ALMOND GRAHAM CRACKER COOKIES
Our wonderful attendance secretary brought these to school during her week to provide treats. Thank goodness we have 4 minute passing periods because it gave me just enough time to run to the faculty room and grab a few! (I have not made this yet so comments and suggestions are very much appreciated.)

Steps:
- Line a large (rimmed) cookie sheet with foil.
- Gently cut graham crackers in half. Place in a single layer on foil.
- Melt butter and sugar in a saucepan on medium-high heat. Bring to a rolling boil.
- Add almonds and boil until syrup is bubbly.
- Pour mixture over graham crackers and bake at 350 degrees for 5-7 minutes until syrup is bubbly again.
- When slightly cooled, separate with a knife.

- Line a 15x10x1-in. baking pan with heavy-duty foil. Place graham crackers in pan. In a saucepan, bring butter and brown sugar to a boil, stirring constantly. Carefully pour over graham crackers. Sprinkle with almonds. , Bake at 400° for 6-8 minutes or until bubbly. Cool in pan for 4 minutes. Cut each cracker into four sections; transfer to wire racks to cool completely.

EASY 10-MINUTE GRAHAM BRITTLE
I discovered this recipe this Christmas and have gotten rave reviews from everyone who has tried it. A whole baking sheet of this stuff seems like a lot but I guarantee you it will disappear! The brown sugar an butter combine to make an almost caramel-like taste. It's super easy and takes less than 10 minutes to make. Toppings are optional as this also tasted delicious plain. * for a lower fat version, use low-fat graham crackers and light margarine

Steps:
- First, preheat the oven to 350.
- Then place graham crackers in a single layer on the baking sheet. Line them up so that they're touching on all sides, like a grid. (Make sure the baking sheet has sides on it.).
- Bring brown sugar and butter to a boil in a saucepan.
- Pour the brown sugar and butter mixture evenly over the graham crackers, coating each one evenly.
- Put the baking sheet in the oven for 5 minutes.
- Take the baking sheet out of the oven and evenly sprinkle the milk chocolate chips on top of the graham crackers. Let them melt for 30 sec-1 minute. Then spread them around to coat the graham crackers with chocolate.
- Sprinkle on your desired topping or leave it plain! Crushed cereal not only tastes amazing but also uses up the crumbs in the bottom of the bag :).
- Chill in the refrigerator until chocolate has hardened. To save time, you can also pop it in the freezer.
- To serve, use your muscles and a metal flipper or pizza cutter to break it up into pieces.

SMOKED ALMOND BRITTLE

- Preheat the oven to 300 degrees F. Line a large-rimmed baking sheet with a nonstick silicone mat and lightly butter.
- In a heavy-bottom saucepan, combine the sugar, water, and corn syrup. Bring to a boil over medium heat; boil until it registers 230 degrees F on a candy thermometer, about 10 minutes. Transfer the almonds to the oven on another large-rimmed baking sheet until warmed through, but not toasted.
- When the syrup reaches 239 degrees F, stir the almonds into the syrup with 1 teaspoon salt. Continue cooking, stirring occasionally, until the syrup is 300 degrees F and a rich caramel color; immediately stir in the butter, vanilla, and baking soda.
- Pour the brittle mixture onto the prepared baking sheet, folding the border back towards the middle to distribute the heat evenly. Cool completely at room temperature and break into pieces.
