2 to 3 maraschino cherries plus 1 1/2 ounces (3 tablespoons) cherry juice
2 to 3 ounces (4 to 6 tablespoons) ginger beer
1 lime wedge

Steps:

  • Fill a Collins glass with ice, pour in the limeade and cherry juice and top with the ginger beer. Garnish with the maraschino cherries and a lime wedge.

4 pounds red or yellow watermelon, plus more wedges for garnish
1 cup freshly squeezed lime juice, 10 limes, plus wedges for garnish
1 cup Ginger Syrup

Steps:

  • Remove rind and any loose seeds from watermelon. Place the flesh in a juice extractor, and process, extracting 3 cups watermelon juice.
  • Transfer juice to a large pitcher. Add the remaining ingredients, and stir to combine. Fill pitcher with ice. Garnish with watermelon and lime wedges. Serve.

1 cup minced ginger
1 cup water
1 cup freshly squeezed lime juice
1 cup sugar (to taste)
chilled water or Sprite, to mix
mint leaf, for garnish

Steps:

  • Mix the 1 cup of water with the ginger and squeeze through a strainer to get ginger concentrate.
  • Add sugar and lime juice.
  • Stir until all the sugar is dissolved. (If you like it sweeter you can add more, to taste, at this point.).
  • Pour into bottles and refrigerate. Chill well.
  • When ready to serve, add a teaspoonful of concentrate to chilled water or sprite and mix well.
  • Serve garnished with a mint leaf.

3 1/2 cups water
3/4 cup sugar, or to taste
2 tablespoons minced fresh ginger
1 cup fresh lime juice
Thin lime slices for garnish

Steps:

  • In a small saucepan stir together 2 cups of the water, the sugar, and the ginger, bring the mixture to a boil, stirring until the sugar is dissolved, and simmer it for 3 minutes. Strain the syrup through a fine sieve set over a bowl and let it cool. In a pitcher combine the cooled syrup, the remaining 1 1/2 cups water, and the lime juice and stir the limeade well. Divide the limeade among the tall glasses filled with ice cubes and garnish each drink with a lime slice.

  • In a blender container combine 1 1/2 cups cucumber, limeade concentrate and ginger. Cover and blend until nearly smooth.
  • In 1-quart pitcher gently stir together cucumber mixture and club soda.

MANGO GINGER LIMEADE

Just dreamed up this tropical concoction while cleaning my fridge. As in most of the Caribbean and the equatorial tropics, an overabundance of mangoes and mandarina limes was the greatest factor. Mandarina's are a funky-looking lime that grows in Costa Rica. They taste like a very, very sour mandarin orange. I'm sure you could use regular green limes or key limes. UPDATE: just tried this with a little bit of dark rum and boy, does it taste good!!!

1 1/2 cups mango puree
1/2 cup mandarina juice or 1/2 cup key lime juice
3 cups water
1/2 cup sugar
2 teaspoons ginger juice

  • Combine all ingredients in a jug with a snug lid and shake until sugar dissolves.
  • Pour over ice and serve.
  • NOTE: To make mango puree, squeeze ripe mangoes by hand over a sieve, using a spoon to mash mangos through the screen.

3 cups sugar
2 cups boiling water
11/4 cups ginger juice , 1/2 pound fresh ginger, peeled, cut into
small chunks
3 cups lime juice, (about 20 limes, give or take)

Steps:

  • To make ginger juice, liquify ginger in a food processor with about 4 tablespoons of lime juice; then using a ricer, cheesecloth, or by pressing (hard!) the pulp through a sieve with the back of a spoon over a measuring cup, extract all of the liquid from the pulp. You should have just about 3/4 cup of ginger or slightly more, or slightly less. Exact amount not necessary but try to have at least 3/4 cup of juice. Toss pulp. Squeeze limes. In a large bowl, pour boiling water over sugar, stirring to dissolve. Stir in ginger and lime juices. The recipe is easily halved, and leftover concentrate can be frozen for future use.
