GINGER CUCUMBER SALAD



Ginger Cucumber Salad image

A refreshing summer side dish, this Ginger Cucumber Salad is a great addition to any summer menu.

4 pounds cucumbers, preferably Persian
1 cup rice vinegar
3/4 cup sugar
1/4 cup peeled and finely grated ginger
1 teaspoon coarse salt

Steps:

  • Peel half of the cucumbers, leaving the remaining cucumbers unpeeled. Using a sharp knife or a mandoline, very thinly slice the cucumbers crosswise. Set aside.
  • In a medium bowl, whisk together vinegar, sugar, ginger, and salt until sugar has dissolved. Add cucumbers and toss to combine. Let marinate, refrigerated, for 3 hours. Using a slotted spoon, transfer cucumbers to a serving bowl.

2 cucumbers
½ small red onion, thinly sliced
⅓ cup white wine vinegar
1 tablespoon white sugar
1 teaspoon fresh ginger paste (such as Gourmet Garden™)
1 teaspoon toasted black sesame seeds

Steps:

  • Peel cucumbers, cut in half lengthwise, and scoop out the seeds. Cut each half into 1/4-inch slices and place in a medium bowl. Stir in red onion slices and set aside.
  • Whisk vinegar, sugar, and ginger paste together in a small bowl until the sugar is dissolved. Add dressing to cucumber mixture and mix well. Stir in sesame seeds and refrigerate for about 1 hour to let the flavors meld.

1 tablespoon olive oil
2 teaspoons minced fresh gingerroot

2 English cucumbers
1 teaspoon sesame seeds, toasted
Thinly sliced green onions

Steps:

  • For dressing, mix first 7 ingredients. Trim ends and cut cucumbers crosswise into 3-in. sections. Cut sections into julienne strips., To serve, toss cucumbers with sesame seeds and dressing. Sprinkle with green onions.

1-inch piece fresh ginger, peeled and chopped
1 English cucumber, peeled and chopped
Ice
Lemon wheels, for garnish
Cucumber wheels, for garnish

Steps:

  • In a blender or food processor, blend together the ginger, cucumber and 1/2 cup cold water. Strain and press the puree through a mesh sieve.
  • Serve over ice and garnish with a lemon and cucumber wheel.
  • Optional serving: Fill glasses with ice and one-half to two-thirds full with the blended juice. Top with lemonade and/or vodka.

2 large thin-skinned cucumbers (about 1 1/2 pounds), thinly sliced
Salt, to taste
3 tablespoons seasoned rice vinegar
1 tablespoon soy sauce
1 teaspoon sugar
1 small garlic clove, minced, or granulated garlic or garlic flakes to taste
1 teaspoon minced fresh ginger
1/8 teaspoon ground cayenne, plus more to taste
Freshly ground pepper
2 tablespoons dark sesame oil
3 tablespoons sunflower oil or grapeseed oil
1 bunch scallions, white and light green parts, very thinly sliced
2 tablespoons chopped cilantro

Steps:

  • Sprinkle the cucumbers with a generous amount of salt and let sit in a colander in the sink for 15 minutes. Rinse and dry on a kitchen towel. Transfer to a salad bowl.

Made an othe batch of my Borage Jelly http://www.food.com/recipe/borage-jelly-381762 and added cucumber to bring out the cucumber in the borage and ginger for a kick. Nice on finger sandwiches. The leaves of the borage has hints of cucumber and the beautiful starflowers have hints of honey. This will lift up your spirits because it helps with depression and anxiety

6 cups borage leaves, fresh picked after due is gone (and flowers)
1 cucumber, juiced and pulp discarded
1 ounce fresh ginger, juiced equaling 2 tablespoons juice
2 tablespoons lemons
1 (1 3/4 ounce) package dry pectin
5 cups sugar

Steps:

  • Soak 6 cups of borage leaves and mint leave if using and flowers parts in a 3 cups of cold water overnight in the refrigerator, drain and strain, pressing the liquid out of the leaves and flowers gently.
  • Measure 3 cups of the liquid, 1 cup cucumber juice and the 2 tablespoons fresh ginger juice, lemon juice, and pectin.
  • Put into a deep jelly kettle and bring to a rolling boil, then add sugar and stir to mix well.
  • Stir and boil hard for 1 1/2 minutes, or until mixture sheets from a wooden spoon, skim, pour into hot clean 1/2 pint jelly jars. Seal the a water bath accordingly.
  • Makes approximately 6-7 1/2 pints jars.
