Easy-Made German Quark image

This is a German product that can be thought of as a cross between cream cheese and yogurt. It's a primary ingredient for German cheesecake.

½ gallon whole-milk buttermilk
1 cup heavy whipping cream

Steps:

  • Preheat oven to 200 degrees F (95 degrees C). Line a colander with cheese cloth and place over a large pot in the sink.
  • Gently mix buttermilk and cream together in a 2-quart ceramic casserole dish.
  • Cook in the preheated oven for 2 hours and 15 minutes.
  • Pour buttermilk mixture into the prepared colander; drain for 45 to 60 minutes. Transfer drained cheese to a bowl and beat with an electric hand mixer until smooth and creamy. Store in the refrigerator.

These bars are delicious! They have a crumbly topping and a cheesecake-like filling on the inside - what's not to like!

16 ounces Quark
1 egg
1 cup sugar
1 teaspoon vanilla
1/2 cup dried cherries (or dried blueberries, raisins)
1 cup butter, room temperature
3/4 cup sugar
1 teaspoon vanilla
1 egg
1/4 teaspoon salt
3 1/2 cups white flour

Steps:

  • Preheat oven to 350°F Mix the ingredients under the Quark Filling section and set aside.
  • Blend Crumb Topping ingredients with a pastry blender (or 2 knives in a criss-cross pattern).
  • Measure out 2 1/2 cups of crumbs. Pat into a greased 13x9 glass baking dish. Pat crumbs up about 1/2 inch up sides of baking dish.
  • Bake at 350F for 10-12 minutes.
  • Pour quark mixture over baked crust. Sprinkle remaining crumb mixture evenly over quark layer. Pat down very lightly.
  • Bake 30-35 minutes. Cool before cutting.
  • STORAGE: Keep refrigerated but bring to room temperature before serving.

These are your basic oatmeal-on-the-top-and-bottom-with-fruit-in-the-middle dessert bars. I usually make them for a potluck or a get-together (along with something else), because they make quite a few, they're good if someone doesn't want chocolate, and most everyone likes them. Also, you can choose whatever flavor of pie filling you want for the middle. They also freeze REALLY well and taste really good cold (not that I would know from personal experience ;) ). Adapted from the Better Homes and Gardens New Baking Book.

2 1/2 cups all-purpose flour
2 1/2 cups quick-cooking rolled oats
1 1/2 cups brown sugar, packed
1/4 teaspoon baking soda
1 1/2 cups butter, melted
1 (21 ounce) can pie filling, any flavor of choice

Steps:

  • Preheat the oven to 350 degrees F.
  • In a mixing bowl, stir together flour, oats, brown sugar, and baking soda.
  • Stir in melted butter until combined. Set 2 cups of the mixture aside for topping.
  • Press the remaining mixture into the bottom of an ungreased, foil-lined 15x10x1-inch baking pan. Bake at 350 degrees F for 12 minutes.
  • Cut large pieces of fruit in pie filling so they are smaller. Carefully spread pie filling on top of baked crust.
  • Sprinkle the reserved topping mixture over the pie filling, and gently pat the mixture into the filling.
  • Bake at 350 degrees F for 20-25 minutes more (I usually only do 21 minutes) or until the top is golden.
  • Cool in pan on a wire rack. When cool, cut into bars.
