PERSIAN CHICKEN PILAF

The key to a perfect Persian pilaf is cooking the rice until it's lightly spiced and fluffy then adding fresh herbs, pomegranate, raisins and chicken. Don't forget to serve everyone some of the crust on the bottom - that's the best bit!

Number Of Ingredients 17

250g basmati rice (white or brown)
Glug olive oil
6 free-range boneless skinless chicken thighs, cut into chunks
30g unsalted butter
1 cinnamon stick
2 pared strips lemon or orange zest
2 tbsp pomegranate molasses
75g raisins
500g cold water
Large pinch saffron strands soaked in 2 tbsp hot water
To serve
2 tbsp pine nuts
Large handful chopped fresh herbs (we used dill and parsley)
2 tbsp ready-fried onions (we used Waitrose Cooks' Ingredients)
150g natural yogurt
You'll also need...
Shallow 2 litre casserole with a lid or lidded ovenproof saucepan

Steps:

  • Soak the rice in cold water for 30 minutes. Rinse and drain.
  • Meanwhile, heat a glug of oil in a shallow casserole with a lid and, in batches, brown the chicken all over. Remove and set aside.
  • In the same casserole, melt the butter, then add the cinnamon stick, zest, pomegranate molasses and raisins. Fry for 2 minutes, then remove from the pan and set aside.
  • Spoon a thin layer of washed rice over the bottom of the casserole. In a large bowl, toss the remaining rice with the set-aside fruit/zest/spices and season well. Spoon into the casserole, then top with the chicken, pushing the pieces into the rice. Pour over the water. Using a chopstick (or similar), make 4-5 holes in the rice and pour over the saffron and its cooking water. Wrap the casserole lid in a clean tea towel and cover the pan, tucking in the ends away from the flame. Cook gently for 30 minutes.
  • Spoon onto a platter and top with pine nuts, herbs and fried onions, then serve with yogurt.

I make this in a 3 quart saucepan but if you a have small tagine or slow cooker use it. You can use boneless thighs too.

1 tablespoon oil
1/4 cup onion, chopped
1 garlic clove, minced
salt and pepper
1/2 teaspoon ground ginger
1/2 teaspoon coriander
1/2 teaspoon cumin
1/2 teaspoon cinnamon
1 dash nutmeg
1 pinch cayenne
1/2 teaspoon vanilla extract
1/2 cup tomatoes, diced
1/2 cup raisins
1/4 cup almonds
1 cup chickpeas, cooked
1 boneless skinless chicken breast, chopped into bites size pieces

Steps:

  • 1. In a 3 quart sauce pan saute onion and garlic in oil. Add ginger, coriander, cumin, cinnamon, nutmeg and cayenne. Simmer for a minute. Stir in tomatoes, almonds, raisins, chickpeas and vanilla. Add chicken. Put your burner as low as it will go. Let cook for 1 hour or until chicken is done.

I got this recipe from one of the package of my grochery stuffs. As usual, i like to try something new in cooking for my husband. And yes, by following my intuition, he likes it a lot. you can also subtitude the raisin with brocoly and also you can cook it without the rice. 2 teaspoons vegetable oil
4 boneless skinless chicken breast halves, and cut into ¾ inch cubes
2 tablespoons packed brown sugar
2 tablespoons soy sauce
1/2 teaspoon crushed red pepper flakes
2 cups long grain white rice
1 (14 1/2 ounce) can chicken broth
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cardamom or 1/4 teaspoon ginger
1/2 teaspoon ground coriander
1 cup sun maid raisins
1/2 cup thinly sliced green onion
1/2 cup minced parsley

Steps:

  • Heat oil in dutch oven or large deep skilled (with lid) over her heat.
  • Add chicken and cook until browned.
  • Reduce head to medium.
  • Add brown sugar, soy sauce, and crushed red pepper.
  • Stir until chicken is glazed and cooked through.
  • Remove chicken from pan to serving bowl and set aside.
  • Pour chicken broth and 2-¼ cups water into skillet.
  • Add rice, cinamon, cardamom, and coriander.
  • Cover and bring to boil.
  • Reduce heat to low and simmer until rice is tender and liquid is absorbed, about 20 minutes.
  • Remove from heat.
  • Stir in chicken, raisins, green onion and parsley.
  • Cover and let stand for 5 minutes.
  • Serve hot and make 8 cups.
