MY FAVORITE BANANA BREAD



My Favorite Banana Bread image

With its super-moist texture, buttery banana and brown sugar flavors, and incredibly soft crumb, this is the best ever banana bread recipe. You'll need 4 ripe bananas to begin.

2 cups (250g) all-purpose flour (spoon & leveled)
1 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 cup (1 stick or 115g) unsalted butter, softened to room temperature
3/4 cup (150g) packed light or dark brown sugar
2 large eggs, at room temperature
1/3 cup (80g) plain yogurt or sour cream, at room temperature (I use Greek yogurt)
2 cups (460g) mashed bananas (about 4 large ripe bananas)
1 teaspoon pure vanilla extract
optional: 3/4 cup (100g) chopped pecans or walnuts

Steps:

  • Adjust the oven rack to the lower third position and preheat the oven to 350°F (177°C). Grease a 9×5-inch loaf pan or coat with nonstick spray. Set aside.
  • Whisk the flour, baking soda, salt, and cinnamon together in a large bowl.
  • Using a handheld or stand mixer fitted with a paddle or whisk attachment, beat the butter and brown sugar together on high speed until smooth and creamy, about 2 minutes. On medium speed, add the eggs one at a time, beating well after each addition. Beat in the yogurt, mashed bananas, and vanilla extract on medium speed until combined. With the mixer running on low speed, slowly beat the dry ingredients into the wet ingredients until no flour pockets remain. Do not overmix. Fold in the nuts, if using.
  • Spoon the batter into the prepared baking pan and bake for 60-65 minutes. Loosely cover the bread with aluminum foil after 30 minutes to help prevent the top and sides from getting too brown. A toothpick inserted in the center of the loaf will come out clean when the bread is done. Remove from the oven and allow the bread to cool completely in the pan set on a wire rack.
  • Cover and store banana bread at room temperature for 2 days or in the refrigerator for up to 1 week. Banana bread tastes best on day 2 after the flavors have settled together. See post above for freezing instructions.

1/4 cup butter
1 cup sugar
2 eggs, room temperature (or to reduce fat/cholesterol use 1 whole egg and 2 egg whites)
1/4 cup applesauce
2 large overripe bananas, mashed
1 tablespoon lemon juice
2 cups flour
1 teaspoon baking soda
1/2 teaspoon sea salt
1/2 cup walnuts, optional

Steps:

  • Preheat oven 350 degrees.
  • Coat 9x5 loaf pan with cooking spray; set aside.
  • In standing mixer cream butter, add sugar, mix 2-3 minutes.
  • Add eggs one at a time; beating 1 minute and scrapping with each addition.
  • Add applesauce, lemon juice, and mashed bananas; mix to incorporate.
  • Combine flour, baking soda, and sea salt in bowl and whisk to combine.
  • Add all at once to wet, mix just until moistened- okay if lumpy.
  • Evenly spread into prepared pan.
  • Bake 35-40 minutes or until a toothpick inserted removes clean.
  • Remove and cool 5 minutes, turn out and complete cooling.
  • Slice and Enjoy!

1 c brown sugar, light
1/2 c butter, room temperature
3 bananas, ripen (rotten, kids call them!)
2 c all-purpose flour, sifted
1 tsp soda
1/4 c milk, sour (add 1 tsp cider vinegar)
2 eggs

Steps:

  • 1. Pre-heat oven to 350.
  • 2. Mix flour and soda in a bowl; set aside.
  • 3. Beat butter and sugar until creamy.
  • 4. Add bananas, one at a time, and beat again.
  • 5. Mix milk and vinegar in glass measuring cup.
  • 6. Add eggs and beat with a fork.
  • 7. Add to bananas; stir.
  • 8. Add flour mixture; stir.
  • 9. Grease and lightly flour large (5x9") loaf pan.
  • 10. Pour batter into pan and bake.
  • 11. Bake 1 hour.

A cross between banana bread and a drizzle cake, this easy banana loaf recipe is a quick bake that can be frozen. It's great for using up overripe bananas, too.

140g butter, softened, plus extra for the tin
140g caster sugar
2 large eggs, beaten
140g self-raising flour
1 tsp baking powder
2 very ripe bananas, mashed
50g icing sugar
handful dried banana chips, for decoration

Steps:

  • Heat oven to 180C/160C fan/gas 4.
  • Butter a 2lb loaf tin and line the base and sides with baking parchment.
  • Cream 140g softened butter and 140g caster sugar until light and fluffy, then slowly add 2 beaten large eggs with a little of the 140g flour.
  • Fold in the remaining flour, 1 tsp baking powder and 2 mashed bananas.
  • Pour the mixture into the prepared tin and bake for about 50 mins, or until cooked through. Check the loaf at 5-min intervals by testing it with a skewer (it should be able to be inserted and removed cleanly), as the time may vary depending on the shape of your loaf tin.
  • Cool in the tin for 10 mins, then remove to a wire rack.
  • Mix 50g icing sugar with 2-3 tsp water to make a runny icing.
  • Drizzle the icing across the top of the cake and decorate with a handful of banana chips.

Here is an easy way to use up the bananas on the countertop, or brown ones thrown in the back of the freezer. Don't overmix the ingredients, and make sure the bananas are very ripe.

1/4 pound cool butter (1 stick), more for greasing pan
3/4 cup dark brown sugar
2 eggs, at room temperature
2 1/3 cups very ripe bananas (about 5)
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
3 tablespoons chopped walnuts or pecans
1 tablespoon granulated or coarse sugar
1/8 teaspoon cinnamon

Steps:

  • Heat oven to 350 degrees. Lightly grease a 9-by-5-inch loaf pan. Using electric mixer, cream butter until smooth and fluffy. Add sugar and cream together 2 minutes more. One at a time, mix in eggs. Mix in bananas until only small lumps remain.
  • Stir dry ingredients together and mix into banana mixture just until combined. Pour into prepared pan. If making topping, stir ingredients together and sprinkle over batter.
  • Bake about 55 to 65 minutes, until a toothpick inserted into center comes out clean. Let cool in pan 10 minutes, then turn out onto wire rack and let cool completely before wrapping tightly for storage.

Gram's Banana Bread image

I know everyone has their own favorite way to make this! Here is my Gram's recipe. I decided to add it to Zaar since it is just a little different (no walnuts!); plus I won't loose it this way. She used butter flavored Crisco sticks for shortening. Updated 6/11 - I tried this out with whole wheat flour and it came out just as yummy as all purpose flour. Try it!

1 1/4 cups flour
1 teaspoon salt
3/4 teaspoon baking soda
1/2 cup shortening
3/4 cup mashed banana
2 eggs, beaten with a fork

Steps:

  • Cream sugar & shortening.
  • Add eggs & beat.
  • Add bananas and mix.
  • Sift dry ingredients into batter, stir in with wooden spoon.
  • Spray bottom of loaf pan with Pam, then flour it. Add batter.
  • Bake at 350 (maybe a little under) for 45 minutes (maybe a little more).
