German Peach Kuchen image

German Peach Kuchen, a favorite late season, early September treat. Moist and dense with the warm flavors of spiced cinnamon and peaches, it's a cake you'll come back to again and again.

1/2 cup butter, (1 stick), softened
3/4 cup granulated sugar + 1 tablespoon
1 teaspoon vanilla extract
1/4 cup milk or cream
large egg
1 cup flour
1 teaspoon cinnamon
1 teaspoon baking powder
2-3 cups fresh peaches, peeled and sliced thinly

Steps:

  • Preheat oven to 350 degrees.
  • Spray 8-inch cake, tart, or springform pan with non-stick spray.
  • In the bowl of an electric mixer, cream the butter and sugar until it becomes light and fluffy. Add the milk or cream, egg, and vanilla extract; mix until thoroughly combined. Finally, add the flour, cinnamon, and baking powder; mix, but do not overmix.
  • Transfer the dough into the prepared pan, pushing the dough slightly up the edges. Arrange the peaches in concentric circles and press into the dough.
  • Bake in a 350-degree oven for 40 to 45 minutes or until nicely browned and a cake tester inserted in the middle comes out clean. Let cool completely. Dust with confectioners' sugar and serve!

1 cup white sugar
½ cup butter, softened
1 cup sour cream
1 teaspoon vanilla extract
2 eggs, lightly beaten
2 cups all-purpose flour
1 ½ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
4 cups peeled, pitted and sliced peaches
¼ cup all-purpose flour
¼ cup white sugar
¼ cup chopped pecans
1 teaspoon ground cinnamon
3 tablespoons cold butter

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 9x13 inch baking pan.
  • In a large bowl, cream together 1 cup sugar and 1/2 cup butter. Beat in sour cream, vanilla, and eggs. Mix in flour, baking powder, baking soda, and salt. Spread 1/2 the batter into the baking pan. Layer with peaches, and top with remaining batter.
  • In a small bowl, mix 1/4 cup flour, 1/4 cup sugar, pecans, and cinnamon. Cut in cold butter until the mixture resembles coarse crumbs. Sprinkle evenly over the batter.
  • Bake 45 minutes in the preheated oven, or until a knife inserted in the center comes out clean.

This is an old recipe I got when I was in 4-H. It is a rich yeast raised coffee cake that won a blue ribbon at the county fair. Prep Time includes time for the dough to rise.

YEAST DOUGH:
1 Tbsp active dry yeast
1 Tbsp sugar
1/2 c warm water (110° to 115°)
1/3 c shortening, melted and cooled to lukewarm
1/2 c sugar
1 egg, beaten
3 1/2-4 cups all-purpose flour, divided
1/2 c warm milk (80°-90°
TOPPING:
1 c flour
1/2 c packed brown sugar
1/2 c sugar
1/4 c shortening
2 tsp vanilla
1 pinch of salt
2 can(s) (15-1/4 ounces each) sliced peaches, drained

Steps:

  • 1. For yeast dough, dissolve yeast and 1 tablespoon sugar in water. Let stand 5 minutes. In a large bowl, combine shortening, sugar and egg. Gradually mix in 2 cups flour, milk and yeast mixture. Add enough remaining flour to form a soft dough. Turn out onto a floured surface and knead until smooth and elastic, about 6-8 minutes. Place dough in a greased bowl, turning to grease top. Cover and let rise in a warm place until doubled, about 1 hour.
  • 2. Punch dough down. Divide in half and press each half into a greased 11 by 7 inch baking pan. Cover and let rise until doubled, about 1 hour. Combine all topping ingredients except peaches. Sprinkle over dough. Top with peach slices. Bake at 375 for 25-30 minutes or until golden brown. Yield: 2 coffee cakes.

1/4 pound (1 stick) unsalted butter, at room temperature
1 1/2 cups sugar, divided
2 extra-large eggs, at room temperature
1 cup sour cream, at room temperature
1 teaspoon pure vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon kosher salt
1 teaspoon ground cinnamon
3 large, ripe peaches, peeled, pitted, and sliced
1/2 cup chopped pecans

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9-inch square baking pan.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat the butter and 1 cup of the sugar for 3 to 5 minutes on medium-high speed, until light and fluffy. With the mixer on low, add the eggs, one at a time, then the sour cream and vanilla, and mix until the batter is smooth. In a separate bowl, sift together the flour, baking soda, baking powder, and salt. With the mixer on low, slowly add the dry ingredients to the batter and mix just until combined. In a small bowl, combine the remaining 1/2 cup sugar and the cinnamon.
  • Spread half of the batter evenly in the pan. Top with half of the peaches, then sprinkle with two-thirds of the sugar mixture. Spread the remaining batter on top, arrange the remaining peaches on top, and sprinkle with the remaining sugar mixture and the pecans.
  • Bake the cake for 45 to 55 minutes, until a toothpick inserted in the center comes out clean. Serve warm or at room temperature.
