1 1/4 c chopped maraschino cherries (save juice)
1 small can pineapple chopped ( save juice )
8 0z fl beat heavy cream, whipped till it peaks with mixer
1 small bag(s) marshmallows, mini

Steps:

  • 1. put marshmallos, mini in a large bowl,add chopped cherries & chopped pineapple pour 1/8 cup cherry juice over marshmallows & 1/8 cup pineapple juice and toss. put in refrigerator & chill just before serving whip heavy whipping cream till it peaks !! mix in with marshmallo's ,cherry & pinapple mixture and serve ( be sure you drain fruit and save juice ) keep in refrigerator Enjoy !!! Yummy

AUNT LEE'S OLD FASHIONED (BAKED) RICE PUDDING



Aunt Lee's Old Fashioned (Baked) Rice Pudding image

One of my favorite comfort foods when I was growing up, was my Aunt's baked rice pudding! Here is her recipe. Cook time does not include the 30 minutes for cooking the rice, or the standing time.

Number Of Ingredients 9

4 eggs, separated
3/4-1 cup granulated sugar
4 cups whole milk (or 2 cups whole milk and 2 cups evaporated milk)
2 cups cooked and drained white rice
2 tablespoons butter, melted
1 cup raisins
1/4 teaspoon ground nutmeg
1/2-1 teaspoon ground cinnamon
3 -4 tablespoons confectioners' sugar (10x powdered sugar)

Steps:

  • In a small bowl, combine sugar, nutmeg and cinnamon, mix until well blended, and set aside.
  • In a large (2 quart) bowl, beat egg yolks until light colored.
  • Add sugar and spice mixture and beat well.
  • Add milk and beat well.
  • Add cooked rice and mix well.
  • Stir in melted butter and raisins.
  • Pour mixture in to a buttered 3-quart ovenproof casserole dish or baking pan.
  • In a small bowl, beat egg whites until rounded peaks form.
  • Beat Confectioner's sugar into egg whites until whites are glossy and stiff.
  • Fold beaten egg whites in to rice mixture.
  • Bake at 325°F for 50-60 minutes.
  • Remove from oven and let stand until warm (20-45 minutes).
  • Stir pudding until smooth and well mixed.
  • Chill (or serve warm).

THIS WAS ONE OF MY GRNDMTHRS RECIPES. SHE GAVE IT TO MY MTHR & SO ON DOWN THE LINE. I DON'T REMEMBER GRNDMA MAKING THIS, BUT I'M SURE IT WAS REALLY GOOD. MY GRNDMTHR & MTHR WERE EXCELLENT COOKS.

1 pkg lemon jello (sm)
1 c boiling water
1 c boiling pineapple juice
1 1/2 doz. reg. size marshmallows
1 jar(s) lg. jar marashino cherries (1 1/2 doz)
12 graham crackers (crushed)
4 slice canned pineapple
1 c whipping cream--whipped

Steps:

  • 1. DISSOLVE JELLO IN BOILING LIQUIDS, ALLOW MIXTURE TO BECOME COOL. TAKE MIXER OR BEATER & WHIP UNTIL FROTHY.
  • 2. FOLD IN MARSHMALLOWS, CHERRIES, PINEAPPLE, CRUSHED GRAHAM CRACKERS & WHIPPED CREAM POUR INTO A MOLD OR A GLASS BOWL & ALLOW TO THICKEN
  • 3. POUR INTO SHERBET GLASSES IF DESIRED & GARNISH WITH WHIPPED CREAM OR COOL WHIP & A CHERRY

My grandma used to make this for my mom, and she made it for me. It's just like hot rice pudding and so yummy served with cinnamon!

1 ½ cups water
½ cup long grain rice
1 cup 2% milk
½ (12 fluid ounce) can evaporated milk
½ cup white sugar
1 tablespoon butter
1 pinch ground cinnamon

Steps:

  • Bring water and rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and water has been absorbed, about 20. Add 2% milk, evaporated milk, sugar, and butter; stir well and cook until creamy, about 20 minutes longer. Serve sprinkled with cinnamon.

I found this recipe in my grandmothers little notebook. she passed away in 1960's and the recipes are dated in the 1940, so its an old one for sure, I had no Idea what it would turn out like but thought I would give it a try. 25 graham crackers (save out five )
1/2 lb marshmallows, cut up
1 1/2 c chopped dates
1 c chopped nutmeats (i used walnuts)
1 c evaprated milk, sweetened to taste

Steps:

  • 1. Roll 5 graham crackers and set aside to roll the pudding in.
  • 2. Roll 20 graham crackers fine
  • 3. add dates. marshmallow, and nut meats stir in the evaporated milk
  • 4. Put the powdered 5 graham crackers on a board and lay the mixture on it-form a loaf
  • 5. put wax paper in a loaf pan and place pudding in, patting all the crumbs in well. set away to let harden for best results make a day before
  • 6. To serve lift from pan and cut into desired slices serve with whipped cream
  • 7. I used mini marshmallows, and to sweeten the evaporated milk I used about 3T of sugar and a tsp of vanilla, I also ran a little short on graham crackers to roll the pudding in so crushed a few vanilla wafers, I am not sure where I was suppose to set it aside to harden, so I stuck mine in the refrigerator.
