This version of the iconic cracker is just a little more robust, richer, and butterier than the grocery store option.

5 ounces (1 cup) all-purpose flour
1 teaspoon kosher salt
1 teaspoon sugar
1 teaspoon baking powder
2 tablespoons cold unsalted butter, cut into 1/4-inch cubes
1/3 cup cold water, plus additional as needed

Steps:

  • Adjust oven rack to middle position and preheat oven to 375°F (190°C). Combine flour, salt, sugar, and baking powder into a medium bowl and whisk to combine. Add butter and using a pastry cutter or fingertips, work into flour until it resembles coarse meal. Add water and lightly knead dough until it comes together into a ball.
  • Set dough on a lightly floured surface and cover with an overturned mixing bowl. Allow to rest for 15 minutes.
  • Roll dough out on a well floured surface to a thickness of 1/8 inch. Cut dough into 1/2-inch squares, rectangles, or diamonds. Transfer to a parchment-lined baking sheet and space the shapes out as much as possible.
  • Bake until crackers are showing color around the bottom edges, about 15 minutes. Turn oven off and crack the door open about 8 inches. Leave crackers inside to cool and continue to crisp, about 30 minutes. Remove from oven, season with salt, and allow to cool completely. Crackers can be stored in a sealed container for up to a week.

¾ cup canola oil
1 (1 ounce) package ranch dressing mix
½ teaspoon dried dill weed
1 teaspoon lemon pepper
1 teaspoon granulated garlic
1 teaspoon onion powder
½ teaspoon seasoned salt
¼ teaspoon ground white pepper
2 (16 ounce) packages oyster crackers

Steps:

  • Preheat oven to 275 degrees F (135 degrees C).
  • In a large bowl, mix the canola oil, ranch dressing mix, dill, lemon pepper, granulated garlic, onion powder, seasoned salt, and white pepper until thoroughly combined. Gently mix the crackers with the seasonings, tossing to coat the crackers with the seasoned oil. Spread the crackers out onto a jelly roll pan in a single layer.
  • Bake in the preheated oven until the crackers are very lightly browned at the edges, 15 to 20 minutes, stirring to bake other sides halfway through cooking. Allow to cool completely before storing in airtight canister or resealable plastic bag.

1 (1 ounce) package Ranch-style dressing mix
½ teaspoon dried dill weed
¼ cup vegetable oil
¼ teaspoon lemon pepper
¼ teaspoon garlic powder
5 cups oyster crackers

Steps:

  • Preheat oven to 250 degrees F (120 degrees C).
  • In a large bowl, combine the dressing mix, dill weed, vegetable oil, lemon pepper, and garlic powder. Add oyster crackers, and toss to coat. Spread evenly on a baking sheet.
  • Bake for 15 to 20 minutes in the preheated oven, stirring gently after 10 minutes. Remove from oven, and allow to cool before serving.

2 tablespoons butter
1 clove garlic, crushed
2 shallots, minced
½ cup dry sherry or dry white wine
24 freshly shucked oysters, oyster liquor reserved
1 ½ cups whole milk
1 ½ cups heavy cream
2 tablespoons chopped fresh flat-leaf parsley
sea salt to taste
1 pinch sweet paprika
1 cup oyster crackers

Steps:

  • Stir butter and garlic in stockpot over medium heat until butter begins to brown. Remove garlic and discard.
  • Stir shallots into browned butter. Cook and stir until translucent, 5 to 7 minutes.
  • Pour sherry over shallots in the stockpot and bring to a boil while scraping any browned bits off of the bottom of the pot. Simmer until liquid is reduced by half, 3 to 5 minutes.
  • Pour reserved oyster liquor, milk, and cream into the stockpot; bring mixture to a simmer. Reduce heat to medium-low and stir in oysters; cook until oyster edges begin to ruffle, about 3 minutes. Remove from heat.
  • Stir in parsley; season with sea salt to taste. Ladle into bowls and garnish with sweet paprika and oyster crackers.

This is similar to the other recipes posted here, but with a couple changes. I went ahead and posted it, as my Grandma made these every year at Christmastime and they are extremely addictive!!! I guessed on the servings...if you're like me, you make a pig of yourself and don't share, so it's a 1 serving recipe!!! ;) **Note, due to a few reviewers saying these were too oily, I changed the oil amount!**

OYSTER AND CRACKER DRESSING

2 sleeves saltine crackers (about 66)
1 1/2 sticks unsalted butter, melted
2 pints shucked fresh oysters in their liquor, drained and 1/4 cup liquor reserved
1/3 cup heavy cream
2 teaspoons fresh thyme leaves
2 tablespoons finely chopped flat-leaf parsley leaves
Lemon wedges, for serving

Steps:

  • Preheat oven to 400 degrees with rack in top third. Pulse saltines in a food processor until coarsely ground. Add butter and pulse just to combine. Spread a thin layer of crumbs in a 9-by-13-inch baking dish. Top with half the oysters.
  • Stir together reserved oyster liquor and cream. Drizzle half the cream mixture over oysters. Sprinkle with half the remaining crumbs and all the thyme. Repeat layering with remaining oysters and cream mixture.
  • Stir parsley into remaining crumbs and sprinkle evenly over top. Bake dressing until bubbling and top is golden brown, about 45 minutes. Serve hot, with lemon wedges for squeezing.
