This recipe came from a good friend at work. Great for those of us who need a little more fiber in our diets.

Yield 12 muffins

Number Of Ingredients 15

1 1/2 cups all-purpose flour
1 cup raw quick-cooking oatmeal
1/2 cup firmly packed brown sugar
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt (optional)
1 teaspoon ground cinnamon
1/2 cup raisins
1 (8 ounce) can crushed pineapple with juice, do not drain
1/2 cup shredded carrots or 1/2 cup zucchini
1/2 cup skim milk
1/3 cup vegetable oil
2 egg whites or 1 egg, beaten lightly
1/3 cup powdered sugar (optional)
3 -4 teaspoons skim milk (optional)

Steps:

  • Heat oven to 400°F.
  • Line 12 medium muffin cups withe paper baking cups or lightly grease bottom only of pan.
  • Combine dry ingredients and raisins; mix well.
  • Add combined pineapple, including the juice, carrots, milk, oil and egg; mix just until dry ingredients are moistened.
  • Fill muffin cups almost full.
  • Bake 20 to 22 minutes or until golden brown.
  • Let muffins stand a few minutes, remove from pan.
  • Cool 10 minutes.
  • For glaze: combine sugar and milk and mix until smooth.
  • Drizzle evenly over muffins.

1 1/2 cups whole wheat flour
1 cup quick oats
1/2 cup brown sugar
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 cup raisins
8 ounces crushed pineapple in juice (do not drain)
1/2 cup shredded zucchini
1/2 cup skim milk
1/3 cup unsweetened applesauce
1 large egg

Steps:

  • Preheat oven to 400.
  • Mix all ingredients.
  • Lightly grease/flour 12 muffin cups.
  • Fill cups almost full.
  • Bake 20-22 minutes until golden brown.
  • Let muffins stand for a few minutes, remove from muffin tin, and cool 10 minutes before eating.

Number Of Ingredients 21

1 cup all purpose flour
1 cup quick-cooking oatmeal (uncooked)
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinimon
1/4 tsp ginger
1/4 tsp nutmeg
1/2 salt
1 egg, lightly beaten
1/4 cup milk
1 tsp vanilla
2 tsps coconut oil
2/3 cup grated apple (or sugar free apple sauce)
1/4 cup combo of honey &/or maple syrup
1 tsp of molasses
1 zucchini grated
2 carrots grated
3-4 tbsp of chopped walnuts
3-4 tbsp of chopped dates, raisons or other dried fruit
2-3 tbsp of chopped unsweetened coconut
2-3 tbsp of ground flaxseeds

Steps:

  • 1. Preheat oven to 350 degrees. Prepare muffin pan (grease or line with paper muffin liners. 2. In big bowl, mix dry ingredients well (1st 8) 3. In separate bowl, mix egg, milk, vanilla, coconut oil, honey/maple syrup, molasses, grated apple, zucchini and carrot. 4. Mix wet ingredients in w/dry, then add remaining nuts, coconut, flaxseeds and dried fruit. 5. Bake for 23-25 minutes.
