2 cups mashed potato flakes
3/4 cup grated Parmesan cheese
2 tablespoons dried parsley flakes
1 tablespoon paprika
3/4 teaspoon garlic salt
3/4 teaspoon onion powder
1/2 teaspoon pepper
1 cup butter, melted
3 broiler/fryer chicken (3 to 4 pounds each), cut up and skin removed

Steps:

  • In a shallow bowl, combine the potato flakes, cheese, parsley, paprika, garlic salt, onion powder and pepper. In another shallow bowl, add butter. Dip chicken into butter, then into potato flake mixture. , Place on two greased 15x10x1-in. baking pans. Bake at 375° for 50-60 minutes or until chicken juices run clear.

We really enjoy this dish. It's easy to make and tastes great. I have made it with boneless chicken (baking for 35-40 minutes) and with bone-in chicken -- it's great both ways. The recipe comes from TOH Chicken Cookbook.

2 cups instant mashed potatoes
3/4 cup grated parmesan cheese
2 tablespoons dried parsley
1 tablespoon paprika
3/4 teaspoon garlic salt
3/4 teaspoon onion powder
1/2 teaspoon pepper
3 -4 lbs chicken, cut up
1 cup butter, melted

Steps:

  • In a pie plate, combine the potato flakes, Parmesan cheese, parsley, paprika, garlic salt, onion powder and pepper.
  • Dip chicken into butter, then into potato flake mixture.
  • Place on a 15x10 baking pan (use 2 pans if you have alot of chicken pieces).
  • Bake at 375º for 50-60 minutes or until chicken is thoroughly cooked.

This is a warm, comforting baked chicken dish with a golden, garlicky crunch. The curry powder works unexpectedly well with the Parmesan cheese, and the dish is particularly good with buttered egg noodles and a crisp salad. Prep time includes marinating in the fridge.

1 egg yolk
4 cloves garlic, chopped
2 large boneless skinless chicken breasts
6 tablespoons butter
1 cup dry breadcrumbs (I prefer unseasoned Progresso crumbs)
1/2-1 teaspoon curry powder
1 tablespoon garlic powder
1 tablespoon black pepper
1/2 tablespoon salt
1 cup parmesan cheese
extra butter, for top of chicken

Steps:

  • Beat egg yolk and add garlic and curry powder.
  • Place chicken in egg mixture in a glass dish and turn to coat.
  • Cover and refrigerate overnight.
  • Preheat oven to 400 degrees F.
  • Melt 6 tbsp.
  • butter in the bottom of an 8x8-inch baking dish.
  • Combine bread crumbs, Parmesan cheese, garlic powder, salt and pepper.
  • Dip and coat marinated chicken in crumb mixture and place in baking dish.
  • Sprinkle more of the remaining crumb mixture onto the chicken breasts (you won't use it all- unless you want to!) Bake for 20 minutes on each side, or until chicken is no longer pink inside.
  • Remove from oven and top each chicken breast with two thin pats of butter; uncover and bake 5 to 10 minutes longer.
  • Serve with a smile!

Old fashioned delicious one dish meal.

4-6 boneless chicken breasts
1-2 can(s) golden mushroom soup
1/4 cup(s) water mixed in each soup can
1-2 package(s) (8 ounces) baby bella mushrooms
kosher salt
pepper
french fried onions

Steps:

  • Place chicken in 9 X 13 inch baking dish. Add mushrooms around chicken. Sprinkle with salt and pepper.
  • Pour soup over chicken and mushrooms. Add the water. Stir gently to combine.
  • Cover with foil and bake for 50 minutes at 350 degrees. The sauce should be bubbling. Remove from oven and sprinkle desired amount of fried onions over the top of chicken.
  • Bake uncovered for 10 to 15 minutes or until fried onions are golden brown.
  • Serve with noodles.

1 Tbsp. KRAFT Grated Parmesan Cheese
1 tsp. garlic powder
1/2 tsp. parsley flakes
16 chicken drumsticks (2 lb.), skins removed

Steps:

  • Heat oven to 400ºF.
  • Empty coating mix into shaker bag. Add cheese, garlic powder and parsley. Use to coat chicken as directed on package. Discard any remaining coating mixture.
  • Place chicken in single layer on foil-covered baking sheet.
  • Bake 30 min. or until done (165ºF), turning after 15 min.
