BOOZY MINTED MELON BALLS

Melon balls were the quintessential summer party food when I was growing up, but it wasn't until I was out of college that I had my first melon ball "salad." My current favorite is this recipe that has a mojito-like splash over the melon. Dreamy!

2 cups watermelon balls
2 cups cantaloupe balls
1/3 cup fresh lime juice
1/3 cup white rum
3 tablespoons honey
Handful of fresh mint leaves, plus extra for serving
Pinch salt

Steps:

  • Place the watermelon and cantaloupe balls in a baking dish in a single layer. In a bowl, whisk together the lime juice, rum and honey until combined. Pour the lime mixture over the melon balls and toss to coat. Add the mint leaves. Let sit for 2 to 3 hours in the fridge, flipping the balls once or twice if desired.
  • To serve, scoop the melon balls into a large bowl and pour the rum mixture over top. Cover with a sprinkling of fresh mint leaves.

2/3 cup granulated sugar
1/3 cup water
1 teaspoon lime zest
6 tablespoons fresh lime juice
1/2 cup light rum
2 quarts of assorted melon balls
fresh mint leaves (to garnish)

Steps:

  • In a small saucepan, mix the sugar and water.
  • Bring to a boil, reduce the heat and simmer for 5 minutes.
  • Add the grated lime peel and cool the mixture.
  • Add the rum and lime juice.
  • Pour syrup over the melon balls.
  • Chill covered, for 3 to 5 hours.

From an old southern cookbook comes this recipe that's perfect to serve on hot summer days. I love to serve this when we grill out. I've also served this at breakfast alongside pancakes and waffles.

2 (12 ounce) packages frozen melon balls, thawed
1/4 cup firmly packed light brown sugar
1/4 cup cider vinegar
6 whole cloves
1 stick cinnamon

Steps:

  • Drain the melon balls, reserving the juice.
  • Combine the juice, brown sugar, vinegar, cloves, and cinnamon in a saucepan.
  • Simmer for 5 minutes and discard the cloves and cinnamon stick.
  • Pour the sauce over the melon balls and chill until ready to serve.

1/2 cup water
1/4 cup fresh lime juice
a 1-inch piece gingerroot, peeled and grated
1 1/2 teaspoons ground cumin
freshly ground black pepper to taste
2 cups 3/4-inch watermelon balls (from about a 3-pound piece, seeded)
2 cups 3/4-inch honeydew melon balls (from about a 3-pound piece, seeded)
2 cups 3/4-inch cantaloupe balls (from about a 3-pound piece, seeded)

Steps:

  • In a 1-quart saucepan bring sugar and water to a boil, stirring until sugar is dissolved, and simmer 2 minutes. Cool syrup and stir in lime juice, gingerroot, cumin, pepper, and salt to taste. In a bowl toss together melon balls and syrup. Chill compote, covered, at least until cold, about 2 hours, and up to 3 days.

2 cups casaba honeydew melon
2 cups crenshaw melon
2 cups watermelon
2 cups cantaloupe (Melon Balls or Cubed)
2 tablespoons brown sugar
2 tablespoons crystallized ginger (Minced)
3 tablespoons fresh lime juice
1 tablespoon lime zest
sparkling white wine (optional)
1 cup slivered toasted almond (Garnish) (optional)
fresh mint leaves (Garnish) (optional)

Steps:

  • Begin by making sure your melons are ripe.
  • Peel, seed and cube the melons into bite size chunks, or use a melon baller; place in a large bowl.
  • Add brown sugar, ginger, lime juice, lime zest; gently toss.
  • Cover and chill at least one hour for best flavor.
  • To serve: Toss before placing melon in dessert dishes. If desired, fill dishes with very cold sparkling white wine and garnish with mint leaves and toasted almonds.
  • Cook's Tip: (1) Choose melons that are free of cuts, dents and bruises. (2) Store uncut melons in a cool place. Cut fruit should be refrigerated.
