2 tablespoons extra-virgin olive oil
1 tablespoon whole-grain mustard
1 tablespoon honey
1 lemon, juiced
Kosher salt and freshly cracked black pepper
2 tablespoons chopped fresh mint
2 tablespoons chopped fresh parsley
1 Granny Smith apple, cut into thin matchsticks
1 Honeycrisp apple, cut into thin matchsticks
1 head fennel, thinly sliced, plus 1 tablespoon fronds, for serving

Steps:

  • Whisk together the oil, mustard, honey, lemon juice, 1/2 teaspoon salt and 1/2 teaspoon pepper in a large bowl. Add the mint, parsley, apples and fennel and toss them together until they are coated in the dressing. Top with the fennel fronds. Serve immediately.

1 bag(s) coleslaw mix (I use the large bag, 14-16 oz)
2 Granny Smith apples (diced)
2 Tbsp apple cider vinegar
3 Tbsp granulated sugar
3/4 c mayonaise
salt & pepper, to taste
2 Macintosh apples (diced)

Steps:

  • 1. Place coleslaw mix and apples in a mixing bowl.
  • 2. Add mayonnaise, sugar, salt, and pepper. Then add the apple cider vinegar.
  • 3. Mix all ingredients.
  • 4. Chill 1 hour up to overnight and serve. I never have leftovers and often double this recipe. You can add more or fewer apples according to your taste.

1 teaspoon grated ginger
1 pound beets, peeled
1 large Granny Smith apple, or similar flavored and textured apple
3 tablespoons sherry vinegar
1/2 teaspoon coarse grain salt
1/8 teaspoon cracked black pepper
1 to 2 tablespoons extra-virgin olive oil

Steps:

  • In a medium sized salad bowl, using your microplane grater (or the smallest holes of a cheese grater) grate fresh ginger directly into bowl, about one teaspoon. Grate beets and apples, add them to the bowl with the ginger, and toss until ginger is evenly distributed. Add sherry vinegar, salt, and pepper to bowl and toss to coat evenly. Add olive oil, stir to combine. Taste and adjust seasonings. Serve immediately or keep refrigerated.

1 heaping teaspoon Dijon or other good-quality mustard, or to taste
1 tablespoon lemon juice
1 tablespoon honey

8 radishes, chopped
2 medium Granny Smith or other tart, crisp apples, cored and shredded or grated
1 red onion, chopped or grated
Salt
Black pepper
1/2 cup chopped fresh parsley

  • Put the oil, mustard, lemon juice and honey in a large bowl and whisk until well combined.
  • Add the cabbage, apples, radishes and onion and toss until thoroughly combined. Sprinkle with salt and pepper and refrigerate until ready to serve. (It's best to let the slaw rest for an hour or so to allow the flavors to mellow. You can let it sit even longer, up to a few hours, before the apples start to discolor; just drain the slaw before continuing.)

2/3 cup salad oil
1/4 cup white wine vinegar
3/4 teaspoon salt
3 tablespoons chopped fresh basil
1 teaspoon Dijon mustard
1 teaspoon tabasco brand pepper sauce (your choice of flavor-I used Chipotle)
2 medium green onions, sliced
2 cups shredded red cabbage
2 cups shredded green cabbage
3 granny smith apples, cored and diced small

Steps:

  • Immediately after cutting up the apples, toss them with a little bit of vinegar to stop them from browning.
  • Combine the oil, vinegar, salt, fresh basil, Dijon mustard, Tabasco pepper sauce of choice, and green onions in a large salad bowl and mix well.
  • Stir in both cabbages and apples. Cover and chill several hours or overnight.
  • Best prepared at least 4 hours in advance or overnight for best flavor.
