GRANDMA'S CHOCOLATE CAKE
My grandma made this delicious cake for me throughout the years on my birthday. It's wonderful for chocolate lovers!-Dorothy Eagen, Allentown, Pennsylvania

Steps:
- In a large bowl, cream shortening and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Combine the flour, cocoa, baking soda, baking powder and salt; gradually add to creamed mixture alternately with buttermilk and hot water, beating well after each addition. , Pour into a greased 13x9-in. baking pan. Bake at 350° for 40-45 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack., For frosting, melt chocolate and butter in a saucepan. Add the sugar, water and cream of tartar. Bring to a boil, stirring constantly. Cook and stir until a candy thermometer reads 240° (soft-ball stage). Remove from the heat. Cool completely, without stirring, about 1 hour. Add vanilla; beat until thickened. Add cream; beat until smooth. Frost cake.

CHOCOLATE PUDDING POKE CAKE
Steps:
- Prepare your cake as per the instructions on the cake box in a 9x13 cake pan.
- After taking it out of the oven, poke holes in the cake with the end of a wooden spoon or a straw.
- Mix 2 cups of the milk with the smaller box of instant pudding. Quickly pour over your cake trying to fill in the holes.
- Remove the lid from the jar of hot fudge and microwave until easily spreadable. I put mine in for about 15-20 seconds but your microwave temp may vary.
- Spread the hot fudge on top of your cake and let cool.
- When the cake is completely cooled, mix the last 1 cup of milk with the larger box of instant chocolate pudding then quickly and carefully fold in the Cool Whip.
- Spread on top of the hot fudge layer.
- Finally, layer the entire bag of mini chocolate chips over the whipped cream layer.
- Cover and refrigerate for at least 4 hours before serving.
GRANDMA HAGERSON'S CHOCOLATE PUDDING CAKE
Grandma Hagerson's recipe for chocolate pudding cake. The water poured over the top at the end blends in with the other ingredients and settles on the bottom while cooking, creating a delightful pudding underneath the cake when it is finished!

- Preheat the oven to 350 degrees F (175 degrees C).
- Sift flour, 3/4 cup white sugar, baking powder, and salt together in a bowl. Mix in milk, butter, vanilla extract, and chocolate. Pour mixture into an ungreased 8x8-inch baking pan.
- Mix brown sugar, cocoa, and remaining white sugar together in another bowl. Spread over the top of the batter in the pan. Pour in water.
- Bake in the preheated oven until a toothpick inserted into the center comes out mostly clean, about 30 minutes. Allow to cool in the pan for 15 to 30 minutes. Serve warm.

Steps:
- Preheat oven to 350 degrees F ( 175 degrees C).
- In ungreased 9 inch square pan, stir together flour, white sugar, cocoa, the baking powder, and salt. Mix in milk, oil, and vanilla with a fork until smooth.
- Spread batter evenly in pan (batter will be thick). Sprinkle with brown sugar and 1/4 cup cocoa. Pour boiling water over batter.
- Bake at 350 degrees F (175 degrees C) for 40 minutes. Let stand 15 minutes, then spoon into dessert dishes or cut into squares. Invert each square onto dessert plate and spoon sauce over each serving. Top with ice cream or whipped topping, if desired.

- Preheat oven to 375°F.
- Combine first 5 ingredients, 1-1/2 Tbs.
- cocoa powder and 3/4 cup sugar in a bowl.
- Pour into an 8 or 9 inch baking dish.
- Combine 2 Tbs.
- cocoa powder, 1 cup sugar and hot water in a separate bowl.
- Pour over cake batter and bake about 40 minutes.
- Combine remaining ingredients in a chilled bowl.
- Using chilled beaters, whip cream mixture until stiff.
- Serve cake upside down with whipped cream.

- Preheat the oven to 350 degrees F.
- For the cake: In a large bowl, combine the cake mix, pudding mix, buttermilk, oil, eggs, lemon zest and lemon and lime juices. Whisk well, or beat with a hand mixer, until the batter is combined and smooth.
- Pour the batter into a 9-by-13-inch nonstick baking pan, or use a regular pan coated with cooking spray. Bake until the cake is baked through, 25 to 30 minutes. Remove the cake from the oven.
- For the glaze: Combine the powdered sugar, butter, buttermilk, lemon and lime zests and lemon juice in a saucepan and whisk well to combine. Bring the mixture to a simmer over low heat. Remove from the heat.
