GINGER LIME MELON BALLS

I was looking for an easy, cool, summer fruit appetizer for my August wedding reception. My family made all the food for 100 guests by ourselves, so I needed something easy yet memorable. I found this recipe on a "melon web-site", AICR. It was so simple and after doing a tasting of 3 different recipes, this one was the clear favorite. If you've never used crystallized ginger, you should be able to find it in the bulk food section with dried fruits. It is NOT fresh ginger, it's like a soft, sugared, candy. You can't mince it too fine because it gets pretty sticky as you cut it. You can use any kind of ripe melon in season, but I like honeydew and cantaloupe best. Perfect for a picnic, summer brunch or a DIY wedding reception! Enjoy!

Number Of Ingredients 6

1/4 cup fresh lime juice
1/4 cup water
1 tablespoon minced crystallized ginger
1/2 teaspoon grated fresh lime zest
4 cups melon balls (I like to mix honeydew and cantaloupe)
4 sprigs of fresh mint (garnish)

Steps:

  • In small saucepan, combine juice, water, ginger and zest. Set pan over medium-high heat and bring to boil. Boil 5-7 minutes, stirring occasionally, until mixture reduces to 2 tablespoons.
  • Strain mixture though fine sieve to remove zest. (I'm not sure this step is really needed).
  • Place melon in bowl, toss with ginger-lime mixture. Let sit for 15 minutes. You can drain the sauce or serve it with the melon.
  • Garnish with mint (optional).

MELON WITH GINGER

Refreshing, but with a slight kick. I made this up for a potluck based upon ingredients I had at home. Use a mild honey so as not to overwhelm the melon. If you like, add more or no blueberries. Feel free to add more sauce and change the ratio of ingredients to your taste.

4 cups melon balls
1/4 pint blueberries
1 tablespoon mild honey
1/2 tablespoon lemon juice
1/2 inch piece fresh ginger, grated
of fresh mint (to garnish) (optional)

Steps:

  • Combine melon and blueberries in a nice bowl.
  • Pour honey and lemon juice onto fruit.
  • Grate ginger over top.
  • Stir well.

Resembling a mottled green zucchini with sparse, bristly hair, fuzzy melon is a type of gourd popular in Chinese cooking. Often stuffed with ground pork, it absorbs flavors easily and also shines in simpler recipes, like this one from Joanne Chang of Flour Bakery in Boston.

3 tablespoons vegetable oil
2 cloves garlic, peeled and smashed
1 2-inch piece ginger, peeled and thinly sliced
2 medium fuzzy melons, peeled, halved lengthwise and sliced 1/8 inch thick (6 cups)
2 tablespoons soy sauce
2 teaspoons rice-wine vinegar
1 teaspoon red-pepper flakes
Salt and ground black pepper

Steps:

  • Heat the oil in a large, deep skillet over high heat until smoking. Add the garlic, ginger and melon and sauté for 2 minutes, until the melon has absorbed the oil. Add 1/4 cup water and sauté, stirring occasionally, until it evaporates. Repeat this process, adding water in 1/4-cup increments, until the melon is tender, 6 to 8 minutes. Stir in the soy sauce, vinegar and red-pepper flakes and sauté for another minute. Add salt and pepper to taste and serve immediately.

MELON AND GINGER SOUP



Melon and Ginger Soup image

Reserve melons that are so ripe, sweet and juicy that they practically fall apart when you cut them for this soup, which is inspired by a recipe by Deborah Madison. Smell the melons when you shop for them at the market; they should make you want to close your eyes and drink in their fragrance. If they're not really sweet, the soup will be bland. Both cantaloupe and honeydew are great sources of potassium and vitamin A.

Number Of Ingredients 8

1 1/2 very ripe melons, either orange-fleshed or green, about 5 pounds, halved, seeds discarded
2 teaspoons finely chopped or grated lime zest
1 tablespoon plus 1 teaspoon freshly squeezed lime juice
Pinch of salt
1/2 cup buttermilk
1 to 2 teaspoons ginger juice (see note), to taste
1 tablespoon agave syrup (optional)
Chopped fresh mint (about 1 tablespoon)

Steps:

  • Cut the whole melon into 8 wedges and the half into 4, and set aside two of the wedges. Remove the remaining melon from the rinds, and chop coarsely. Puree until smooth in a blender or a food processor fitted with the steel blade. Transfer to a bowl and whisk in the lime zest and 1 tablespoon of the lime juice, the salt, buttermilk, 1 teaspoon of the ginger juice, and the agave syrup. Taste and add the remaining ginger juice if desired. Cut the remaining wedges of melon into very small dice and place in a separate bowl. Chill the soup and diced melon for at least 1 hour.
  • Just before serving, toss the diced melon with the mint and remaining lime juice. Ladle the soup into bowls, top with the melon and mint, and serve.

1/4 cup peach preserves
1 tablespoon lemon juice
1 tablespoon finely chopped crystallized ginger
2 teaspoons grated lemon zest
1/8 teaspoon ground cloves
1 medium honeydew melon, cut into 2-inch cubes

Steps:

  • In a small bowl, combine the first 5 ingredients. Thread honeydew onto 6 metal or soaked wooden skewers; brush with half the glaze., On a lightly oiled rack, grill honeydew, covered, over medium-high heat or broil 4 in. from the heat just until melon begins to soften and brown, 4-6 minutes, turning and basting frequently with remaining glaze.
