GREEK-STYLE FLAMIN' CHEESE DOG

One 6-ounce block kasseri cheese
4 hot dogs, tightly cross-hatched
3 tablespoons olive oil
1/4 cup all-purpose flour
1 shot of brandy
1 wedge of lemon
1/2 cup Feta-Mint Tzatziki, recipe follows, or store-bought
4 hot dog buns, steamed
2 Persian cucumbers, small diced
1 cup cherry tomatoes, quartered
1/4 cup Pickled Red Onions, recipe follows
1 small English cucumber, peeled
1 teaspoon kosher salt
1 cup whole-milk Greek yogurt
1/2 cup crumbled feta cheese
1 clove garlic, minced or pressed
2 tablespoons minced fresh mint
1 cup red wine vinegar
1/2 cup water
2 tablespoons sugar
2 tablespoons kosher salt
1 medium red onion, sliced 1/2-inch thick

Steps:

  • Slice the block of cheese in half lengthwise and then each half again in half to form 4 equal planks. Place the sliced cheese in the freezer for 15 to 20 minutes so it gets nice and cold.
  • Heat a skillet over medium-high heat. Sear all sides of the hot dogs until crisp and golden, about 10 minutes.
  • While the hot dogs are cooking, heat the oil in another medium cast-iron or stainless steel pan over medium-high heat. Dredge the cold cheese slices in the flour. If the flour doesn't stick to the cheese, you can sprinkle it first with a little water and then dredge in the flour. Shake off excess flour and gently place in the skillet. Sear the cheese, without moving, until golden brown, 1 to 2 minutes. Carefully flip the cheese and cook for another 30 seconds to 1 minute. If the cheese starts to melt in the pan, it's ok. Remove the pan from the heat. While the cheese is still sizzling, pour the brandy on the cheese and ignite with a lighter for that Opah! moment. Let the brandy burn for about 10 seconds, then squeeze the fresh lemon over to extinguish.
  • Smear some Feta-Mint Tzatziki in each steamed bun, then top with a hot dog. Remove the cheese from the pan with a spatula and place on the hot dogs. Then top with some fresh cucumbers, cherry tomatoes and Pickled Red Onions. Boom.
  • Grate the cucumber on the large holes of a box grater and place in a fine-meshed strainer or cheesecloth fitted over a bowl. Salt the cucumber and let sit 10 minutes. Then squeeze out any excess moisture. Add the strained cucumber into a bowl with the yogurt, feta, garlic and mint. Adjust the seasoning if necessary.
  • Simmer the vinegar, water, sugar and salt until dissolved. Add in the onions, remove from the heat and let sit until it cools to room temperature. Transfer to a jar or resealable container and let sit overnight in the fridge.

1 teaspoon pepper
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon cayenne pepper
1 teaspoon chili powder
1 teaspoon garlic salt
1 teaspoon cumin
1 teaspoon salt
2 medium onions, diced
1 (15 ounce) can tomato sauce
1 (15 ounce) can water
1 tablespoon prepared mustard

Steps:

  • Brown the burger and drain.
  • Put all ingredients in sauce pan and simmer for 1/2 - 2 hours. The longer it cooks, the better the flavor.

1 (7 ounce) container plain Greek yogurt
2 tablespoons mayonnaise
1 tablespoon cucumber, grated
2 teaspoons fresh chives, chopped (or use scallions)
1 teaspoon chopped fresh dill (or 1/4 tsp. dried)
1/2 teaspoon lemon zest, grated
2 teaspoons fresh lemon juice
salt
black pepper
4 vegetarian sausages, cooked according to package directions (or use meat)
4 hot dog buns
romaine lettuce, shredded
red onion, thinly sliced
tomatoes, diced
cucumber, diced
greek dressing, bottled

Steps:

  • Stir together yogurt, mayonnaise, cucumber, chives, dill, lemon zest, lemon juice. Add salt and pepper to taste.
  • Cook sausages according to directions, or however you like.
  • Place sausages in buns. Top with yogurt mixture and lettuce, red onion, tomato, cucumber and Greek dressng.
  • Enjoy!

1/4 cup vegetable oil
1 1/2 pounds ground beef
2 cups finely chopped onion
2 teaspoons salt
1 teaspoon (3 cloves) chopped garlic
1/2 teaspoon pepper
2 tablespoons chili powder
2 tablespoons paprika
1 tablespoon dried oregano

Steps:

  • In a large saucepan, heat oil over medium-high heat and saute onions until golden. Add ground beef, stirring to break it up, and continue cooking until the meat is completely browned. Mix in remaining ingredients then reduce heat to low and simmer 25 to 30 minutes, allowing the flavors to "marry". Makes about 4 cups sauce (enough for 12 to 18 hot dogs). Notes You can spoon this right out of the pot onto hot dogs as they come off the grill or, if you're planning on grilling a little later, transfer it to a disposal aluminum pan, cover, and keep refrigerated. It can be easily reheated on the grill by placing the container, covered with aluminum foil, on a grill preheated to medium heat. Heat for 10 minutes, stirring occasionally. While the sauce is heating, grill hot dogs for 5 to 8 minutes, until browned and heated through. Place hot dog rolls cut-side down on the grill for 1 to 2 minutes, until lightly toasted. Then assemble the hot dogs, topping them with the sauce.

This one is a little different. It is supposed to be a copycat recipe of the Texas Lunch's hot dog sauce from Central Pennsylvania. It is not even close to their sauce -- but still, very tasty. Do not let the long simmer time scare you off -- it is worth it.

1 lb hamburger
1 small onion, chopped fine
1 pint water
1/2 teaspoon salt
1 teaspoon black pepper
1 teaspoon paprika
1 teaspoon ground cloves
2 tablespoons chili powder
1 teaspoon dried oregano
1 teaspoon garlic powder

Steps:

  • Brown hamburger and onion together until no longer pink. Drain.
  • Add remaining ingredients to the hamburger and onion. Cover,and simmer on low heat for 2 1/2 - 3 hours, or until water has been cooked off.
  • Serve over grilled hot dogs with mustard and chopped onions.
