OLD FASHIONED BOLOGNA SALAD

I remember this sandwich spread from when I was a kid. Mom and Dad would buy bulk bologna every time we traveled to Indiana to see family and this was the treat that was made from the ends of the log. Chopped olives, shredded cheese or chopped pickled banana peppers could be added for a different flavor.

1 1/2 lbs bologna, coarsely ground
4 hard-boiled eggs, finely chopped
1/2 cup sweet pickle relish
1 tablespoon prepared mustard
1 cup mayonnaise or 1 cup salad dressing
salt and pepper, to taste

Steps:

  • Combine all the ingredients together.
  • Cover and chill until ready to use.
  • Makes about 1 quart of spread.

1-1/2 pounds bologna or ham, ground
1 to 1-1/4 cups mayonnaise
3/4 cup sweet pickle relish, well drained
3 tablespoons chopped onion
1 tablespoon Worcestershire sauce
30 slices bread
15 slices process American cheese
Lettuce leaves, optional

Steps:

  • In a bowl, mix bologna, mayonnaise, relish, onion and Worcestershire sauce. Use about 1/3 cup of the salad for each sandwich, and top with a slice of cheese and lettuce if desired.

1 1/4 cups mayonnaise
3/4 cup sweet pickle relish, well drained
1/4 cup chopped onion

  • Grind bologna with a grinder or food processor.
  • Mix rest of ingredients with bologna.
  • Mix until well combined.
  • Cover and refrigerate.
  • Use about 1/3 cup of mix per sandwich.

My Favorite Bologna or Ham Salad for Sandwiches image

I grew up only knowing this by Ham Salad which is what my Mom and local Deli's up North called it. She said it was the "Poor Man's Ham Salad" which never contained any ham, just bologna, but giving it the wonderful flavor and color of what could have been ham. We loved it. I made it for my children as they grew up and it is still requested though they are adults now. I am in my 50's and still make it for myself as a snack spread or sandwich. I've seen a variation of recipes for this, tried some and still think mine is my favorite. Let me know what you think?

1 lb of your favorite bologna
0.75 (12 ounce) package sliced American cheese
1/4 cup sweet pickle relish
1/4 cup real mayonnaise (can use Miracle Whip)

Steps:

  • Do not use Velveeta for this recipe, it does not store well.
  • I suggest a food processor for this recipe unless you prefer a meat grinder. Use a large bowl with tight lid for storing.
  • Take all the bologna out of the packaging and quarter.
  • Unwrap all the cheese slices (if in wrap) and quarter as well.
  • Place half the meat and half the cheese in processor and pulse until semi-chunky. It should look spreadable. Scoop in bowl.
  • Add remaining bologna and cheese, process.
  • Place rest in large bowl and add relish, mix well.
  • Add 1/2 of the mayo, stir. You can choose the consistency if you prefer. I like it a bit more mayonnaisy. Add rest if preferred.
  • You can use either Miracle Whip or real Mayo, both are great. I like the real mayo because it works better with crackers.
  • Serve on either a hamburger bun (kid's favorite), sandwich bread, or club crackers.
  • Store remaining spread in fridge, it can last up to one week.

2 tablespoons dill pickle relish
3 tablespoons mayonnaise

Steps:

  • On a box grater or meat grinder shred the bologna.( Maybe ya meat man will grind it for ya).
  • Add your pickle relish.
  • Add your mayo.
  • Stir ingredients together.
  • Best when set over night, even better, the day after.

6 large dill pickles (i use kosher)
1/2 cup mayonnaise, to taste

Steps:

  • Place bologna and pickles in a food processor fitted with the chopping blade.
  • Process until they are finely chopped.
  • Add mayo and pulse until well incorporated into mixture.
  • Chill.
  • Serve as sandwich spread.
