GORGONZOLA PEPPER & SAUSAGE PASTA

This recipe sort of came about from things I had lying around the kitchen one night. It's a staple meal we make regularly as our pasta vice. You can use hot italian sausage if you like, but I prefer the sweet for the flavor. Cook the pasta to your liking, I like mine just beyond al-dente, and my vegetables crisp, not soggy or mushy. Enjoy!

Number Of Ingredients 12

1/2 lb bow tie pasta
4 tablespoons olive oil
2 garlic cloves, minced (1 tablespoon prepared minced Garlic)
3/4 cup sun-dried tomato
1 red pepper, cubed
1 yellow pepper, cubed
1 green pepper, cubed
1 small sweet onion, cubed
1 1/2 teaspoons basil
1/2 teaspoon oregano
1/4 cup gorgonzola
3 mild Italian sausage (Johnsonville Sweet Saugage with basil is best)

Steps:

  • Cook sausage links according to packaged directions. Slice in half lengh-wise and then into 1/4" slices.
  • Bring pot of water to boil.
  • Warm oil in large saute pan at medium high heat setting.
  • Cook pasta according to directions. I prefer mine cooked to just softer than al dente.
  • I slice my onions and peppers in half through the middle, then into quartered strips.
  • Add garlic, bring to a simmer.
  • Add Sun Dried Tomatoes stirring together with garlic. Add peppers. Cook about two to three minutes tossing ocassionally.
  • Add spices, onion, and continue to cook until just tender.
  • Add sliced italian sausage and Gorgonzola Cheese, toss together letting cheese start to melt.
  • Serve immediately over pasta.

There's an amazing Italian grocery store near me, which has some amazing pasta salads. They are not cheap, but they are delicious. My favorite one is the Gorgonzola and prosciutto pasta salad. This is my clone of it and it tastes exactly like theirs when tasted side by side.

2 ounces prosciutto
1 pound frozen tortellini
½ cup extra-virgin olive oil
¼ cup white wine vinegar
2 large cloves garlic, minced
1 ½ teaspoons dried basil
1 teaspoon dried oregano
¼ teaspoon salt
¼ teaspoon ground black pepper
½ cup finely crumbled Gorgonzola cheese
¼ cup minced green bell pepper
¼ cup minced red bell pepper
¼ cup minced red onion

Steps:

  • Slice prosciutto into strips that are 1 inch long and 1/4 inch wide.
  • Fill a large pot with lightly salted water and bring to a rolling boil; stir in tortellini and return to a boil. Cook uncovered, stirring occasionally, until the tortellini float to the top and the filling is hot, about 3 minutes. Drain and cool under cold running water to stop the cooking process.
  • Mix oil, vinegar, garlic, basil, oregano, salt, and pepper together in a jar. Put the lid on the jar and shake into an emulsion.
  • Place tortellini, prosciutto, Gorgonzola cheese, bell peppers, and onion in a large bowl. Pour the vinaigrette over the top and toss lightly with 2 large spoons. Enjoy immediately or allow the flavors to meld for 3 to 4 hours in the refrigerator.

FASTA PASTA GORGONZOLA WITH SPINACH, RED PEPPERS AND PINE NUTS



Fasta Pasta Gorgonzola With Spinach, Red Peppers and Pine Nuts image

Chances are you have all of the ingredients for this pasta dish on hand, in your refrigerator and cupboard. That's how it came together in my kitchen, and what a felicitous combination of flavors it turned out to be. Plus it goes together in a half hour or less. Be sure to use a milder blue cheese so it doesn't end up overwhelming the other flavors. You could substitute broccoli for the spinach, and you could leave out the chicken for a vegetarian dish (use vegetable broth instead of chicken). This goes well with a dry white or medium-bodied red wine.

1 lb corkscrew macaroni
1 large whole boneless skinless chicken breast
2 tablespoons olive oil, divided
3 large garlic cloves, peeled and thinly sliced
1 (8 ounce) bag pre-washed Baby Spinach
1 large red bell pepper, roasted, skinned, seeded and cut into thin strips (can substitute bottled just as good)
1 1/2 cups chicken broth (preferably low-sodium)
1 bunch fresh basil, sliced into ribbons
8 ounces gorgonzola, cut into 1 cubes (or other mild, creamy blue cheese)
salt and pepper
1/3 cup pine nuts, toasted
freshly grated parmesan cheese

Steps:

  • Bring a large pot of salted water to a boil. Cook pasta 10 minutes or until al dente; drain.
  • Cut chicken into ½--inch pieces and sprinkle with salt and pepper. Heat 1 tablespoons olive oil in a large sauté pan and sauté chicken pieces until just cooked through, around 5 minutes. Remove chicken and pan juices to a bowl and set aside.
  • Heat remaining 1 tablespoons olive oil in same pan and sauté garlic until translucent. Do not allow it to brown.
  • Add the washed spinach and sauté until wilted. Add chicken broth and red peppers and bring to a boil. Add basil and gorgonzola and stir over medium-high heat until cheese melts completely.
  • Add drained pasta, chicken and juices to sauté pan and heat for 1 minute, mixing thoroughly with vegetable-cheese mixture. Season to taste with salt and pepper.
  • Divide among serving plates and sprinkle with Parmesan cheese and toasted pine nuts. Serve immediately.

1 (16 ounce) package tri-color pasta
⅔ cup olive oil
3 tablespoons white wine vinegar
¼ cup fresh basil leaves
2 tablespoons grated Parmesan cheese

1 red bell pepper, julienned
1 yellow bell pepper, julienned
1 orange bell pepper, julienned
1 medium fresh tomato, chopped
1 (2.25 ounce) can black olives, drained
8 ounces mozzarella cheese, cubed

Steps:

  • Bring a large pot of lightly salted water to a boil. Place pasta in the pot, cook for 8 to 10 minutes, until al dente, and drain.
  • In a blender or food processor, blend the olive oil, white wine vinegar, basil, Parmesan cheese, salt, and pepper until smooth.
  • In a large bowl, toss together the cooked pasta, dressing mixture, red bell pepper, yellow bell pepper, orange bell pepper, tomato, and olives. Top with mozzarella cheese to serve.

7 cups uncooked radiatore (nuggets) pasta (about 19 oz)
4 1/2 cups cubed cooked chicken breast (about 20 oz)
1 package (2.1 oz) refrigerated precooked bacon (about 15 slices), cut into small pieces
1 can (14.5 oz) Muir Glen™ organic fire roasted diced tomatoes, drained
2 cups lightly packed fresh baby spinach leaves
1 jar (16 oz) refrigerated ranch dressing
1 cup crumbled Gorgonzola cheese (4 oz)
Bibb lettuce, if desired

Steps:

  • Cook and drain pasta as directed on package.
  • In large bowl, mix cooked pasta, chicken, bacon, tomatoes and spinach. Pour dressing over pasta mixture; toss until coated. Fold in cheese. Cover and refrigerate until serving. To serve, line bowl with lettuce and spoon in salad.
