1 cup water
0.5 cup sugar
0.667 cup thinly sliced unpeeled fresh ginger (about 4 ounces)
2.5 cup unsweetened pineapple juice, chilled
3 tablespoon lemon juice
3 tablespoon lime juice
1 1 bottle club soda, chilled
Ice cubes
Lime slices and/or pineapple wedges

Steps:

  • In a small saucepan combine the water, sugar, and ginger. Bring to boiling, stirring until sugar is dissolved; reduce heat. Simmer, uncovered, for 10 minutes. Cool ginger mixture to room temperature. Strain ginger mixture through a fine-mesh sieve into a bowl.* If desired, add rum. Cover with plastic wrap; chill for at least 2 hours.
  • In a large punch bowl or pitcher combine the chilled ginger mixture, pineapple juice, lemon juice, and lime juice. Stir in club soda. Add ice cubes and lime slices and/or pineapple wedges.

1 1/2 cups water
1 cup sugar

1/4 cup fresh lime juice (4 to 6 limes)
3 cups sparkling water, chilled
4 cups ice cubes

Steps:

  • Make ginger syrup:
  • Bring water, sugar, and ginger to a boil in a 1- to 1 1/2-quart saucepan, stirring until sugar is dissolved. Simmer, uncovered, stirring occasionally, 10 minutes, then remove from heat and steep, uncovered, 15 minutes. Pour syrup through a sieve into a bowl, discarding ginger.
