ANISEED LOAF

Number Of Ingredients 8

1 cup sugar
1/2 cup honey
1 tablespoon vegetable oil
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup buttermilk
1 tablespoon aniseed

Steps:

  • In a large bowl, beat the sugar, honey and oil. Combine the flour, baking soda and salt; add to sugar mixture alternately with buttermilk, beating well after each addition. Stir in aniseed. , Pour into a greased 9x5-in. loaf pan. Bake at 350° for 35-45 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.

Growing up in a Greek family, I remember the bread my family purchased at a Greek bakery each Easter. I found this recipe in a 1965 Better Homes & Garden Bread Cook Book and it is one of my favorites. The dough can be easily made in a bread machine, then shaped before baking. I love the aroma of the anise as the bread bakes. The oils of cinnamon & anise can be found at baking supply shops.

Number Of Ingredients 13

2 1/4 teaspoons active dry yeast
1/4 cup water
1/2 cup milk, scalded
1/3 cup sugar
1/4 cup butter
1/2 teaspoon salt
1/4 teaspoon anise oil
6 drops cinnamon oil
2 3/4-3 cups all-purpose flour
1 egg
1 egg, slightly beaten
1 tablespoon water
2 tablespoons sesame seeds

Steps:

  • Soften yeast in warm water. Pour scalded milk over sugar, butter and salt; stir til butter melts. Cool to lukewarm. Stir in flavorings. Add 1 cup of the flour; mix well. Stir in 1 egg and softened yeast; beat well. Add remaining flour ( or a little more or less to make a soft dough.) Turn out on lightly floured surface. Knead til smooth and elastic ( 8 - 10 minutes). Place in lightly greased bowl, turning once. Cover; let rise in a warm place until almost double (about 1 1/4 hours).
  • Punch down. Let rise again until almost double (1 hours). Turn out on to lightly floured surface and divide dough into thirds; form in balls. Cover and let rest for 10 minutes.
  • Roll each under hands to form strands 16 inches long, tapering ends. Braid loosely without stretching, beginning in the middle, working towards either end. Pinch ends together. Cover; let rise until almost double ( 40 minutes). Combine beaten egg and water; brush over braid; sprinkle with sesame seed.
  • Bake at 375* for 25 minutes.

1 3/4 cups all-purpose flour
1 3/4 teaspoons baking powder
1/4 teaspoon salt
3 jumbo eggs
3/4 cup sugar
5 tablespoons unsalted butter, melted and cooled
1 1/2 teaspoons anise seeds, finely crushed
Special Equipment
a stand mixer fitted with whisk attachment

Steps:

  • Put oven rack in middle position and preheat oven to 350°F. Lightly butter and flour an 8- by 4- by 3-inch loaf pan.
  • Sift together flour, baking powder, and salt into a bowl.
  • Beat together eggs and sugar in bowl of mixer at high speed until tripled in volume and thick enough to form a ribbon that takes 2 seconds to dissolve when beater is lifted, 12 to 18 minutes.
  • Sift flour mixture over egg mixture in 3 batches, folding in each batch. Gently stir in cooled butter and anise seeds. Immediately pour into loaf pan and smooth top. Bake until top is golden brown and a wooden pick inserted in center of loaf comes out clean, 35 to 45 minutes. Cool loaf 5 minutes, then invert onto a cutting board and cool 30 minutes more.
  • Meanwhile, increase oven temperature to 400°F.
  • Trim ends of loaf and cut loaf crosswise into 1/2-inch-thick slices. Bake on a baking sheet until undersides are golden brown, about 7 minutes. Turn toasts over and bake until undersides are golden brown, about 5 minutes more.

4 cups rye flour
2 teaspoons baking soda
½ teaspoon salt
1 ¼ cups buttermilk
1 ¼ cups packed brown sugar
1 cup white sugar
½ cup light corn syrup
½ cup molasses
2 eggs
1 tablespoon anise seed
1 tablespoon melted butter

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease 3 small loaf pans.
  • Combine rye flour, baking soda, salt, buttermilk, brown sugar, white sugar, corn syrup, molasses, eggs, anise seed, and melted butter in a large bowl, and mix well.
  • Scrape the batter into the prepared loaf pans, and bake in the preheated oven until a toothpick inserted into the center comes out clean, about 45 minutes. Remove pans from the oven, and cool on their sides for about 15 minutes before loosening the sides of the loaves from the pans. Remove the loaves, and finish cooling on a wire rack.

2 ripe tomatoes, skinned and crushed
1 cup water

  • Mix flour with water and add crushed tomatoes, onion, salt, and pepper. Combine the mixture well with a wooden spoon to form a smooth cream.

3/4 cup water (70 to 80 degrees F)
1 eggs or 1/4 cup Egg Beaters egg substitute
1/4 cup butter or 1/4 cup margarine, softened
1/4 cup sugar or 1/4 cup Splenda sugar substitute

3 cups bread flour
1 teaspoon anise seed
2 teaspoons active dry yeast

Steps:

  • In bread machine pan, place first eight ingredients in order suggested by manufacturer.

just made this recipe today...came out too high first time, adjusted it and second loaf is perfect.....I couldn't be happier... I make this on dough cycle too or the Kitchen Aid , after rise is done, I form into a loose braid let rest for 45 to 60 minutes, brush with melted butter, then bake 350 degrees, 30 minutes. Glaze with a thick confectioners sugar and cream frosting , and sprinkle toasted almonds on top, or sprinkles.

3/4 cup warm whole milk or 2 percent milk
2 large eggs
1 large egg yolk
1 teaspoon vanilla extract
2 teaspoons anise flavoring (or 3 tsp. if desired)
1 teaspoon salt
1/3 cup granulated sugar
1/2 cup soft room temp. butter
3 1/2 cups all-purpose flour
2 teaspoons gluten (optional)
1 1/2 teaspoons active dry yeast

Steps:

  • Place in order of your manufacturers instructions for your bread machine (makes 1 1/2 pound loaf).
  • Place on sweet bread setting, light crust.
  • Checking as mixing that it forms a smooth slight tacky ball of dough.
  • If dough is sloppy, add a tsp, flour at a time.
  • If dough is too hard like, add a tsp milk, at a time.
  • Although at this time I did not have to adjust my dough upon mixing.
  • Remove when completed baking, to a wire rack.
  • Cool thoroughly before cutting with a serrated bread knife, or before storing.
