GRANDMA FLORENCE'S APPLESAUCE CAKE
This was made by my grandmother every Holiday. She would make three or four of these at Thanksgiving and Christmas. Her mom, Grandma Florence, made these for her when she was growing up. It has been passed down now to me, the fourth generation. Enjoy.

- Mix or sift dry ingredients together.

- Cream butter or margarine with sugar. Add applesauce; beat well. Stir in flour, soda, and spices. Add nuts and raisins.

- Preheat oven to 300 degrees F (150 degrees C). Grease and flour a tube pan.
- Whisk together flour, salt, cinnamon, cloves, and soda. Set aside.
- Cream together 1/2 cup butter and 2 cups brown sugar, beating until light and fluffy. Mix in eggs. Add flour mixture into creamed mixture alternately with applesauce, beginning and ending with flour mixture. Stir in the raisins, dates, and walnuts. Pour batter into prepared pan.
- Bake in preheated oven until a tester inserted in the center of the cake comes out clean, about 1 1/2 hours. Cool on wire rack.
- To make icing, melt 1/2 cup butter or margarine in a small saucepan over low heat; stir in 1 cup brown sugar. Boil for 2 minutes. Stir in milk, and continue to stir until the mixture returns to a boil. Remove from heat, and cool for 5 minutes. Beat in vanilla and confectioners' sugar. Frost cooled cake.

- Preheat oven to 350°. Coat a 13x9-in. baking pan with cooking spray., In a large bowl, beat sugar, eggs, applesauce, oil and vanilla until well blended. I needed to use up some applesauce so I tried this recipe from Christmas with Paula Deen. I did sift my ingredients, but I didn't grate my own fresh nutmeg (there's a kitchen gadget to put on my list). I used real butter instead of shortening. The house smells delicious, and this is great with vanilla ice cream!

- Preheat oven to 350.
- Grease a 13x9x2" baking pan.
- Cream together the granulated sugar and shortening until fluffy using an electric mixer.
- Add the eggs one at a time, beating well.
