This easy crazy cake recipe is made without eggs, milk, or butter. The result is a rich, fudgy, and moist chocolate cake.

Number Of Ingredients 9

1 ½ cups flour
1 cup sugar
3 tablespoons unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
5 tablespoons vegetable oil
1 tablespoon white vinegar
1 teaspoon vanilla extract
1 cup cold water

Steps:

  • Preheat oven to 350 F.
  • Add dry ingredients to an ungreased 8-inch round or square baking pan. Whisk to combine.
  • Make 3 wells in the mixture. One larger hole and 2 smaller (see image). Pour oil, vinegar, and vanilla into the wells.
  • Pour water over all of the ingredients. Mix well with a fork, making sure to get all the dry mix that gets stuck in the corners.
  • Before baking, give the pan a couple of taps on the counter to help release any bubbles. Bake for 25-30 minutes, or until a toothpick inserted in center comes out mostly clean.
  • Serve plain, topped with powdered sugar, or frosted. If frosting, allow the cake to cool to room temperate before frosting.

I regret I do not have a frosting recipe for this cake as I make without using any measurements. It is quite good with a chocolate frosting though. My grandma always put a couple tablespoons of coffee in her chocolate frosting makes it quite delicious!

3 c flour
2 c sugar
2 tsp baking soda
4 Tbsp cocoa powder
1 tsp salt
2 tsp vanilla
2 Tbsp vinegar
10 Tbsp cooking oil
2 c cold water

Steps:

  • 1. Combine all dry ingredients (my grandmother always sifted them together)and blend together in a baking dish
  • 2. make 3 holes in the dry mixture
  • 3. In the first hole put vanilla, in the second hole put vinegar, in the third hole put cooking oil
  • 4. Pour cold water over all and mix until smooth.
  • 5. Bake in a greased and floured pan. can be done in a 13X9 or two 9 inch rounds. Bake at 350 for 30 mins

4 large eggs, room temperature
2 cups sugar
1 cup 2% milk
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1-3/4 cups creamy peanut butter
5 milk chocolate candy bars (1.55 ounces each), chopped
2 tablespoons butter

Steps:

  • Preheat oven to 350°. In a large bowl, beat eggs and sugar until thick and lemon-colored. Beat in milk and vanilla. In another bowl, combine flour, baking powder and salt; gradually add to egg mixture and mix well., Spread into a greased 15x10x1-in. baking pan. Bake 20-25 minutes or until lightly browned. Cool 15 minutes on a wire rack. Spread peanut butter over top; cool completely., In a double boiler or metal bowl over simmering water, melt chocolate and butter; stir until smooth. Gently spread over peanut butter. Refrigerate 30 minutes or until firm.

One of my fondest memories of my Dad's Mom, Grandma Barr, was her "Wacky Cake" it was scrup-deli-ishous! i though i had lost it, but i just found it so i will get it on JP for posterity =) This is a great recipe for anyone w/dairy allergies. You can make a powdered sugar frosting w/orange juice and drizzle it over the top. i just made it for a gal's birthday at my Husband's work, who has wheat allergies.

3 cup(s) flour
2 cup(s) sugar
6 tablespoon(s) baking cocoa
2 teaspoon(s) baking soda
1 teaspoon(s) salt
3/4 cup(s) oil
2 teaspoon(s) vinegar
1 tablespoon(s) vanilla
2 cup(s) cold water

Steps:

  • Measure all the dry ingredients into mixing bowl, i omit salt or use about 1/2 the amount. Mix thoroughly w/a pastry cutter, until well combined
  • Pour in wet ingredients, stir, until ingredients are well combined, it will be a bit lumpy. Do Not Beat!
  • Pour into 9" X 12" stoneware pan that's been lined w/parchment paper and lightly sprayed w/oil [misto]. Bake at 350 for 35 min. Test to make sure it is cooked through, by inserting a toothpick. Cool 10 min. turn out of pan and cool completely.
