My beloved and very much missed Grandmother was always asked to bring these to family gatherings.. The woman knew how to cook, raising 8 kids, 6 of them being girls, I think it's fair to say- she had a PHD.. ;).. I only wish I had more of her recipes to share..

2 slices bacon (cooked and crumbled)
1/2 cup yellow onion (chopped)
4 (14 1/2 ounce) cans green beans (any brand)
1/2 chicken bouillon cube
1/2 cup water

Steps:

  • Fry bacon til' it's crisp, on the stovetop. Add onion, cook until tender.
  • Drain "all" liquid off of canned green beans.
  • Add beans to bacon and onion mixture.
  • Add bullion cube and water.
  • Cook very slowly until beans "shrivel".
  • Sometimes, ok well maybe always I have this compulsive need to add things to whatever I am cooking, and 98% of the time you can beat it's gonna be GARLIC or SPICES. Soo- there ya' go. Add in some garlic if you dare, or maybe some seasoning salt? :) But whatever you do- ENJOY!

¼ pound peppered bacon, chopped
1 medium onion, sliced
4 cups fresh green beans, trimmed
1 teaspoon white sugar
1 teaspoon salt
½ teaspoon seasoned salt
water as needed

Steps:

  • Place bacon in a large pot and cook over medium heat, stirring occasionally, for 5 minutes. Add onion; cook until bacon just starts to brown a bit, 4 to 5 minutes. Add green beans and stir until coated in bacon grease. Add sugar, salt, seasoned salt, and just enough water to cover. Bring to a boil.
  • Reduce heat, cover, and simmer until beans are soft, about 45 minutes.

This recipe is much better than the standard mushroom soup and French fried onion version.

2 tablespoons butter
2 tablespoons all-purpose flour
1 teaspoon salt
1 teaspoon white sugar
¼ cup onion, diced
1 cup sour cream
3 (14.5 ounce) cans French style green beans, drained
2 cups shredded Cheddar cheese
½ cup crumbled buttery round crackers
1 tablespoon butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt 2 tablespoons butter in a large skillet over medium heat. Stir in flour until smooth, and cook for one minute. Stir in the salt, sugar, onion, and sour cream. Add green beans, and stir to coat.
  • Transfer the mixture to a 2 1/2 quart casserole dish. Spread shredded cheese over the top. In a small bowl, toss together cracker crumbs and remaining butter, and sprinkle over the cheese.
  • Bake for 30 minutes in the preheated oven, or until the top is golden and cheese is bubbly.

My late paternal grandmother's recipe for green beans au gratin is a family favorite. Recipe may be halved and baked in slightly less time in an 8 x 8 baking dish (remember to use exactly half of all listed ingredients!).

1 tablespoon olive oil
3 slices bacon, chopped
1 Spanish onion, chopped
8 ounces fresh mushrooms, chopped
2 tablespoons flat leaf parsley, minced
2 fresh garlic cloves, minced
2 lbs fresh cut green beans
2 teaspoons celery salt
1/4 teaspoon fresh ground white pepper
1/2 cup salted butter
1/2 cup all-purpose flour
2 cups half-and-half cream
1/2 cup dry white wine
1 teaspoon mustard powder
1 teaspoon granulated sugar
1/2 teaspoon kosher salt
1 dash cayenne pepper
1 (5 ounce) jar sharp cheese spread (KRAFT Old English)
2 cups freshly shredded sharp cheddar cheese
1 cup freshly shredded sharp cheddar cheese
2 tablespoons grated parmesan cheese
1 (2 7/8 ounce) can French's French fried onions

Steps:

  • WASH and de-string green beans; BLOT dry; SLICE off bean ends; CUT green beans to 2 1/2 inches in length; PREHEAT oven to 350°F; LIGHTLY butter a 2.5 quart dish or 9x13 baking dish; PLACE oven rack in center position; PREP the remaining saute ingredients (snip the bacon using kitchen shears, into small pieces); SHRED 12 ounces (3 cups) sharp cheddar cheese and set aside.
  • INTO a 3 quart heavy-bottomed pot over medium-low heat, add 1 tablespoon olive oil; ADD the chopped bacon, onion, mushrooms, minced parsley, minced garlic, SAUTE until onions have softened and mushrooms deepen in color.
  • ADD green beens; STIR in celery salt and fresh ground pepper; COVER and cook over medium-low heat, stirring occasionally, until green beans are crisp-tender and slightly lighter in color.
  • MELT 1/2 cup butter in a 2-3 quart saucepan over medium heat; STIR in 1/2 cup flour and cook slowly until bubbly but not browned.
  • COMBINE the half and half with the wine, then add the seasonings and whisk (mustard powder, sugar, salt and cayenne pepper); POUR mixture into roux while whisking constantly; COOK until fully thickened.
  • REMOVE from heat; STIR in the contents of one jar Kraft Old English sharp cheese spread, and 2 cups of the grated cheese until cheeses are melted and sauce is creamy.
  • FOLD the green bean saute mixture into cheese sauce until blended, without over-mixing (mixture will be thick); SPREAD mixture into prepared baking dish.
  • PLACE casserole into preheated 350°F oven; BAKE for 25 minutes.
  • SPREAD the 1 cup remaining shredded cheddar cheese over top of casserole; TOP casserole evenly with parmesan cheese, then one 2.8 ounce can French's French Fried Onions; BAKE casserole for 2-3 additional minutes just until cheese is melted and onion topping is golden browned (be careful not to burn onion topping!); LET set slightly before serving.

Ridiculously good beans that make a great side dish to just about anything. One of those recipes that grandma made for years that we could never get enough of. Garnish with sliced or slivered almonds.

4 slices bacon
2 pounds fresh green beans, trimmed
½ cup finely chopped onion
½ cup brown sugar
¼ cup white vinegar
½ teaspoon salt
½ teaspoon dry mustard
ground black pepper to taste

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until crisp, about 10 minutes.
  • Meanwhile, place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add green beans, cover, and steam until tender-crisp, 3 to 5 minutes. Drain.
  • Drain bacon slices on paper towels, reserving grease in the skillet. Saute onion in the bacon grease until softened, about 5 minutes. Stir in brown sugar, vinegar, salt, mustard, and pepper. Stir well, scraping up any onion bits off the bottom of the skillet. Cook until bubbling, 3 to 5 minutes.
  • Add green beans to the skillet with the sauce; toss to coat well. Chop cooked bacon and stir into the beans. Serve hot.

1 Tbsp all purpose flour
salt and pepper to taste
1 c milk
3 c green beans, fresh, frozen, or drained canned beans

Steps:

  • 1. NOTE: If using fresh green beans cook in a small amount of boiling water long enough to bring them to the tender-crisp stage. Drain and use as other beans in the following recipe.
  • 2. RECIPE: In a saucepan over medium heat combine butter, flour, and salt and pepper. Whisk in milk and cook, stirring constantly until thickened. This makes a white sauce. Place beans in a casserole dish. Pour white sauce over beans. Bake for 20-25 minutes. Serve hot.

3 tablespoons bacon grease
1 medium onion, sliced thin
salt and pepper

Steps:

  • Put Green beans in a large pot.
  • Cover with water.
  • Put Bacon Grease in the pot.
  • Separate the Onion slices stir into GreenBeans.
  • Bring to a ROLLING boil.
