I pair this wonderful spinach salad up with my Recipe #215827 and top with wonderfully easy Glazed Almonds and fruit!

Number Of Ingredients 8

1 (12 ounce) package romaine lettuce, cleaned and torn
1 (7 ounce) package baby spinach leaves, cleaned
3/4 cup fresh strawberries, sliced (or whole raspberries)
1/2 cup fresh pineapple
1/2 cup mandarin orange
1/4 green onion, sliced
1 cup raw almonds
1/3 cup sugar

Steps:

  • Salad & Fruit: Layer salad ingredients onto salad plates, top with cooled Glazed Almonds and serve optionally with Best Raspberry Dressing (Vinaigrette).
  • Glazed Almonds: Heat a heavy skillet on high heat, add almonds and sprinkle generously with sugar, stirring until sugar melts.
  • Caution: The molten sugar is very HOT. Transfer nuts to cool completely on a plate.
  • Break up into pieces.

1 quart fresh strawberries, halved
1 can (20 ounces) pineapple chunks, drained
4 firm bananas, sliced
1 jar or pouch (16 ounces) strawberry glaze

Steps:

  • In a large bowl, gently toss the strawberries, pineapple and bananas; fold in glaze. Chill for 1 hour.

What a delightful fruit salad! The orange marmalade glaze is sweet but has a little bit of tang from the lemon. This was great at room temperature, but even better after it sat in the fridge for a few hours and the flavors blended together. We had some extra strawberries so we threw them in too. So yummy!

1 can(s) pineapple, chunks, reserve all the juice
2-3 bananas
1 bunch red seedless grapes
1/2 pt blueberries
1 jar(s) small jar maraschino cherries, drained
any other fruit you would like to add
4 Tbsp sugar
4 tsp cornstarch
4 tsp orange marmalade or apricot preserves
2 tsp lemon juice

Steps:

  • 1. Drain pineapple, reserve all juice.
  • 2. In a small bowl, combine all your fruit. I always squirt some lemon juice over my bananas before adding so they don't get brown and yucky looking. Set aside.
  • 3. In a small saucepan, combine the sugar, cornstarch, and reserved pineapple juice. Bring to a boil. Reduce heat, and simmer till thickened. Remove from heat and add the marmalade or preserves and the lemon juice.
  • 4. Let cool for a couple of minutes, then pour the glaze over your fruit and toss gently to coat. Keep in the fridge. It won't last long!!

1 (11 ounce) can mandarin oranges, drained
1 cup maraschino cherry, drained
3 large bananas, sliced
1 cup coarsely chopped pecans
1 (3 3/4 ounce) package vanilla instant pudding mix

Steps:

  • Drain pineapple, reserving 1 cup juice.
  • Combine pineapple, remaining fruit, and pecans in a large bowl; toss gently.
  • Combine pudding mix and reserved pineapple juice in a mixing bowl.
  • Beat on high speed of electric mixer 1 minute.
  • Pour pudding mixture over fruit and pecans; toss gently.
  • Chill and serve.

1 tablespoon(s) flour
1 can(s) pineapple chunks (15 oz. can) - reserve juice for dressing
1 can(s) (11 oz. can) mandarin oranges drained
1 - banana
1/2 cup(s) miniature marshmallows

Steps:

  • Combine the egg, sugar, flour and pineapple juice in a small saucepan; bring to a boil, stirring constantly until thick. Cool completely. Mix together the pineapple chunks, oranges, sliced banana and marshmallows in a medium bowl.
  • Pour cooled dressing over fruit mixture and stir to coat evenly. Chill for at least 1 hour before serving.
