½ teaspoon baking soda
¼ teaspoon salt
2 tablespoons butter, at room temperature

1 large egg
2 cups King Arthur Almond Flour

Steps:

  • Preheat the oven to 350 degrees F. Lightly grease a baking sheet, or line it with parchment.
  • Combine the brown sugar, baking soda, salt, and butter, and mix until smooth.
  • Mix in the vanilla, egg, and almond flour, stirring to combine. Scrape the bottom and sides of the bowl, then mix for 1 minute at medium speed.
  • Stir in the chocolate chips.
  • Scoop the dough one level tablespoon at a time onto the prepared baking sheet; a tablespoon cookie scoop works well here.
  • Gently flatten the cookies to about 3/8-inch thick.
  • Bake the cookies for 9 to 12 minutes, until golden brown.
  • Remove the cookies from the oven. Allow them to cool on the pan for 2 minutes, then carefully transfer them to a rack to cool completely.

The texture is slightly crispy on the outside and moist and chewy in the middle. Nobody that I have baked these for has been able to eat just one.

1 cup light brown sugar
1 cup chopped toasted pecans
1 cup semisweet chocolate chips
½ teaspoon baking soda
½ teaspoon sea salt
½ cup grapeseed oil
1 egg

  • Preheat the oven to 350 degrees F (175 degrees C). Grease 2 baking sheets.

1/2 cup sugar
2 egg whites
1/8 teaspoon salt

Steps:

  • In a large bowl, beat almond paste and sugar until crumbly. Beat in egg whites and salt until smooth. Drop by scant tablespoonfuls 1 in. apart onto parchment-lined baking sheets., Bake at 350° for 15-18 minutes or until lightly browned. Cool for 1 minute before removing from pans to wire racks. 1 cup almond flour
1/4 cup coconut flour
1 stick (8 tablespoons) unsalted butter, at room temperature
1/2 cup sugar
2 ounces cream cheese, at room temperature
1/2 teaspoon almond extract
1 large egg
1/2 cup sliced almonds

Steps:

  • Whisk the almond and coconut flours in a small bowl.
  • Combine the butter and sugar in a medium bowl and beat with an electric mixer until light and fluffy, 2 to 3 minutes. Add the cream cheese and continue to beat until smooth, about 1 minute. Add the almond extract and egg and beat until combined. Add the flour mixture and continue beating until just combined and smooth, 1 to 2 minutes. Gently fold in the sliced almonds.
  • Transfer the dough to a piece of parchment or wax paper and use the paper to help mold the dough into a 10-by-2-inch log. Wrap the log in plastic wrap and freeze until firm, about 45 minutes.
  • Position a rack in the center of the oven and preheat to 350 degrees F. Line a baking sheet with parchment.
  • Slice the dough into 1/2-inch-thick slices and arrange the slices on the prepared baking sheet. Bake until the edges are golden brown, 18 to 20 minutes. Let cool before serving. The cookies will firm up as they cool.

1/2 cup raisins (dark, sultana)
1/4 cup oat flour
1/4 cup rolled oats
1 tablespoon ground flax seeds
1/2 tablespoon baking powder
1/2 teaspoon ground cinnamon

1/2 cup almond butter (roasted)
3 tablespoons water
2 tablespoons maple syrup

Steps:

  • Soak raisins in warm water for 5 minutes, then discard soaking water.
  • Stir dry ingredients together. In another bowl, mix wet ingredients together. Mix wet ingredients with dry ingredients until well combined (for a better and smoother result, use an electric mixer and stir in the rolled oats and raisins by hand after you`re done).
  • Grease a cookie sheet and spoon drop about 2 tbsp worth of cookie dough for each cookie.
  • Bake at 350F for 10-12 minutes. Let cool 5 minutes before transfering to rack to cool another 5 minutes.

This recipe can be made with any kind of nut butter. It's not very sweet - peanut butter cookies usually are made with 1 cup pb and 1 cup sugar, so this is only half the amount of sugar. You can add raisins, chocolate chips, craisins, nuts.... whatever floats your boat! For the gluten free flour you can use 1 cup of any gf flour mix. Usually I use rice flour and tapioca starch.

125 g butter, softened
75 g sugar
1 teaspoon vanilla
1 tablespoon Amaretto
1 egg
125 g rice flour
30 g cornstarch
1 pinch baking powder
50 g almond flour

Steps:

  • Preheat oven to 350 degrees (320 when fan assisted).
  • Beat softened butter until creamy, then slowly add sugar, vanilla and amaretto until you have a thick batter.
  • Add the egg and beat on high for about half a minute.
  • Mix rice flour with corn starch and baking powder, then stir in the almond flour.
  • Stir flour mix into butter mix until well combined.
  • With two teaspoons drop small heaps onto parchement lined cookie sheet.
  • Bake cookies about 12 minutes.
  • If you like your cookies decorated, brush them with egg yolk before baking and decorate with colored sugar, falked coconut or whatever you like :-).

2/3 cup almond flour
2/3 cup coconut flour
2 eggs
1/4 cup butter, melted
3 tablespoons honey
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
1/4 cup dried cranberries (optional)
1/4 cup shelled pistachios (optional)

Steps:

  • Preheat oven to 350.
  • Mix butter, eggs, vanilla extract, almond extract, and honey in a bowl. Whisk until well blended.
  • Add almond flour and coconut flour and mix with spoon until well blended and creamy. Texture will be much like peanut butter cookie dough. Add any optional ingredients (nuts, dried fruit, etc) and mix until well distributed.
  • Place balls of dough on greased cookie sheet. Bake for 5 minutes, then remove and press with a fork to flatten cookies and make criss cross pattern. Return to even and bake another 10-15 minutes or until golden brown.
