GRANDMA'S CRANBERRY SALAD

This is a favorite recipe that my Grandma makes for us. She freezes it, but my family prefers it just chilled in the refrigerator.

1 (12 ounce) package frozen cranberries
1 (8 ounce) can crushed pineapple, drained
1 cup chopped pecans
1 (10 ounce) package miniature marshmallows
1 cup sugar
1 pint heavy whipping cream

Steps:

  • Put cranberries in a food processor and blend until well chopped. Transfer cranberries to a large bowl, and mix in pineapple, pecans, marshmallows and sugar.
  • In a medium bowl, beat cream with an electric mixer until stiff peaks form. Fold whipped cream into cranberry mixture. Chill until ready to serve. (Or, freeze for 2 hours before serving.)

This wonderful and simple cranberry sauce is my grandmother's recipe. We had it every year at Thanksgiving and Christmas, and I predict you will have people begging for more.

1 (12 ounce) bag cranberries
2 navel oranges - washed thoroughly, unpeeled, cut into quarters
3 apples - peeled, cored and halved
1 cup pecans
1 cup white sugar, or to taste

Steps:

  • Place the cranberries, oranges, apples, pecans, and sugar in the bowl of a food processor. Process until all ingredients are evenly ground, 2-3 minutes. Pour mixture into a bowl, cover, and refrigerate at least 2 days before serving.

This is the only cranberry sauce that I have found that I like. It is my grandmother's recipe. This is the original recipe. I am going to modify this year to do whole berries and just pare the apples ahead of time.

3 medium apples (I use granny smith)
1 lb cranberries, washed and picked over
1 1/2 cups water
3 cups sugar (my grandma's original recipe but I have cut mine down to 2 cups)

Steps:

  • Cut up 3 medium apples with peeling. Put in kettle with cranberries and water.
  • Boil until skins pop.
  • Push cranberries through fine sieve into bowl to capture the skins of cranberries and apples.
  • Add sugar to bowl and then put back to boil. Cook for 5 minutes. Pour into bowl.
  • Let Cool before putting saran wrap on and putting in fridge.
