned. Remove from grill. Cut each grilled cheese block into 12 cubes to make 24 cubes.

1 (10-ounce) package spinach, frozen
2 pounds ground lamb
2 teaspoons grill seasoning
2 1/2 teaspoons ground cumin, divided
1 tablespoon chili powder
1 tablespoon coriander
1 teaspoon dried oregano
2 to 3 pinches ground cinnamon
1 cup feta cheese, crumbled
2 tablespoons extra-virgin olive oil
1 cup Greek yogurt or drained regular yogurt
1 small clove garlic, grated
1/4 cucumber, peeled and grated
1 lemon, juiced
2 vine ripe tomatoes, thinly sliced
1/2 cucumber, thinly sliced
8 pita breads
2 vine ripe tomatoes, thinly sliced
1/2 cucumber, thinly sliced
Hot pepper rings, sliced banana peppers, for sandwich garnish

Steps:

  • Preheat oven to 425°F. Defrost spinach in microwave and squeeze out the moisture. Place lamb in a bowl. Add grill seasoning, 2 teaspoons cumin, chili powder, coriander, oregano, cinnamon and feta crumbles. Add the spinach. Mix up the lamb, seasonings and spinach, and form a long 3-inch roll on a baking sheet. Coat lamb with extra-virgin olive oil and bake 20 minutes. Mix yogurt, a grated clove of garlic, cucumber, the juice of 1 lemon and 1/2 teaspoon cumin. Slice and reserve the tomatoes and cucumbers. Soften pita over open gas flame or under broiler. Slice lamb loaf into 1/4-inch slices. Spread yogurt on pitas and top with a 2 slices of lamb, tomatoes and cucumbers. Serve one pita per person. Note: You can use your own tzatziki sauce instead of this version, if you prefer.
