1 lime wedge
coarse sugar, optional
1-1/2 ounces blanco tequila
1 ounce ginger liqueur
1 ounce raspberry liqueur
1/2 ounce freshly-squeezed lime juice
1 cup frozen unsweetened raspberries
Optional: Sliced crystallized ginger and fresh raspberries

Steps:

  • Moisten rim of 1 cocktail glass with lime wedge. If desired, sprinkle sugar on a plate; dip rim in sugar. In a blender, add tequila, ginger liqueur, raspberry liqueur, lime juice and raspberries. Puree until smooth; pour into prepared glass. Garnish with lime wedge and, if desired, crystalized ginger and raspberries.

3/4 cup sugar
1 1/2 cups water
1 large hand ginger, peeled and cut into 1/2-inch coins/chunks
Bar sugar
Freshly grated nutmeg
2 ounces good quality tequila or reposado (recommended: Cabo Wabo)
1 lime, juiced, plus lime wedges for garnish

Steps:

  • Bring sugar and water up to a light simmer and cook until all of the sugar is dissolved. Add ginger and steep for 30 minutes. Pour ginger-simple syrup into blender and puree. Strain out pulp and store in a tightly sealed jar or bottle. Will keep for several weeks in the refrigerator.
  • Pour some bar sugar onto small plate and grate a pinch of nutmeg on top, mix well.
  • Add tequila, lime juice, 5 ounces ginger-simple syrup and ice to cocktail shaker and give it a good shake. Run lime wedge around rim of glass and dip in sugar/nutmeg mixture, add ice and pour in contents of shaker, grate a little nutmeg on top and serve with a wedge of lime.

2 lime wedges
3/4 ounce Ginger-Lime Base liquid
1 1/2 ounces anejo tequila
1/2 ounce Cointreau

Steps:

  • Place salt mixture in a shallow dish. Moisten the rim of a rocks glass with one of the lime wedges and dip in salt mixture to coat; set aside.
  • Fill a cocktail shaker with ice and add tequila, ginger-lime base liquid, and Cointreau; shake to combine and strain into prepared glass. Squeeze remaining lime wedge over glass and add to cocktail. Serve.

  • Salt rim: On a plate, mix the ground ginger and salt. Moisten the rim of a margarita glass with water and dip the rim in the ginger salt to coat. Ginger-lime simple syrup: Combine 1 cup peeled and sliced ginger, 1 cup fresh lime juice and 1 cup sugar. Bring all ingredients to a boil, simmer 2 minutes, let cool, then puree in a blender.
