GRANDMA'S APPLESAUCE CAKE

- Place raisins and hot water in a small bowl; set aside. , In a large bowl, cream shortening and sugar until light and fluffy. Beat in egg. Combine the flour, baking soda, salt and spices; add to creamed mixture alternately with applesauce and water. Drain raisins; fold into batter with the walnuts. , Transfer to a greased 13x9-in. baking pan. Bake at 300° for 40 minutes or until a toothpick inserted in the center comes out clean. Place pan on a wire rack. Dust with confectioners' sugar if desired. Serve warm or cold.

This cake is moist and delicious. I am from Washington state and this is my Mother's recipe. Great topped with caramel frosting!

Steps:
- Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 9x13 inch pan. Mix together the flour, baking soda, cinnamon, cloves and nutmeg. Set aside.
- In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time. Beat in the flour mixture alternately with the applesauce. Fold in the walnuts and raisins. Pour batter into prepared pan.
- Bake in the preheated oven for 40 to 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

MY GRANDMA'S APPLESAUCE SPICE CAKE
I am posting this recipe for safe keeping. My grandma just passed away and this is my favorite recipe of hers. She always made it at Christmas time. I think it is better if it sits for a day or so to let the flavors blend.

Steps:
- Preheat oven to 325 degrees.
- Prepare a tube pan.
- Put raisins in a 1 quart pan and cover with water.
- Cook until almost dry.
- Meanwhile, combine dry ingredients.
- When raisins are done mix into dry ingredients with applesauce and melted butter.
- Bake in prepared tube pan for 1 1/2 hours.

GRANDMA'S ONE BOWL MOLASSES APPLESAUCE CAKE
My Mom has been making this for 20 years. This is a very dense, moist cake, maybe closer to a pound cake, but that's what I like about it. We added the raisins to the recipe, so you could omit them. I also like to add Walnuts, some day I may also add some coconut. This is great warm or cold.

- Sift dry ingredients, cut in butter. Stir in molasses, egg, applesauce, raisins.
- Pour into greased and floured 8" square pan. Bake 350 for 40-45 minute.
- Drizzle with glaze when cool.
