Old Fashioned Glorified Rice image

Old Fashioned Glorified Rice is a creamy dessert with marshmallows, strawberries, pineapple... and rice! A unique no bake recipe for summer picnics.

3 cups water
1 1/2 cups Alessi Arborio Rice
2 tablespoons butter
16 ounces pineapple tidbits (drained)
2 cups chopped strawberries
3 cups mini marshmallows
1/2 cup granulated sugar
2 cups heavy whipping cream
maraschino cherries (optional)

Steps:

  • In a heavy bottomed saucepan, heat 3 cups of water to boiling.
  • Add the rice and butter to the boiling water. Cook and stir for 1 minute.
  • Reduce the stove heat to low, cover the saucepan with a tight fitting lid and let it cook undisturbed for 20-25 minutes.
  • Once the rice is done cooking, remove it from the heat, transfer it to a large bowl. Fluff the rice with a fork and allow it to cool to room temperature.
  • When the rice has cooled, add the pineapple, strawberries, marshmallows and sugar. Mix well. Allow this mixture to rest for 10 minutes.
  • In a medium bowl (or the bowl of a stand mixer), beat the heavy whipping cream on high speed until stiff peaks form.
  • Add the whipped cream to the rice mixture. Fold together gently.
  • Top with maraschino cherries and additional marshmallows if desired.
  • Refrigerate until serving and serve cold.

1 cup uncooked white rice
ΒΌ cup white sugar
2 (15 ounce) cans crushed pineapple
1 cup miniature marshmallows
1 cup heavy cream, whipped
6 maraschino cherries

Steps:

  • In a saucepan bring 2 cups water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
  • In a large bowl combine the cooked, cooled rice, sugar, pineapple and marshmallows. Fold in the whipped cream. Chill for 4 hours.
  • Spoon the rice mixture into 6 dessert dishes and place a cherry on top of each.

This dessert-salad is a blast from the past! It's basically a rice pudding with crushed pineapple, whipped cream, and maraschino cherries. 2 cups cooked white rice (cold)
1 (14 ounce) can crushed pineapple, drained
1/4 cup sugar
1 cup miniature marshmallow
1 cup whipping cream
1 tablespoon sugar
1 teaspoon vanilla
maraschino cherry, to decorate (or slices of fresh pineapple or strawberries)

Steps:

  • Mix rice, pineapple, sugar and marshmallows in a bowl.
  • Whip cream with additional sugar and vanilla until stiff.
  • Fold into rice mixture.
  • Chill.
  • Decorate with maraschino cherries or slices of fresh pineapple or strawberries.
  • Serves 6-8.

1 cup raw rice
1 teaspoon salt
1 (3 ounce) package lemon Jell-O gelatin
1 (4 ounce) can crushed pineapple (in juice)
1 1/2 cups whipped cream
1 cup sugar

Steps:

  • Boil rice with the salt until well done, according to package directions.
  • Rinse and drain well; cool.
  • Make lemon jello, using only 1 cup water.
  • Drain pineapple and add enough water to make a second cup of liquid.
  • Cool until jello is almost set.
  • Whip cream, adding the 1 cup sugar; fold into rice mixture.
  • Beat the jello and fold that also, into rice and cream mixture.
  • Add crushed pineapple and let cool until set.
