SUE'S TACO SALAD

This is a great dish for pot-lucks. It's easy, and can be made in advance. Add dressing just before serving.

1 pound lean ground beef
1 (1 ounce) package taco seasoning mix
½ (14.5 ounce) package nacho-flavor tortilla chips
2 cups shredded Cheddar cheese
½ (15 ounce) can kidney beans, drained
½ cup ranch-style salad dressing
1 chopped tomato
1 cup chopped lettuce
¼ cup chopped green onion

Steps:

  • Place ground beef in a large, deep skillet. Cook over medium-high heat, stirring to crumble until well done; drain. Stir in taco seasoning mix. Set aside to cool.
  • Place chips into a large bowl, and crush into bite-size pieces. Combine with seasoned meat, cheese, beans, tomatoes, lettuce, and green onions. Pour dressing over all, and toss to coat.

1 pound ground beef
1 envelope reduced-sodium taco seasoning
3/4 cup water
1 medium head iceberg lettuce, torn (about 8 cups)
2 cups shredded cheddar cheese
2 cups broken nacho-flavored tortilla chips
1/4 cup Catalina salad dressing

Steps:

  • In a large skillet, cook beef over medium heat 6-8 minutes or until no longer pink, breaking into crumbles; drain. Stir in taco seasoning and water; bring to a boil. Reduce heat; simmer, uncovered, 4-6 minutes or until thickened, stirring occasionally. Cool slightly., In a large bowl, toss lettuce with cheese. Top with beef mixture and chips; drizzle with dressing and toss to combine. Serve immediately.

Boy do I remember this salad. It's not anything fancy, but it had a lot of flavor. Mom made this any time that we had company come over. She took it to pot luck at worship services or anytime there was a crowd. A real crowd pleaser.

1 - head shredded lettuce
2 medium tomatoes chopped
1 medium onion chopped fine
1 can(s) black olives drained
1 can(s) kidney beans drained
1 pound(s) cheddar cheese shredded
1 pound(s) bag of freto corn chips
1 (16 oz.) jar(s) catalina salad dressing
2 - chicken breast cooked

Steps:

  • Cook chicken breasts on grill until done ,but not over done. Set aside to cool.
  • Prepare your lettuce, tomatoes, onion,olives, beans, and cheese.
  • Toss together the first six ingredients.
  • Last toss in the shredded chicken, corn chips and salad dressing last of all.
  • Toss all together and serve immediately.
