1/4 cup all-purpose flour
3 tablespoons sugar
2 tablespoons unsweetened cocoa powder
1/4 teaspoon baking powder
1/8 teaspoon kosher salt
2 tablespoons heavy cream
2 tablespoons vegetable oil
2 (heaping) tablespoons 3-Ingredient Microwave Caramel Sauce or storebought caramel sauce, divided
Vanilla ice cream (optional; for serving)
1 teaspoon coarsely chopped roasted, salted peanuts
Special Equipment
A 12-ounce microwave-safe mug (preferably thin-walled) or deep bowl

Steps:

  • Mix flour, sugar, cocoa powder, baking powder, and salt in mug. Add cream, oil, and 3 Tbsp. water and mix until smooth. Using a spoon, make a well in the center; spoon half of the caramel sauce into well. Microwave on high 60 seconds. Carefully remove from microwave. Top with ice cream (if desired), peanuts, and remaining caramel sauce. Serve immediately.

This 7-minute gooey chocolate cake recipe is one I have known since I was a child. It is a great one to rustle up in the microwave if you are in need of a quick chocolate fix, as it comes out as a chocolate sponge cake with a delicious sauce hidden at the bottom. Great with ice cream!

4 ounces self-rising flour
4 ounces white sugar
1 ounce unsweetened cocoa powder
1 pinch salt
1 egg
¼ cup milk
2 ounces margarine, melted
1 tablespoon vanilla extract
4 ounces brown sugar
1 ounce unsweetened cocoa powder
¼ pint warm water

Steps:

  • Mix flour, sugar, 1 ounce cup cocoa powder, and salt together in a bowl. Add egg, milk, melted margarine, and vanilla extract. Stir well to combine and transfer to a large microwave-safe bowl with sides at least 2 inches high.
  • Combine brown sugar and 1 ounce cocoa powder in a bowl. Sprinkle on top of the batter in the microwave-safe bowl. Pour warm water gently over the cake; use a fork to gently prick a few holes in the cake to allow water to seep in.
  • Cook in the microwave on high power for 5 minutes. Serve with ice cream or custard.

Lovely indulgent chocolate treat for two (or halfed for one!). This is all about taste (there's nothing fancy in the presentation) so perfect for a quick after dinner week night pudding. To pretty it up I find vanilla buttercream, or a topping of melted milk chocolate and peanut butter both work well.

Steps:

  • A wide shallow bowl works best (7 inch diameter and 2-3 inch depth works well)
  • Add all ingredients to bowl and stir until everything is combined
  • Cook in microwave for 2 minutes (the less you cook the more gooey/molten, and the longer you cook the more sponge-like the cake will be). I recommend cooking for 1.5 minutes for your first time, then judge from there for next time whether you would prefer it more gooey or more sponge-like.
  • Once removed from microwave, either eat straight from bowl or spoon out into separate bowls. The cake will crumble, so best served with Greek yogurt, ice-cream or custard.
  • To change the flavour you can add orange or peppermint essence, cinnamon, ginger, chilli or coffee
