"My mother-in-law prepared this for us on a recent visit," relates Lee Ann Odell of Boulder, Colorado. The fresh-tasting salad of spinach and grapefruit is nicely dressed with a sweet honey mixture. "The recipe is so easy to put together, and we never have any leftovers," Lee Ann confirms.

1 medium pink grapefruit
1 package (10 ounces) fresh spinach, torn
2 tablespoons chopped green onion
2 teaspoons cider vinegar
2 teaspoons olive oil
2 teaspoons honey
2 teaspoons prepared mustard

Steps:

  • Cut grapefruit in half; with a sharp knife, cut around each section to loosen fruit, reserving juice. In a salad bowl, toss the spinach, onion and grapefruit sections. In a jar with a tight-fitting lid, combine the vinegar, oil, honey, mustard and reserved grapefruit juice; shake well. Drizzle over salad and toss to coat. Serve immediately.

3 pink grapefruit
3 tablespoons wine vinegar
2 teaspoons Dijon mustard
Salt and pepper
1/2 cup plus 1 tablespoon vegetable oil
1 1/2 pounds large shrimp, peeled and deveined
1 1/2 pounds spinach, stems trimmed and leaves washed well (about 3 1/2 quarts)
1/2 red onion, thinly sliced

Steps:

  • With a sharp knife, peel the grapefruit, removing all the bitter white pith. Slice about 3/8 inch thick.
  • In a large bowl, whisk together the vinegar, mustard, and 1/8 teaspoon each salt and pepper. Drizzle in 1/2 cup of the oil, whisking to combine.
  • Season the shrimp with 1/2 teaspoon salt and 1/8 teaspoon pepper. In a large nonstick skillet, heat the remaining tablespoon oil over medium heat. Add the shrimp, and cook, turning once, until pink, about 3 minutes per side.
  • Add the grapefruit, cooked shrimp, spinach, and onion to the vinaigrette in the large bowl. Toss well. Serve at once.

1/2 cup Kalamata olives or other brine-cured black olives, pitted

Steps:

  • Combine vinegar and fennel seeds in medium bowl. Gradually whisk in oil. Season dressing with salt and pepper.
  • Cut all peel and white pith from grapefruits. Cut grapefruits between membranes to release segments. Stir segments into dressing. Let stand at least 15 minutes and up to 1 hour.
  • Toss radicchio, spinach and olives in bowl. Add grapefruit segments and dressing to coat. Season with salt and pepper.

2 red grapefruits
6 cups about 5 ounces baby spinach leaves, washed and dried
1 avocado, peeled, pitted, and sliced into crescents
1/4 cup toasted pine nuts
1/4 cup crumbled gorgonzola (optional)
1/4 cup honey
1/4 cup white wine vinegar
1 teaspoon Dijon mustard
1/2 cup canola oil or 1/2 cup grapeseed oil
2 teaspoons poppy seeds

Steps:

  • 1. To make dressing, mix together honey, vinegar, and mustard. Using a wisk, add oil in a slow stream and mix well. Stir in poppy seeds. This makes about a cup of dressing.
  • 2. Using a serrated knife, cut, and peel the membranes from grapefruit. Section fruit and throw away the membranes.
  • 3. Gently arrange spinach on individual plates. Top with sliced avocado and grapefruit sections. Drizzle 1 tablespoon dressing over each salad. Sprinkle with toasted pine nuts and gorgonzola, if desired.

  • In a bowl whisk together vinegar, honey, and mustard and add oil in a stream, whisking until emulsified.
  • In a large heavy skillet cook onion and bacon over moderate heat, stirring occasionally, until onion is pale golden and bacon is browned. Add sesame seeds and cook, stirring, until pale golden.
  • In a large serving bowl toss together spinach, grapefruit sections, and bacon mixture. Add about half of dressing and toss to combine, adding more dressing if desired.

1 ripe avocado, peeled and cut into 1/4 inch slices
1/2 lime, juice of
6 ounces fresh Baby Spinach
8 ounces red grapefruit sections (may use fresh if you have time to do so)
2 tablespoons sugar
1 1/2 tablespoons raspberry vinegar
1/4 teaspoon dry mustard
1/8 teaspoon salt
1 tablespoon canola oil
1 teaspoon poppy seed
1 tablespoon sunflower seeds
1/2 cup pomegranate seeds

Steps:

  • Brush avocado slices with lime juice.
  • Arrange 1.5 cups spinach on each of 6 small plates; top each serving with avocado slices and grapefruit sections.
  • Combine sugar, vinegar, mustard, and salt in a small bowl; whisk until sugar dissolves. Gradually add oil, stirring well with a whisk. Stir in poppy seeds.
  • Drizzle 1.5 t dressing over each salad.
  • Sprinkle each with 1/2 t sunflower seeds and about 1 T pomegranate seeds.

2-4 salmon filets, sized for individual taste
1 lemon
1 avocado
1 large (preferably red) grapefruit
1/2 c. canola (or other lighter tasting) vegetable oil
salt and white pepper
Spring greens, baby spinach, or boston lettuce

  • Bake or fry the salmon. If you intend to serve the salmon cold, this needs to be done several hours ahead. Meantime, peel and cut the avocado into 1/2 inch cubes. Place in a 1-quart or smaller bowl. Squeeze the juice of the lemon over the avocado. Peel and remove the membrane of the grapefruit. Break the segments into thirds. Place it in the bowl along with all juices. Add 1/2 cup oil and gently fold together. Salt and pepper to taste. Wash and thoroughly dry the greens. 1/4 cup BREAKSTONE'S or KNUDSEN Sour Cream
25 multigrain saltine crackers, finely crushed (about 3/4 cup)
1/4 cup oil, divided
1/4 cup KRAFT Balsamic Vinaigrette Dressing
1/4 cup pomegranate juice
1/2 large onion, sliced
2 pkg. (6 oz. each) baby spinach leaves
1 large pink grapefruit, segmented
3/4 cup pomegranate seeds

Steps:

  • Dip meat in sour cream, then in cracker crumbs, turning to evenly coat both sides of each piece.
  • Reserve 2 tsp. oil. Heat 2 Tbsp. of the remaining oil in medium skillet on medium heat. Add meat, in batches; cook 4 min. on each side or until done (145ºF), adding remaining oil as needed. Remove from heat; cover to keep warm.
  • Mix dressing and pomegranate juice until blended. Heat reserved oil in large skillet on medium heat. Add onions; cook and stir 5 min. or until crisp-tender. Stir in dressing mixture; bring to boil. Remove from heat. Add spinach; toss to evenly coat. Stir in grapefruit and pomegranate seeds.
  • Serve meat with salad.

1/2 pound baby spinach leaves
3 tablespoons freshly grated romano cheese

Steps:

  • In a small bowl, whisk together vinegar, olive oil, and pepper to make vinegarette Melt butter in large non-reactive skillet over med.-high heat. When butter begins to foam, add grapefruit, paprika, and salt. Reduce heat slightly and saute until grapefruit is heated through, about 2 to 3 minutes. Add spinach leaves and gently fold them together with the warm fruit just long enough to wilt the spinach , about 45 seconds. Transfer the warm spinach grapefruit mixture to salad bowl and add the vinegarette. Sprinkle with remaining cheese.
