1 1/4 cups honey
1 cup peanut butter
4 cups Grape-nuts cereal (or use a generic barley nugget cereal)
1 cup quick oatmeal
1 cup dried cranberries

Steps:

  • Line a 9"x13" baking pan with parchment paper.
  • In a large saucepan, combine honey and peanut butter over medium high heat.
  • Bring to a boil and cook for 1 minute, stirring constantly.
  • Remove from heat and add the remaining ingredients, mixing well and spread into prepared pan.
  • Use a piece of parchment paper to press into pan and flatten out.
  • Put in refrigerator for about 30 minutes until cool and cut into bars.

These wonderful patties have undergone several transformations since I first tried them. I have used different soup mixes to season them, and added chopped nuts for texture. They are tasty with a tomato sauce topping or baked in a mushroom sauce for a fancy dinner. I like them best fixed up like a hamburger with lettuce, tomato, cheese, mayo, ketchup and alfalfa sprouts on a bun or good home-made bread!

1 cup dry brown lentils
2 ½ cups water
¼ cup milk
1 cup wheat and barley nugget cereal (e.g. Grape-Nuts™)
1 (1 ounce) envelope dry onion soup mix
½ teaspoon poultry seasoning
2 eggs, beaten
½ cup chopped walnuts
1 cup seasoned dry bread crumbs
2 tablespoons vegetable oil

Steps:

  • Place lentils and water in a saucepan, and bring to a boil. Cover, reduce heat to low, and simmer until tender, about 30 minutes. Drain.
  • In a large bowl, mix together the cooked lentils, milk, wheat and barley cereal, eggs and walnuts. Season with onion soup mix and poultry seasoning. Mix well using your hands, as the mixture will be very thick. Let stand for 30 minutes, or refrigerate overnight.
  • Heat oil in a large skillet over medium heat. Use an ice cream scoop to portion out balls of the lentil mixture. Drop the scoops into bread crumbs, and coat while flattening into patties. Fry burgers in the hot skillet until nicely browned on both sides, about 5 minutes per side, depending on the thickness of the patties.

These no nonsense nut burgers are great. I have yet to find a recipe or a restaurant that makes as good of a version. Serve with chips... tortilla, blue corn, sweet potato, or other veggie chips. Use whichever types of nuts you like, or have handy such as pecans, walnut, hazelnuts, almonds, sunflower seeds, pumpkin seeds, or any combination of nuts you might like.

½ cup finely chopped walnuts
½ cup unsalted sunflower seeds
1 cup canned chickpeas, drained
¼ cup diced red onion
1 beaten egg
1 tablespoon chopped fresh parsley
¼ teaspoon fresh ground black pepper
1 tablespoon salt-free herb seasoning blend
2 tablespoons olive oil
2 slices mild Cheddar cheese
1 pita bread round
¼ cup prepared Ranch salad dressing
2 leaves romaine lettuce
1 medium tomato, thinly sliced
½ avocado - peeled, pitted and sliced

Steps:

  • Place walnuts and sunflower seeds in a dry skillet over medium heat. Cook, stirring occasionally until lightly toasted and fragrant, about 5 minutes.
  • In a medium bowl, mash garbanzo beans with a fork, or chop in a food processor. Stir in the onion, egg, parsley, and toasted nuts. Season with pepper and seasoning blend, and mix well.
  • Heat olive oil in a skillet over medium heat. Divide the bean mixture into 2 patties, and fry in the hot oil for about 3 minutes on each side, or until well browned and heated through. Place a slice of cheese over each patty, and remove from heat.
  • Place the pita round in the same dry skillet the nuts were in, and heat for about 1 minute on each side. Cut the round in half, spread ranch dressing inside of each, and line the pockets with romaine leaves. Place a cheesy patty into each one, and top with sliced tomato and avocado. Serve with tortilla or potato chips.

Grape-Nuts Burgers image

I got this from a vegetarian cooking show. It is very simple but really good. My family loves them and my neighbor, who is not a vegetarian enjoyed them too. I have always loved grape-nuts and this is a good way to use them. Prep time is time to sit in fridge overnight. Cooking time includes both the browning time and the time if you decide to bake them in the oven with the spaghetti sauce.

2 eggs, well beaten
1 (5 1/2 ounce) can v-8 juice
1 (1 3/4 ounce) envelope lipton's dry onion soup mix
1/3 cup Heinz Chili Sauce (the bottled one with the tarter sauces on grocery shelf)
1/4 cup finely diced celery
1/4 cup onion, grated
2 cups Grape-nuts cereal

Steps:

  • In large bowl, whisk eggs, V-8 juice, onion soup mix and chili sauce; Add onion and celery; Work in grape-nuts (mixture will resemble meatloaf); Cover and refrigerate 4-5 hours or overnight.
  • Form into patties, brown well on both sides in equal amounts of oil and margarine; Serve on buns
  • Or you can put them in a 9x13 casserole and bake them in the over (350) for 30 minutes covered in spaghetti sauce.
