GRANDPA'S PASTA SALAD

My grandfather created this recipe for my family on thanksgiving. When I tried it I had to make all the time.I'ts great!

Number Of Ingredients 11

1 lb small no yolk noodles
1 peeled and diced cucumber
2 roma tomatoes, diced
1/2 cup finely diced onion
1/4 cup chopped black olives
1 cup fat-free mayonnaise or 1 cup regular mayonnaise
2 tablespoons extra virgin olive oil
2 tablespoons balsamic vinegar
1/2 teaspoon salt, to taste
1/2 teaspoon pepper, to taste
1 teaspoon sugar

Steps:

  • Cook pasta according to package directions.
  • In a large mixing bowl, combine pasta, cucumber, tomatoes, onion, and olives.
  • In a small bowl combine mayonnaise, olive oil, vinegar, salt and pepper,and sugar stir till not lumpy; add to mixture and stir.
  • Chill and serve.

This recipe comes from my husband's grandfather who come from Italy. My hubby only remembers what was in it so I took what he said and after a few trys I got it right. You can adjust amounts for your taste and size of servings. This recipe is easy and can be made meatless. Hope you enjoy!!

2 c pasta, uncooked
3 strips bacon, drippngs saved
1/4-1/2 onion, diced
1/4-1/2 green pepper, diced
1 roma tomato, diced (i use san marzano)
1 clove garlic, chopped
1/2 tsp oregano, dried or fresh

Steps:

  • 1. Cook pasta el dente, I use shells but any type is fine. Drain and set aside
  • 2. Cook bacon in large enough pan to add all ingredients including pasta. (I didn't make it clear and one of my nieces used 4 pans)Remove Bacon nd set aside to chop later. Use olive oil if you want to omit bacon
  • 3. Add green pepper & onions to pan, saute until onions are clear but not browned. Add garlic toss and then add pasta. Toss to warm pasta and then add oregano and tomatoes making sure tomatoes don't get mushy.
  • 4. Plate and top with chopped bacon. I also sprinkle with parma cheese, but my husband doesn't.
