Just for fun, I enter my favorite pie recipes in area contests and fairs. This one is a guaranteed winner. It's so pretty with a golden crust and drizzles of glaze. Plus, the coconut adds a tropical accent to the tangy pineapple inside.

1 can (20 ounces) crushed pineapple
Pastry for double-crust pie (9 inches)
3/4 cup sweetened shredded coconut
1 cup sugar
1/4 cup all-purpose flour
1/4 teaspoon salt
1 tablespoon lemon juice
1 tablespoon butter, melted
GLAZE:
1/2 cup confectioners' sugar
1/4 teaspoon rum or vanilla extract

Steps:

  • Drain pineapple, reserving 2 tablespoons juice (discard remaining juice or refrigerate for another use); set pineapple aside. Line a 9-in. pie plate with bottom pastry; trim pastry even with edge of plate. Sprinkle with coconut., In a small bowl, combine the sugar, flour, salt, lemon juice, butter and pineapple. Spread over coconut. Roll out remaining pastry to fit top of pie; place over filling. Trim, seal and flute edges. Cut sits in pastry. Add decorative cutouts if desired., Cover edges loosely with foil. Bake at 400° for 30 minutes. Remove foil; bake 5-10 minutes longer or until crust is golden brown and filling is bubbly., In a small bowl, combine the confectioners' sugar, extract and enough of the reserved pineapple juice to achieve glaze consistency. Drizzle over warm pie. Cool on a wire rack. Store in the refrigerator.

My Dad's mom would make this for him every time we visited Illinois. As a child, I could hardly wait for the filling to cool enough to eat. The secret is to stir constantly for a rich, velvety smooth pudding-like melt-in-your-mouth experience. These instructions are per my grandmother, written down by my mother not too long before Grandma passed away. Grandma wouldn't give the recipe away until her last years. It's a family treasure now! Top the pie with meringue, whipped cream, or whipped topping.

1 cup sugar
3 tablespoons all-purpose flour
½ teaspoon salt
1 cup milk
1 (15 ounce) can crushed pineapple, drained
2 egg yolks
3 tablespoons butter
1 (9 inch) baked pie crust

Steps:

  • Whisk sugar, flour, and salt together in a saucepan over medium heat. Add milk and cook, whisking constantly, until mixture thickens and begins to bubble, 3 to 5 minutes. Remove from heat.
  • Stir pineapple, egg yolks, and butter into milk mixture. Return to heat and cook over medium heat until mixture begins to bubble, 3 to 5 minutes. Continue cooking, stirring constantly, until hot and thick, about 2 minutes more. Pour mixture into prepared pie crust. Refrigerate until chilled, at least 3 hours.

A wonderful double-crust pie that is my husband's all-time favorite.

¼ cup cornstarch
2 (20 ounce) cans crushed pineapple, drained with juice reserved
1 ½ cups white sugar
¼ teaspoon salt
4 egg yolks
pastry for a (10 inch) double crust pie

Steps:

  • Dissolve the cornstarch in 1/4 cup of the reserved pineapple juice. Combine the drained pineapple, sugar, salt, egg yolks, cornstarch mixture, and 1 cup of the reserved pineapple juice in a large saucepan. Cook and stir over medium heat just until the mixture has thickened slightly and turned shiny. Do not boil. Remove from heat, and cool 15 minutes.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Line a 10-inch pie plate with half of the pastry. Pour the cooled pineapple mixture into the crust. Top with second crust, and seal and crimp the edge. Use a fork to poke holes in the top crust in a few places.
  • Bake in preheated oven until the crust is golden brown, about 35 to 40 minutes. Cool before serving.

An Aussie version of Pineapple Cream Pie, this beautiful dessert pays tribute to the gorgeously aromatic white-&-gold tropical frangipani flower. I love coconut, so I've jazzed up this Golden Circle recipe with coconut milk and shredded coconut...mmmm! I use a simple biscuit crumb crust, but any favourite pastry shell will do. The time for the preparation of the shell is not included.

1 cooked pastry shells or 1 biscuit crumb crust
1 (450 g) can crushed pineapple
1/4 cup cornflour, mixed with
1/4 cup cold water
2 eggs, lightly beaten
1 1/2 cups milk or 1 1/2 cups light coconut milk
1/2 cup sugar (I use raw or brown)
1/4 cup cornflour, mixed with
1/4 cup cold water
1 cup desiccated coconut or 1 cup shredded coconut
1 tablespoon butter or 1 tablespoon margarine (I use soy marg)
1 teaspoon vanilla essence
2 egg whites
4 tablespoons caster sugar or 4 tablespoons fine brown sugar (personal taste)

Steps:

  • Preheat oven to 180 degrees C.
  • Pineapple Layer: Pour the crushed pineapple into saucepan, add cornflour and bring to boil stirring constantly.
  • Cook for 1 min then remove from heat.
  • Quickly stir in egg yolks and put mix aside to cool.
  • Coconut Cream Layer: Heat the milk and sugar in a saucepan over gentle heat until sugar is dissolved.
  • Add the cornflour/water mix, stirring constantly until mixture thickens and boils.
  • Remove from the heat, then add the shredded coconut, butter/marg.
  • and vanilla.
  • Set aside to cool.
  • Meringue: Whip the egg whites until light and fluffy.
  • Gradually add the sugar, beating well with each addition until the sugar is dissolved.
  • Assembly: Spoon half the coconut cream mix into the pie shell.
  • Add the pineapple mixture, then the remaining coconut cream.
  • Top with the meringue mix.
  • Bake for 15 minutes or until the meringue is golden and cooked.

1/2 cup sugar
2 tablespoons cornstarch

1 teaspoon vanilla

Steps:

  • Combine the undrained pineapple, 1/2 cup of sugar, cornstarch and water in a small saucepan.
  • Cook over medium heat, stirring constantly, until the mixture comes to a boil.
  • Cook for 1 minute more.
  • Remove from the heat and cool to room temperature.
  • Combine the 2/3 cup of sugar and butter in a bowl, beating, using an electric mixer set on medium speed, until well blended.
  • Add the flour, cottage cheese, vanilla, and salt, beating until smooth.
  • Add the eggs, one at a time, beating well after each addition.
  • Blend in the milk.
  • Pour the pineapple mixture into the unbaked pie shell and then gradually pour the cottage cheese mixture over the pineapple layer, being careful not to disturb the first layer.
  • Bake at 450 degrees F. for 15 minutes, then reduce the temperature to 325 Degrees F. and bake for 45 minutes more, or until a knife inserted halfway between the center and edge comes out clean.
  • Cool on a wire rack and serve at room temperature.

¾ cup white sugar
3 tablespoons cornstarch

CREAM LAYER:
1/2 cup sugar
2 tablespoons cornstarch
1/2 teaspoon salt
2 cups 2% milk
3 egg yolks, lightly beaten

PINEAPPLE LAYER:
1/3 cup sugar
2 tablespoons cornstarch
1/4 cup water
