Tteokguk (Good Luck Korean Rice Cake Soup) image

Korean rice cakes can be found frozen or vacuum-packed at Asian markets. They're delicious in soups (of course) but also seared or lightly grilled.

1 1/2-pound piece point- or flat-cut beef brisket or stew meat, fat trimmed
1 teaspoon toasted sesame oil
1 tablespoon plus 2 teaspoons vegetable oil
Kosher salt
4 scallions
1 (3-inch) piece ginger, peeled
4 garlic cloves, finely grated
1/3 Korean radish, peeled, quartered lengthwise, sliced crosswise 1/2" thick, or 1/2 medium daikon, halved lengthwise, sliced crosswise 1/2" thick
4 large eggs
8-10 ounces Korean rice cakes (tteok), sliced
2 teaspoons fish sauce
Freshly ground black pepper
Korean red chile threads (optional; for serving)

Steps:

  • Cut meat into 1 1/2" pieces. Heat sesame oil and 1 Tbsp. vegetable oil in a large pot over medium-high. Add meat and season with salt. Cook, turning occasionally, until browned on all sides, 8-12 minutes.
  • Meanwhile, separate scallion whites from greens and coarsely chop; set aside. Thinly slice scallion greens and set aside separately for serving.
  • Using a flat-bottomed mug or the side of a chef's knife, lightly smash ginger. Add to pot along with garlic, reserved scallion whites, and 16 cups cold water and bring to a boil. Reduce heat and simmer, skimming any foam from surface, until meat is tender, 60-75 minutes, if using stew meat, or up to 2 hours , if using brisket. Transfer meat to a plate with a slotted spoon, then scoop out ginger and scallion whites and discard.
  • Add Korean radish to pot and simmer until tender but not mushy (it should still hold its shape), 12-15 minutes.
  • Meanwhile, heat 1 tsp. vegetable oil in a medium nonstick skillet over medium. Whisk eggs in a medium bowl and season with a large pinch of salt. Pour half of eggs into the center of skillet and quickly swirl pan to distribute evenly. Cook eggs undisturbed until they are just set, about 2 minutes. Carefully loosen with a heatproof rubber spatula, flip, and cook until other side is just set, about 1 minute. Slide egg crepe onto a cutting board and fold in half; let cool. Slice into 1/4"-thick ribbons. Repeat with remaining eggs and 1 tsp. vegetable oil.
  • Slice beef as thin as you can and return to pot; add rice cakes. Cook until rice cakes are soft, about 5 minutes. Stir in fish sauce; taste and season soup with more salt and a few grinds of pepper.
  • Ladle soup into bowls and top with sliced egg, reserved scallion greens, and chile threads (if using).
  • Do Ahead
  • Soup (without garnishes) can be made 2 days ahead. Let cool; cover and chill. Reheat over medium before serving.

1 1/2 lbs ground sausage
1 large onions, chopped or 1 cup chopped onion
2 garlic cloves, minced
3 (15 ounce) cans black-eyed peas, rinsed and drained
2 -3 cups cabbage, chopped
2 cups water
2 (14 1/2 ounce) cans stewed tomatoes
1 (10 ounce) can Rotel Tomatoes
1 tablespoon beef bouillon granules
1 tablespoon molasses (you could substitute brown sugar) or 1 tablespoon honey (you could substitute brown sugar)
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon ground cumin

Steps:

  • In a large stock pot or Dutch oven, brown sausage along with onion and garlic. When the sausage browned add all of the other ingredients and mix well. Bring up to a boil. Reduce heat to simmer and cook for 45 minutes to an hour.
  • If you want to do this in your slow cooker. Brown the sausage with the onion and garlic first in a skillet. When browned place the meat with the other ingredients in a 5 - 6 quart slow cooker and cook on low 6-8 hours or on high for 3-4 hours.
  • Serve with your favorite cornbread. Letting this soup sit a day or 2 will meld the flavors even more.

Number Of Ingredients 12

bean soup mix (in the dried bean section of the grocery store)
2 pieces boneless chicken, cut into small pieces
1 lb kielbasa (sausage)
1 chicken bouillon cube
1 cup onion, chopped
2 garlic cloves, crushed
1 teaspoon chili powder
1 (16 ounce) can crushed roma tomatoes
1/2 teaspoon thyme
8 cups water
2 tablespoons olive oil
1/2 cup sherry wine (cooking is ok but real is better)

Steps:

  • Wash beans.
  • Place bouillon, chicken and beans in large pot with water.
  • Boil; reduce to slow boil for 45 minutes.
  • Sauté onion in oil and add tomatoes and thyme.
  • Mix well.
  • Pour tomatoes into bean pot.
  • Continue to cook at a low boil; add sausage and chili powder.
  • Let simmer for 1 hour and 45 minutes.
  • After that time has passed, turn stove off and stir in the sherry.
  • Let stand for 15 minutes before serving.

1 lb dried black-eyed peas (do not soak)
2 qts chicken stock
1 ham hock
1/3 lb smoked ham, in 1/2" cubes
2 medium yellow onions, chopped
1 green bell pepper, chopped (I use blacked pasilla peppers.)
1 stalk celery, chopped
2 cloves garlic, minced
3 dried chili peppers or 1/2 tsp ground red pepper
1 pkg frozen cut okra (10 oz), thawed
11/2 tsp salt

Steps:

  • In a large saucepan, combine peas, stock, ham hock, ham, onions, bell peppers, celery, garlic, and chili peppers. Cover and bring to a boil over high heat, stirring occasionally. Reduce heat to low and simmer 1 hour, stirring occasionally. Stir in okra and salt, and simmer, covered, for 30 minutes, stirring frequently to prevent scorching. Remove cover and cook, stirring, until creamy thick, 10 minutes. Remove ham hock and chili peppers. Serve hot.

Also called New Year's Day Soup. We had leftover ham; so I searched through my cookbooks and found this recipe (in Southern Living book)! I made a few changes. It is absolutely wonderful and healthy! I could eat it everyday! It you would like a vegetarian version use vegetable broth and leave out the ham.

1 c ham, cooked, diced
2 celery ribs, chopped
1 medium sweet onion, chopped
2 carrots, chopped
2 garlic cloves, minced
2 can(s) (15 oz each) black eyed peas, undrained (or 1 1/2 cups dried, cooked)
2 can(s) 14 1/2 oz each) low sodium, fat free chicken broth, or vegetable broth
1 can(s) (28 oz) diced tomatoes, undrained
1 can(s) (8 oz) tomato sauce
1 box frozen spinach, (or 1 1/2 cups chopped fresh)
1/2 c fresh parsley, chopped (or 1/4 cup dried parsley)
1/2 tsp black pepper

Steps:

  • 1. Saute first 5 ingredients over medium heat in a large soup pan, until vegetables are tender.
  • 2. Stir in black eyed peas and next 4 ingredients; bring mixture to a boil. Cover, reduce heat, and simmer 1 1/2 hours. Stir in spinach, parsley and pepper. Serve.
  • 3. Note: I used dried black eyed peas (soak over night), and then cook for 1 1/2 hours; drain most of the liquid and then proceed with recipe. I used frozen spinach and dried parsley and added when I added the beans to the sauteed veggies. If you want to cook in the slow cooker just throw everything in and cook for 5 or 6 hours.

1/2 cup dried lima beans
1/2 cup dried pinto bean
1/2 cup dried great northern beans
1/2 cup dried red beans
1/2 cup dried split peas
1/2 cup dried black-eyed peas
1/2 cup dried lentils
1/2 cup dried black beans

Steps:

  • Use 2 (1 pint) clamp top jars. In each jar, layer 1/4 cup of each type bean.
  • Seal lid and attach cooking instructions.
  • INSTRUCTIONS:.
  • Rinse beans, place in large bowl, add one to 2 tsp of salt and cover with water.
  • Let stand overnight.
  • Drain beans, place in a large kettle, add 2 quarts of water, one cup chopped ham and one chopped onion.
  • Simmer for 1 1/2 to 2 hours; add one chopped green pepper and 3 tbls lemon juice or one tsp lemon pepper.
  • Makes 4 servings.

I got the inspiration for this soup from a delicious recipe I tried years ago but it took hours and several steps to make. This version is quick and can be varied to your likes and dislikes. 14 oz smoked sausage or polish sausage
32 oz tomato puree
1 can(s) collard greens, 14-15 oz can, drained
1 can(s) sauerkraut, 14-15 oz can, drained
1 can(s) black eyed peas, 14-15 oz can, drained and rinsed
1 can(s) tomatoes,14-15 oz can, undrained
1 clove garlic, diced
1/2 Tbsp tumeric
1/2 Tbsp paprika
1 Tbsp oregano, dried

Steps:

  • 1. Cut sausage into pieces and saute until lightly browned. I used turkey sausage but any beef, pork, or chicken would be great as well.
  • 2. In a crockpot, mix together tomato puree, tomatoes, garlic, tumeric, paprika, and oregano. Add more spices as needed. Add sauerkraut, black eyed peas, collard greens, and smoked sausage. Add salt and pepper to taste.
  • 3. Simmer for approximately an hour until hot throught and the flavors have combined.

3-4 slices Bacon
4 cups Collard Greens, chopped small
1 Onion, minced
2 cloves Garlic, minced
4 cups Chicken Broth
2 boneless Chicken Breasts, chopped into bite-sized pieces
4 cans Black-eyed Peas
1 Tbsp. Cumin
1 Tbsp. Black Peper
1 Tbsp. Salt
1 Tsp. Cayenne Pepper
1 Jalapeno, minced
1 cup cilantro chopped

Steps:

  • Fry bacon until it renders its fat. Crumble/cut up bacon and set aside. In same pan put in onions, garlic and collards. Cook 10 minutes or until collards are wilted. Put bacon, collards and remaining ingredients in a stock pot. Bring soup to a boil and then simmer until chicken is done and liquid reduced to chili consistency, 1-1.5 hours. Serve with cornbread.
