Surprisingly delicious cookies. Not too sweet, but tasty enough for any occasion. All children love these special treats. Sometimes I sprinkle the tops with a lemony glaze.

Number Of Ingredients 9

3/4 cup sugar
3/4 cup butter (softened)
1 egg
1 1/4 cups grated raw carrots
2 cups sifted flour
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon vanilla
1/2 teaspoon lemon extract

Steps:

  • Cream together sugar and butter until light and fluffy.
  • Add egg; beat well.
  • Stir in carrots.
  • Sift together dry ingredients in a separate bowl, then stir into carrot mixture.
  • Add vanilla and lemon extracts.
  • Drop dough by teaspoonfuls onto lightly Pam-sprayed cookie sheets.
  • Bake in 375* oven for 15 minutes or till light golden brown along edges.

I found this recipe in my Betty Crockers Cooky Book, A nice cookie even the little ones will eat them.

Number Of Ingredients 13

1 c shortening
3/4 c sugar
2 eggs
1 c cooked mashed carrots
2 c flour
2 tsp baking powder
1/2 tsp salt
3/4 c shredded coconut
ORANGE BUTTER ICING
2 /12 Tbsp soft butter
1 1/2 c sifted powder sugar
1 1/2 Tbsp orange juice
2 tsp orange rind

Steps:

  • 1. Preheat oven to 400 degrees. Mix shortening, sugar, eggs, and carrots. Mix flour, baking powder, and salt into shortening mixture. Mix in coconut. Drop dough by teaspoons about 2 inches apart on lightly greased cookie sheets. Bake 8-10 minutes or until no imprint remains when touched lightly. Cool and frost.
  • 2. Frosting, Blend butter and sugar together. Add orange juice and grated orange rind. Mix till smooth.

Number Of Ingredients 7

1 c butter flavor crisco, softened
1 c cooked and mashed carrots
3/4 c sugar
2 eggs
2 c flour, sifted
2 tsp salt
3/4 c shredded coconut

Steps:

  • 1. Cream together first four ingredients. In separate bowl, mix together next three ingredients. Mix dry ingredients into creamed mixture. Drop by spoonfuls onto greased cookie sheet 2 inches apart. Bake at 400 degrees for 8-10 minutes, until lightly browned. Cool and frost cookies. Dip in additional coconut after frosting, or top with a pecan half, if desired.
  • 2. Icing: 1 c. sifted powdered sugar 1/4 tsp. salt 1 tbsp. orange juice 1 1/2 tsp. grated orange peel Mix together.

1 cup mashed cooked carrots
2 eggs
2 cups flour
2 teaspoon s baking powder
1/2 teaspoon salt
3/4 cup coconut
Icing:
1/3 cup butter
3 cup powdered sugar
3 tablespoons orange juice concentrate (approx.)
1 1/2 tablespoon orange rind

Steps:

  • Mix together shortening, sugar, carrots and eggs. Sift together flour, baking powder, salt and stir in. Stir in coconut.
  • Drop teaspoon size cookies on greased cookie sheet.
  • Bake for 8 to 10 minutes at 400 degrees F.
  • Mix together icing, frost cookies after they have cooled.
